Easy waffles turn hearty with the addition of cheese and sausage. Breakfast, brunch or dinner never tasted this good!

2 cups Original Bisquick™ mix
1 1/3 cups milk
2 tablespoons vegetable oil
1 egg
1 cup shredded Cheddar cheese (4 oz)
1/3 lb bulk pork sausage, cooked and drained (1 cup)

Steps:

  • Heat waffle iron; grease if necessary. In large bowl, stir all ingredients until blended.
  • Pour about 1 cup batter onto center of hot waffle iron; close lid.
  • Bake about 5 minutes or until steaming stops. Carefully remove waffle. Repeat with remaining batter.

2 tablespoons canola oil
1 pound high-quality pork breakfast sausage links, sliced
1 large sweet onion, such as Vidalia, halved and thinly sliced
1 large Granny Smith apple, cored, halved and thinly sliced
1 large Gala apple, cored, halved and thinly sliced
1/2 cup pure Grade B maple syrup
Kosher salt and freshly ground black pepper
1/4 cup apple cider vinegar
1 teaspoon finely chopped fresh thyme
Chopped fresh flat-leaf parsley, as needed
1 1/2 cups all-purpose flour
3/4 cup grated sharp white Cheddar
2 teaspoons baking powder
2 teaspoons granulated sugar
1/2 teaspoon baking soda
1/2 teaspoon fine salt
1/4 teaspoon coarsely ground black pepper
1 1/4 cups buttermilk
1/3 cup (5 tablespoons plus 1 teaspoon) unsalted butter, melted, plus more for the waffle iron
Few dashes hot sauce
2 large eggs

Steps:

  • For the sausage and apples maple agrodolce: Put 1 tablespoon of the canola oil in a cast-iron skillet over medium-high heat. Add the sausage and cook, stirring occasionally, until deeply browned, 8 to 10 minutes. Set aside.
  • Put the remaining tablespoon of oil in a medium nonstick skillet over medium heat. Add the onions and toss to coat with the oil, then add the apples, 2 tablespoons of maple syrup and some salt and pepper and cook, stirring frequently, until the apples and onions are very soft and caramelized, about 10 minutes. Add 1 tablespoon of the apple cider vinegar and remove the skillet from the heat. Stir the sausage, thyme and parsley into the caramelized apples; transfer to a bowl and keep warm.
  • Put the nonstick skillet back over low heat, add the remaining 6 tablespoons maple syrup and 3 tablespoons cider vinegar and swirl a few times to make the agrodolce.
  • For the Cheddar-black pepper waffles: Fit a baking sheet with a baking rack, put the baking sheet in the oven and preheat the oven to 200 degrees F.
  • Whisk together the flour, Cheddar, baking powder, sugar, baking soda, salt and pepper in a large bowl. Whisk together the buttermilk, melted butter, hot sauce and eggs in a medium bowl. Add the wet ingredients to the dry ingredients and whisk until just combined. Lumps are ok.
  • Preheat the waffle maker according to the manufacturer's instructions. Brush the grates with some melted butter. Ladle about 1/3 cup of the waffle batter into each grate, close the cover and cook until golden brown and crispy, about 4 minutes. The waffles will be misshapen, not perfectly square, with rounded corners. When they are cooked, transfer them to the baking rack and continue with the rest of the batter.
  • To serve, put 2 waffles on each of 4 plates. Top each with some sausage and apples and a drizzle of the warm maple syrup and cider vinegar agrodolce. Serve immediately.

1 teaspoon seasoned salt, divided
1 cup shredded sharp cheddar cheese
8 large eggs, room temperature
1 tablespoon minced fresh parsley

Steps:

  • Preheat waffle maker. In a large skillet, cook sausage, mushrooms, onion and red pepper over medium heat until sausage is no longer pink and vegetables are tender, 8-10 minutes, breaking up sausage into crumbles; drain. Remove from heat and keep warm., Meanwhile, in a large saucepan, whisk flour, 1-3/4 cups cream and 1/2 teaspoon seasoned salt until smooth. Bring to a boil, stirring constantly; cook and stir until thickened, 2-3 minutes. Stir in cheese and 1 cup sausage mixture until cheese is melted. Remove from heat and keep warm., In a large bowl, whisk eggs and the remaining 1/4 cup cream and 1/2 teaspoon seasoned salt until blended. Bake in a well-greased waffle maker until golden brown, 2-3 minutes. Serve with sausage mixture and cheese sauce; sprinkle with parsley.

2 large eggs
2 cups all-purpose flour
4 teaspoons baking powder
1 tablespoon sugar
1/4 teaspoon kosher salt
1 3/4 cups milk
1/2 cup vegetable oil
1/2 teaspoon vanilla extract
1/2 cup crumbled cooked bacon
1/2 cup shredded sharp Cheddar
Nonstick cooking spray, for the waffle iron
Butter, maple syrup and/or fried eggs with runny yolks, for serving

Steps:

  • Preheat a waffle iron.
  • In a small bowl, whisk the eggs until fluffy; reserve.
  • Next, in a large bowl, mix together the flour, baking powder, sugar and salt. In a third bowl, whisk together the milk, oil and vanilla extract. Add the wet ingredients into the dry ingredients and mix just until combined. Add the bacon, Cheddar and reserved whisked eggs and mix until combined.
  • Spray the waffle iron with nonstick spray. Pour in 1/4 cup of the batter and cook the waffles until golden brown. (The waffles can be kept in a low oven to keep warm while the others cook.) Repeat with the remaining batter. Serve the waffles with butter, syrup and/or fried eggs.

  • Fold two 18-in.-long pieces of foil into two 18x4-in. strips. 2 cups shredded Cheddar cheese
4 large eggs
1 cup low-carb baking mix (such as Carbquik®)
½ cup milk
¼ cup coconut flour
salt to taste
1 pound bulk mild pork sausage (such as Jimmy Dean®)
½ cup chicken broth
¼ cup heavy cream
2 ounces cream cheese, softened
1 pinch garlic powder, or to taste
1 pinch onion powder, or to taste
1 pinch paprika, or to taste
ground black pepper to taste

Steps:

  • Spray a waffle iron with cooking spray; preheat according to manufacturer's instructions.
  • Mix Cheddar cheese, eggs, baking mix, milk, coconut flour, and salt together.
  • Cook in 1/2 cup batches in the preheated waffle iron until waffle is golden brown and the iron stops steaming, about 5 minutes.
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Add chicken broth, cream, and cream cheese; stir to combine and add garlic powder, onion powder, paprika, and pepper. Cook down until thickened and reduced, 5 to 10 minutes.
