QUICK CRANBERRY SCONES

Being an Anglophile, I've tried lots of scone recipes over the years, but this is my all-time favorite. It was given to me by a hotel chef in Los Angeles and bakes into batches of lovely Christmas gifts for friends and family.

Yield 8 scones.

Number Of Ingredients 8

2 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup shortening
1 egg, lightly beaten
2/3 cup heavy whipping cream
1/3 cup dried cranberries or dried currants

Steps:

  • In a large bowl, combine the flour, sugar, baking powder and salt. Cut in shortening until mixture resembles coarse crumbs. Combine egg and cream ; stir into crumb mixture just until blended. Stir in cranberries. Turn onto a floured surface; knead gently four times., Shape dough into a ball; place on an ungreased baking sheet. Pat until an 8-in. circle. With a sharp knife, score the dough into eight wedges (do not separate). , Bake at 425° for 15-20 minutes or until golden brown. Break into wedges. Serve warm.

2 cups all-purpose flour
¼ cup packed brown sugar
1 tablespoon baking powder
¼ teaspoon ground nutmeg
¼ teaspoon salt
¼ cup butter, chilled and diced
1 cup fresh cranberries, roughly chopped
⅓ cup white sugar
1 grated zest of one orange
½ cup chopped walnuts
¾ cup half-and-half cream
1 egg

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large bowl, stir together flour, brown sugar, baking powder, nutmeg and salt. Cut in butter until mixture resembles coarse crumbs.
  • In a separate bowl, toss cranberries with sugar; add to flour mixture along with orange peel and nuts. Mix lightly.
  • In another bowl, beat together cream and egg; slowly pour into dry ingredients, mixing with rubber scraper until dough forms. Knead dough 4 or 5 times, being careful not to over handle. Divide dough in half. Turn out onto lightly floured surface. Shape each half into a 6 inch circle. Cut each circle into 6 wedges. Place scones on lightly greased baking sheets.
  • Bake in preheated oven until golden brown, about 20 minutes.

Steps:

  • Preheat oven to 425°F (218°C). Cut the dried cranberries into smaller pieces.
  • In a small bowl, combine the flour, sugar, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. In a small bowl, combine milk and 2 tablespoons beaten egg; add to crumb mixture just until moistened. Stir in dried cranberries pieces.
  • Turn onto a floured surface; knead gently 6-8 times. Pat into a 6-in. circle.

1.5 cups gluten-free rolled oats
2 Tbsp sugar
1 Tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 Tbsp orange zest
6 Tbsp soft butter (or non-hydrogenated margarine)
3/4 cup whole cranberries (fresh or frozen work)
3/4 cup sour milk (to make sour milk, combine 2 tsp of lemon juice or vinegar with 3/4 cup milk and let stand for 5 minutes)

Steps:

  • Preheat oven to 375 degrees F. Line a large baking sheet with parchment paper.
  • In a large mixing bowl, combine flour, oats, sugar, baking powder, baking soda and salt.
  • Using 2 knives, cut in the butter or margarine until combined and it looks like coarse crumbs.
  • Add in the orange zest, cranberries and add sour or butter milk. Stir until completely combined.
  • Lightly flour your surface and place the dough on the surface. Using your hands, form the dough together but don't knead it. Form the mixture so the whole mixture is about 1 inch (2.5 cm) thick. Divide into 3 pieces.
  • Cut 4 scones out of the 3 pieces. Transfer each scone to the prepared baking sheet. Brush tops with milk (not the sour milk!)
  • Bake in oven for ~25 minutes or until lightly browned on top. Let cool.

3 tablespoons honey or sugar
1 tablespoon grated orange zest
3/4 cup (100 grams) dried cranberries

Steps:

  • Adjust oven rack to middle position and heat the oven to 425 degrees F. Line a large baking sheet with parchment paper or use a silicon baking mat.
