1 cup orange juice
1/2 cup water
1/3 cup dried cranberries
2 Tbsp. chopped pecans
1-1/2 lb. boneless skinless chicken breasts, cut into bite-size pieces
1 can (10-3/4 oz.) condensed cream of chicken soup
2 cups frozen mixed vegetables (peas, corn and carrots), thawed, drained

Steps:

  • Heat oven to 400ºF.
  • Prepare stuffing as directed on package, using orange juice and water for the liquid and stirring in berries and nuts with the stuffing mix.
  • Combine chicken, soup and vegetables. Spoon into 6 ovenproof serving bowls or 13x9-inch baking dish; top with stuffing mixture.
  • Bake 30 min. or until chicken is done.

I came across this one in a cookbook, then just changed around a few things to better suit our tastes. Cranberry/Orange Chicken is a nice New England dinner our entire family (we have two teenagers) enjoys. Sometimes, I'll make cranberry sauce, too, to top off a dessert of gingerbread. -Sharon Parsons, Killingworth, Connecticut

1/2 cup all-purpose flour
1/8 teaspoon salt
1 broiler/fryer chicken (about 3 pounds), cut up
4 tablespoons butter
2 cups whole fresh or frozen cranberries
1/2 cup chopped onion
2 tablespoons grated orange zest
1-3/4 cups sugar
1-1/4 cups orange juice
1/4 teaspoon ground ginger
1/4 teaspoon ground cinnamon
Red food coloring, optional

Steps:

  • Combine the flour and salt and place in a plastic bag. Shake chicken, a few pieces at a time, in flour mixture. Melt butter in a large skillet; brown chicken on all sides. , In a saucepan, combine remaining ingredients except food coloring; bring to a boil. Pour over chicken; cover and simmer for 1 hour or until a thermometer reads 180°. Remove chicken to a warm platter., Bring sauce to a boil and cook, stirring frequently, until thickened. Add a few drops red food coloring if desired. Serve with chicken.

¼ cup orange marmalade

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Meanwhile, put cranberries in a small bowl and pour boiling water over them to cover. Let stand 15 minutes until plump; drain.
  • At the same time, slice off top rind of wheel of Brie. Put Brie in a pie plate.

2 1/4 cups cranberry-orange sauce
3/4 cup packed brown sugar
3/4 cup vinegar
3 tablespoons Worcestershire sauce
3 teaspoons chili powder
3 teaspoons cilantro (coriander leaves)
24 -30 lbs meaty chicken pieces

Steps:

  • Preheat oven to 375 degrees F.
  • In a large saucepan, mix the tomato sauce, cranberry-orange sauce, brown sugar, vinegar, Worcestershire sauce, chili powder, and cilantro.
  • Cover and bring to a boil, then reduce heat and simmer, uncovered for 20 to 30 minutes, stir occasionally until the sauce is slightly thickened.
  • Divide chicken into thirds and place into three 13x9x2-baking pans.
  • Bake uncovered for 30 minutes.
  • Brush sauce over chicken; reserve some to baste with later.
  • Continue to bake an additional 15 to 20 minutes.
  • Brush with reserved sauce during the last 10 minutes of cooking.

1/4 cup Thai chili sauce
1/3 cup orange marmalade
4 teaspoons cornstarch
2 tablespoons cold water

  • Combine the garlic powder, poultry seasoning, salt and pepper; rub over chicken.
