1 medium sweet apple (Red Delicious, Pink Lady, Gala, Fuji)
2 cups fresh strawberries

Steps:

  • Place washed and peeled carrot in your juicer, save pulp if you like for a later use(good in soup).
  • Insert apple into juicer.
  • Add washed and hulled strawberries.
  • Pour into a glass and stir.
  • Drink! Enjoy!

  • Combine graham cracker crumbs, sugar and melted butter until crumbly.
  • Press into the bottom of a 9 inch springform pan.
  • Combine marshmallows, fruit cocktail and sour cream and pour over graham cracker crust.
  • Chill until set.

We love this delicious fruit topping you can serve many different ways. And if you don't have a fridge, I share how to make your own sour cream from un-refrigerated ingredients.

1 cup commercial sour cream (or make your own, below)
1 (3-ounce) package instant vanilla pudding mix
1 to 2 tablespoons milk (or water, as needed)
1 (8-ounce) can Media Crema ((half and half sold in the Latin/Mexican foods aisle of most groceries))
2 teaspoons white vinegar (or lemon juice or lime juice)

Steps:

  • Place sour cream in a small lidded bowl and stir in half the pudding mix. Slowly add the remaining mix and stir in.
  • Thickness will vary by the sour cream used; thin to desired consistency with milk or water. Make it thinner for a dip; moderately thick for a parfait and thicker still as a topping.
  • Mixture will be slightly grainy; cover and refrigerate 30 minutes, stir briskly and it will be smooth.

  • Drain oranges, reserving the liquid.
  • In a large bowl, combine oranges, strawberries, bananas, and apples.
  • Add the liquid from the oranges. Toss.
  • Cover and chill for 1 hour.

1 sheet frozen puff pastry, thawed
All-purpose flour, for dusting
2 tablespoons apricot jam
1 cup blueberries, plus more for garnish
1 cup blackberries, halved, plus more for garnish
1 cup quartered strawberries, plus more for garnish
1/4 cup sugar
2 tablespoons cornstarch
Juice of 1 lemon
2/3 cup granola
1/2 cup Greek yogurt
Fresh mint leaves, for garnish
2 tablespoons honey or maple syrup

Steps:

  • Preheat the oven to 425 degrees F.
  • Roll out the puff pastry to 1/4 inch thick on a floured surface. Transfer the pastry to a 9-inch cast-iron skillet and gently press it into the skillet, allowing the extra to hang over the edges. Brush the pastry with the apricot jam.
  • Place the blueberries, blackberries, strawberries, sugar, cornstarch and lemon juice in a bowl. Toss to combine, then transfer the mixture to the prepared skillet.
  • Bake until the pastry is golden and the fruit is bubbling, 30 to 35 minutes. If the edges begin to get too dark, lightly cover with foil.
  • Top with the granola and spoonfuls of yogurt. Garnish with mint and the extra berries. Drizzle with the honey, slice and enjoy.

1 ½ pounds ground beef
1 (14.5 ounce) can peeled and diced tomatoes with juice
1 teaspoon salt
1 tablespoon white sugar
1 ½ cups sour cream
3 ounces cream cheese
½ onion, chopped
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a large skillet over medium heat, brown the ground beef. Add the tomatoes with juice, salt and sugar and simmer for 15 minutes.
  • In a separate medium bowl, combine the sour cream, cream cheese and onion and mix well. In a 9x13 inch baking dish, place half of the egg noodles, then all of the meat mixture, then the cream mixture. Top with the remaining noodles and sprinkle with the cheese.

1 1/2 cups boiling water, divided
1/2 cup mandarin orange, drained
2 (12 ounce) cans evaporated milk, chilled, divided
1 (3 ounce) package lemon gelatin
1/2 cup crushed pineapple, drained
1 (3 ounce) package strawberry gelatin
1/2 cup frozen strawberries, thawed and drained (about 8)

Steps:

  • Coat 9x5-inch loaf pan with non-stick cooking spray.
  • For mandarin orange layer: Dissolve orange gelatin in 1/2 cup boiling water in small bowl. Let stand for 10 minutes. Place dissolved gelatin, mandarin oranges and 1 cup evaporated milk in blender; cover. Puree for 10 seconds or until well blended. Pour into loaf pan. Refrigerate 30 minutes or until set.
  • For pineapple lemon layer: Follow process for mandarin orange layer substituting lemon gelatin for the orange and pineapple for the mandarin oranges. Pour mixture over mandarin orange layer. Refrigerate 30 minutes or until set.
  • For strawberry layer: Follow process for mandarin orange layer substituting strawberry gelatin and strawberries. Pour over pineapple lemon layer. Refrigerate at least 4 hours or overnight.
  • To unmold: Run point of knife around top of pan. Dip pan into a large bowl of warm water. Place serving platter on top of pan. Invert mold and platter together; shake gently to loosen. Gently remove mold. Cut into slices and serve.
