GRANDMA'S CHRISTMAS COOKIE

Grandma's Christmas Cookie image

My Grandmother used to make these for my mother and me for years. We took it for granted that she would always be here to do so. My mother and I played with the ingredients until we think we have duplicated Grandma's recipe. The light coating of powdered sugar makes these stand out from the other cookies in the tin.

Time 50m

Yield 96

Number Of Ingredients 11

4 ½ cups sifted all-purpose flour
1 teaspoon baking soda
2 teaspoons cream of tartar
½ teaspoon salt
1 cup margarine, softened
1 cup butter, softened
1 ½ cups white sugar
2 eggs
2 teaspoons vanilla extract
2 cups ground pecans
1 cup confectioners' sugar, or more as needed

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C).
  • Stir the sifted flour, baking soda, cream of tartar, and salt together in a bowl.
  • Beat the margarine, butter and sugar together with an electric mixer in a large bowl until smooth. Add one egg, and continue beating until completely incorporated; add the remaining egg along with the vanilla extract, and beat on low speed until incorporated. Mix the flour mixture into the butter mixture until just incorporated. Gently mix the pecans into the dough with your hands.
  • Roll the dough into 1-inch balls; arrange onto baking sheets about 2 inches apart.
  • Bake in the preheated oven until the edges are golden-brown, 8 to 9 minutes. Allow the cookies to cool on the baking sheet for 8 minutes. Place confectioners' sugar into a bowl, and lightly dip both sides of each warm cookie into the sugar. Tap of excess, and allow cookies to finish cooling.

MOM'S CHRISTMAS COOKIES

Mom's Christmas Cookies image

These are traditional cookies Mom used to make for Christmas. They are a bit of work, but they were so popular that Mom used to hide them, which just meant that we would find them and eat them before she realized that we were into them.

Provided by Steve

Categories     Christmas Cookies

Time 8h50m

Yield 36

Number Of Ingredients 11

¾ cup unsalted butter, softened
½ cup tightly packed brown sugar
3 tablespoons white sugar, divided, or as needed
1 large egg yolk
1 teaspoon vanilla extract
2 cups all-purpose flour
½ cup unsalted butter, melted
2 ½ cups powdered sugar
3 tablespoons milk, or more as needed
1 teaspoon vanilla extract
2 tablespoons chocolate sprinkles, or as needed

Steps:

  • Mix butter, brown sugar, and 1 tablespoon white sugar with an electric mixer until creamy. Add egg yolk and vanilla and mix until well combined. Blend in flour gradually. Cover and chill in the refrigerator, 8 hours to overnight.
  • Preheat the oven to 350 degrees F (175 degrees C). Place remaining 2 tablespoon white sugar on a plate.
  • Remove dough from the refrigerator. Shape into small balls and place on ungreased cookie sheets. Dip a glass into the sugar and press on each ball to flatten.
  • Bake in the preheated oven, switching racks halfway through, until edges are golden, 7 to 9 minutes. Cool on the baking sheet for 1 minute before removing to a wire rack to cool, 8 to 10 minutes more.
  • While the cookies are cooling, mix butter and powdered sugar until blended. Mix in milk and vanilla.
  • Frost cooled cookies with frosting. Press sprinkles into the frosting while still soft.

GRANDMA ABBEY'S CHRISTMAS COOKIES

Grandma Abbey's Christmas Cookies image

Grandma Abbey made these cookies for my MIL (her granddaughter) when she was a child in the 1930's. They're my husband's favorite. With a delicate nutmeg flavor, they stand up nicely to frosting. Grandpa Boskat, my MIL's father, always preferred his with sugar sprinkled on top, but Grandma Boskat frosted the rest for her children.

Time 1h25m

Yield 18

Number Of Ingredients 9

1 cup butter, softened
1 ½ cups white sugar
2 eggs
1 teaspoon ground nutmeg
½ teaspoon salt
½ teaspoon baking soda
2 teaspoons baking powder
1 cup buttermilk
3 cups all-purpose flour, or as needed

Steps:

  • Cream together butter and sugar in a large bowl. Add eggs and beat until light and fluffy. Combine the nutmeg, salt, baking soda, and baking powder in a small bowl. Stir in the buttermilk and add this mixture to the creamed ingredients. Gradually stir in the flour one cup at a time. If dough is still too sticky to roll, gradually add more flour until you can form the dough into a ball. Cover and chill dough for at least an hour.
  • Preheat oven to 350 degrees F (175 degrees C). Roll dough out to 1/4 inch thickness on a lightly floured surface. Cut into shapes and place on ungreased cookie sheet.
  • Bake until no indentation remains when cookies are lightly touched, about 10 minutes. Cool cookies on rack.

  • Traditional Shortbread From Scotland. In Britain, there are many biscuits (a.k.a. cookies) baked every year and choosing a favorite isn't easy. Scotland has its delightful shortbread, nicknamed "shortie," which is eaten year-round throughout the British Isles.
  • British Stained Glass Cookies. There is a centuries-old tradition of hanging cookies on the Christmas tree, and the especially beautiful stained glass cookies are perfect for this.
  • Czech Pernik na Figurky Cookies. The perfect cookie for vánoční cukroví (vah-NAWTCH-nee koo-KRAW-vee), or Christmas sweets, are these traditional Czech Christmas treats called pernik na figurky (meaning "gingerbread on figures").
  • Polish Kołaczki. A classic Eastern European cookie is the Polish kołaczki. The recipe uses a cream cheese dough, making the cookie flaky and sweet when baked.
  • Fritule From Croatia. These delightful fried treats may look familiar, as they are similar to New Orleans' beignets. These miniature doughnuts are studded with citrus zest and raisins and sometimes flavored with brandy or rum.
  • Traditional French Madeleines. The French have many cookies that they love to bake for Christmas, as they are renowned for their patisseries. Most famous of these baked treats is the madeleine, which is a lovely, petite cake, rather than a cookie.
  • Danish Butter Cookies. These delicate ring-shaped butter cookies are a popular Danish holiday treat. Vanilla sugar, a common Dutch ingredient, contributes a subtle vanilla flavor, while the addition of almond flour provides a tender texture.
  • France's Sablé Cookie. Sablé means "sand" in French. The sablé cookie is well named because of its crumbly texture and buttery flavor. This recipe creates a basic biscuit, but the beauty of the sablé is you can add many different fillings.
  • French Almond Macarons. Their names may be similar, but almond macarons should not be confused with a macaron—the two cookies are very different. The almond macarons are more dense and cake-like, with a crisp outside and chewy center.
  • French Cinnamon Palmiers. Cinnamon palmiers, also charmingly referred to as elephant ears, are such a festive treat with their heart shape and light, flaky pastry.
