6 pork chops
1 cup flour
1 teaspoon salt
1/2 teaspoon pepper
4 tablespoons oil
2 cups milk
Kitchen Bouquet

Steps:

  • Mix flour, salt and pepper in a plate or shallow dish.
  • Dredge pork chops in seasoned flour (reserve unused flour).
  • Heat 4 tablespoons of oil in a large skillet.
  • When hot, add the flour coated pork chops and brown on medium-high.
  • Turn and brown on the other side.
  • Add 1/4 cup water.
  • Reduce heat, cover pan and simmer for 30 minutes or until pork chops are done.
  • Remove cover, increase the heat and recrisp the chops.
  • Remove chops to a paper towel lined plate.
  • Stir up any flour "crispies" to loosen.
  • Add more oil if needed to make about 3 tablespoons.
  • Add 3 to 4 tablespoons of the reserved seasoned flour to the hot oil, stirring constantly with a whisk until lightly browned.
  • Add 2 cups of milk all at once and continue stirring until thickened and bubbly.
  • If the gravy is too thick, add some water.
  • Add a couple of drops of gravy coloring (Kitchen Bouquet) if needed to give the gravy a rich color.
  • Season with salt and pepper.
  • Serve pork chops with cream gravy.

2 pounds frozen white shoepeg corn, thawed and drained
4 cups yellow cornmeal, or more as needed
1 ½ cups enriched flour, or more as needed
1 cup white sugar
2 ½ teaspoons salt
oil for frying

Steps:

  • Mix corn, cornmeal, flour, sugar, and salt together in a large bowl until it forms a paste. If the mixture is runny, add equal amounts of flour and cornmeal to reach a paste-like consistency.
  • Cover a sheet of waxed paper with a light dusting of flour. Place a tablespoon of the corn mixture on the waxed paper and roll into a ball. Repeat with remaining batter, adding more flour to the wax paper as needed.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Place batches of nuggets into the hot oil and fry until golden, 2 to 2 1/2 minutes. Transfer to a paper towel-lined plate to drain excess oil.

1 cup cornflake crumbs
1/3 cup toasted wheat germ
3 tablespoons sesame seeds
1-1/2 teaspoons dried parsley flakes
1/2 teaspoon paprika
1/2 teaspoon ground mustard
1/2 teaspoon celery salt
1/2 teaspoon onion powder
1/4 teaspoon lemon-pepper seasoning
1/4 teaspoon salt, optional
1 pound lean boneless pork, cut into 1-inch x 1-1/2-inch cubes
1 cup plain nonfat yogurt

Steps:

  • Combine the cornflake crumbs, wheat germ, sesame seeds, parsley, paprika, mustard, celery salt, onion powder, lemon-pepper and salt if desired; set aside. , Dip pork cubes in yogurt, then roll in crumb mixture. Arrange pork in a single layer on a baking pan coated with cooking spray. , Bake at 400° for 15-18 minutes or until juices run clear. For a crispier coating, broil for 2-3 minutes after baking.

1 tablespoon barbecue sauce
1 teaspoon Worcestershire sauce
1 teaspoon soy sauce
1/2 teaspoon mustard
2 teaspoons garlic powder
1 cup dried breadcrumbs
2 teaspoons dried parsley
salt
cooking spray

Steps:

  • Combine pork, sauces, mustard, 1 tsp of the garlic powder and some salt in a bowl.
  • In a shallow dish, mix 1 tsp garlic powder, salt, parsley and breadcrumbs.
  • Bread pork nuggets and place on parchment lined cookie sheet.
  • Spray with cooking spray.
  • Bake in 350°F oven for about 20 min, or until done.
