No sugar added cranberry sauce is easy to make, and will likely be the quickest recipe you'll make for your whole Thanksgiving celebration. Here's how to make a whole berry cranberry sauce from scratch, right at home.

18 oz. fresh cranberries
1 cup water
1/2 cup applesauce
3 Tbsp. fresh squeezed orange juice
2 Tbsp. honey
Zest from ½ orange
1/8 tsp. ground cinnamon
1/8 tsp. ground cloves
1/8 tsp. ground ginger

Steps:

  • Place the cranberries and water in a pot and heat over medium heat.
  • Mix in the applesauce, orange juice, honey, and orange zest.
  • When the pot comes to a boil, reduce it to a simmer and stir in the ground cloves and ginger and cinnamon.
  • Allow the sauce to simmer for around 12 minutes, stirring occasionally, until the sauce reaches the consistency of your liking. Taste the sauce occasionally and adjust the sweetener to taste.
  • Serve this cranberry sauce alongside your favorite meat or holiday meal. It's also delicious as a lower sugar sweet option when paired with a bit of coconut cream, dark chocolate or fresh whipped cream.

This is a great way to tailor cranberry sauce to your personal sweet/tart tastebuds. Additional options: 1. Skip the straining step if you prefer whole cranberry sauce. 2. Consider adding a tablespoon of orange zest. 3. Make the sauce thicker or thinner by adding varying amounts of cornstarch. 4. Add more sweetener if you prefer less tart. 5. Add a tablespoon or so of freshly squeezed lemon juice for a little brightness. I created this recipe so my diabetic husband wouldn't feel left out. Everyone at the table prefers it and this has become our standard.

12 ounce(s) fresh whole cranberries
1/2 cup(s) orange juice
1/2 cup(s) water
1/2 cup(s) splenda or truvia
1 tablespoon(s) cornstarch dissolved in 1/2 cup hot water
1 tablespoon(s) orange or lemon zest, freshly grated, optional

Steps:

  • Place first 4 ingredients in a 4 quart saucepan. Bring to a boil. Reduce heat and simmer until berries pop, about 5-7 minutes. Remove the pan from heat and let cool about 10 minutes.
  • Using a spatula, press the berries through a mesh strainer to remove the skin and seeds. It's easiest to do this in batches, spooning about a third of the berries into the strainer and mashing them. Scrape the skins and seeds out of the strainer and then spoon in another batch of berries. Return the strained cranberry to the saucepan.
  • Stir in the cornstarch mixture to the cranberry and return to a boil, stirring constantly. Add optional orange zest and/or lemon juice. Cook until thickened, about 5 minutes. Cool. Place in a resealable container and refrigerate until use.

1 lb fresh cranberries
1 (12 ounce) can 100% apple juice concentrate, thawed
1 tablespoon flour
1/2 cup walnuts, chopped (optional)
1 teaspoon orange zest (optional)

Steps:

  • Combine cranberries, juice concentrate, and flour in a pot.
  • Cover and simmer 5-10 minutes on medium heat until most of the berries have burst and sauce thickens.
  • Stir in zest and/or walnuts and serve.

I love cranberry sauce and am always looking for good recipes without all that sugar that alters your blood sugar. I came across a recipe in the Nov. 2009 issue of bon appetit and altered it to fit my needs. It turned out so good that I am deciding to share it with all of you and hope you enjoy it as much as I do. I know it sounds different but it is amazing...just give it a try!

Number Of Ingredients 7

3 dried chipotle peppers
2 (12 ounce) bags fresh cranberries (frozen if not in season and thawed out)
2 2/3 cups Xylitol sweetener (I used NOW brand)
2 valencia oranges
3 small garlic cloves (minced)
1/2 teaspoon cinnamon (heaping)
1/2 teaspoon cumin (heaping)

Steps:

  • Place dried chipotles in a small sauce pan and add water to cover chiles completely. Place on stove and bring to a boil. Reduce temp and let simmer until chiles are rehydrated and soft (about 30 minutes). Remove chiles and place in a larger saucepan.
  • Add cranberries (picked over) and xylitol to the pan with the chiles.
  • Add the zest of the 2 oranges to the cranberry mixture then cut in half and add their juice.
  • Heat on medium temperature stirring until xylitol is dissolved. Continue stirring until cranberries begin to pop.
  • Add garlic, cinnamon, and cumin and continue to simmer as mixture thickens.
  • Remove from stove and let cool.
  • Chill in refrigerator. Mixture will thicken upon cooling.
  • Serve cold or warm.
