COUNTRY-STYLE SAUSAGE MEATBALLS

Country-Style Sausage Meatballs image

This is an interesting and tasty variation of meatballs from a Greek cookbook, where half the mince meat is substituted with the contents of a spicy country-style pork sausage. The meatball tastes like sausage but is leaner and healthier. It tastes better if it is allowed to sit overnight before cooking so that the flavours can blend together.

Provided by joanna_giselle

Categories     Meat

Time 1h20m

Yield 4 serving(s)

Number Of Ingredients 7

300 g beef mince
300 g sausages (I used Greek loukanika but a mild Italian sausage is close in flavour)
1 tablespoon tomato paste
3/4 cup breadcrumbs (you may need a bit less depending on your meat)
1 egg
oregano
salt and pepper

Steps:

  • Carefully cut the sausage casings and scrape out all the contents into a bowl.
  • Chop them so that they resemble mince and then add to the beef mince.
  • Add breadcrumbs, egg, tomato paste, salt, pepper and oregano to taste.
  • Combine very well with your hands making sure that you have incoorporated the sausage and the spices well.
  • Allow to sit for 30 minutes in the fridge (or overnight for best results).
  • Roll into long, oval-shaped meatballs and place in a greased baking tray.
  • Cook in a pre-heated oven at 180 degrees celcius for 40 minutes.
  • Serve with ketchup, mustard and a green salad. Yum!

SAUSAGE BALLS

Sausage Balls image

These classic Southern hors d'oeuvres, made with only three ingredients, taste just as good with beer as they do with bourbon. And they come together in about 20 minutes from start to finish.

Provided by Julia Reed

Categories     easy, quick, finger foods, sausages, appetizer

Time 20m

Yield About 6 dozen

Number Of Ingredients 3

1 pound hot country-style sausage or any other spicy bulk pork sausage, uncooked
3 1/2 cups sharp Cheddar cheese, grated
2 cups Bisquick

Steps:

  • Heat oven to 400 degrees. Combine ingredients in a bowl and mix with your hands until there are no dry crumbs. Form into balls about one inch in diameter and place on a baking sheet. If you have the time, the sausage balls hold their shape better if refrigerated overnight before baking. (They also freeze extremely well. Bake them straight out of the freezer, adding a few more minutes to the baking time.)
  • Bake until the balls are golden brown, about 8 to 10 minutes. Serve immediately.
