COWBOY COOKIES: A GIFT IN A JAR

Steps:

• In a small bowl, whisk together the flour, cinnamon, allspice, baking soda, and salt. Pour the mix into a quart-size mason jar (any quart-size, or slightly larger, wide mouth jar will work). I highly recommend using a funnel to pour the flour and remaining ingredients into the jar. Add the oats and sugar. Gently tap the bottom of the jar on a hard surface to compact the ingredients without compromising the individual layers. Add the cranberries and chopped pecans. Gently tap the bottom of the jar to compact the ingredients again. Finally, add the chocolate chips, tapping the jar if more room is needed. • Preheat the oven to 350F. In a large bowl, using a hand-mixer, beat the softened (to room temperature) butter. Mix in the eggs and vanilla extract. Pack it in, or else it won't all fit. Also, I added the chopped pecans last, because if the ingredients were too much or not enough, then I could add more or less pecans to adjust. You may even need to use your hands to get everything incorporated. Then roll the cookie dough into 1 1/2 inch balls, place on a parchment covered baking sheet and bake for about 10 minutes in a preheated 350°F oven. I got about 26 to 28 cookies out of these.

• Press each layer firmly in place before adding next ingredient.

• Bake at 350° for 11-13 minutes until edges are lightly browned.
• Cool 5 minutes on baking sheet.
