I found this recipe in Betty Crocker's Best Bread Machine Cookbook. This is a recipe for a 2 pound loaf. I have used the cherries in it before and it too was good.

Number Of Ingredients 9

1 cup water
3 tablespoons water
1/4 cup honey
2 tablespoons margarine or 2 tablespoons butter, softened
4 cups bread flour
1 1/2 teaspoons salt
2 teaspoons bread machine yeast
1/3 cup dried cranberries (optional, dried cherries)
1/3 cup dried blueberries

Steps:

  • Following the manufacturers directions for your bread machine, add all the ingredients to the bread pan except the cranberries and blueberries.
  • Set the machine for either the Sweet or Basic/White bread cycle.
  • Select either a Light or Medium crust.
  • Add the cranberries and blueberries during the last 5 to 10 minutes of the kneading cycle or at the raisin/nut signal.
  • *Note: Do not use the delay cycle for this bread recipe.

This is a recipe from one of my mother's old cookbooks. If you don't have buttermilk, sour milk will do, or you can mix 1 T vinegar with milk to make 1 cup.

1 cup cranberries
1 cup blueberries
3/4 cup sugar
1 cup brown sugar
1/2 cup butter, softened
2 eggs
1 cup buttermilk
3 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt

Steps:

  • Preheat oven to 375°F.
  • Grease two standard size loaf pans.
  • Mix cranberries, blueberries and granulated sugar together in saucepan, cooking over medium heat and stirring until sugar is dissloved.
  • Remove from heat and set fruit aside to cool.
  • Mix brown sugar and butter in mixing bowl and beat until blended. Add eggs and beat well.
  • Stir in buttermilk.
  • Mix flour, baking soda, baking powder and salt in a bowl and stir until well mixed.
  • Add to butter mixture and stir until just blended.
  • Stir in fruit and sugar mixture.
  • Spoon batter into greased loaf pans.
  • Bake for 1 hour and ten minutes or until a toothpick comes out clean when inserted into center.
  • Remove and cool.

1 1/2 teaspoons salt

1 cup cooked instant rice
1/3 cup pine nuts
1 teaspoon celery seed
1/8 teaspoon fresh ground black pepper
1 teaspoon instant yeast
3/4 cup dried cranberries

Steps:

  • Place everything except cranberries in bread machine in order recommended by the manufacturer. Add cranberries during the "add-in" cycle.
  • Variation: substitute sunflower seeds or unsalted peanuts for the pine nuts and dried blueberries or sour cherries for the dried cranberries.

2 cups Gold Medal™ Better for Bread™ flour
1 1/4 cups Gold Medal™ whole wheat flour
1 1/2 teaspoons salt
3/4 teaspoon ground mace
2 teaspoons bread machine or quick active dry yeast
1/2 cup dried cranberries or raisins
1/2 cup butter or margarine, softened
2 tablespoons cranberry-orange relish or sauce

Steps:

  • Measure carefully, placing all bread ingredients except cranberries in bread machine pan in the order recommended by the manufacturer. Add cranberries at the Raisin/Nut signal or 5 to 10 minutes before last kneading cycle ends.
  • Select Whole Wheat or Basic/White cycle. Use Medium or Light crust color. Do not use delay cycle. Remove baked bread from pan; cool on cooling rack.
  • In small bowl, mix butter and cranberry-orange relish until well blended. Serve with bread. Store butter in refrigerator.
