CREAM OF BRIE SOUP
Very tasty soup. Great as a starter or light lunch. So good served in hollowed-out large Kaiser rolls!

Steps:
- Melt the butter in a large saucepan over medium heat; cook the onions and celery until the onions are translucent, about 5 minutes. Stir in the flour, and cook for 3 minutes, stirring constantly. Gradually whisk in the chicken stock. Simmer until the celery is tender, about 20 minutes, stirring occasionally. Stir in the Brie cheese, and allow to melt for about 5 minutes.
- Pour the soup into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree in batches until smooth, and pour into a clean pot. Heat the soup to almost simmering over medium-low heat. Pour in the cream. To serve, garnish with red and green pepper strips.

CRABMEAT AND CORN SOUP
A very tasty chowder-type recipe. Delicious any time.

Steps:
- In a heavy-bottomed pot, melt butter, add flour, and stir gently until blended; do not burn or let it darken. Add milk gradually, stirring all the while, then add half and half, stirring gently while blending. Add corn and green onions, and cook for a few minutes until tender.
- Add crabmeat, pepper, salt, and soy sauce and simmer until very hot and small bubbles form around the edge; do not let boil. Adjust seasonings to taste. Garnish with sprinkles of chopped fresh parsley when serving and serve hot.
- Variations: You may use 4 cobs of fresh corn instead of frozen or canned. Cut the kernels off the cob, scrape cob for juices, and then add to soup. Cook until corn is tender. Canned crabmeat or imitation crab may be used instead of fresh crabmeat. Use one 7 1/2-ounce can crabmeat (drained) and 8 ounces imitation crab (cut into small pieces). Combine the two and cook as noted above.

MY MARYLAND CREAM OF CRAB SOUP RECIPE - (4/5)

- Saute the finely chopped onion and celery in the butter and a tablespoon of olive oil to keep the butter from burning. (You really do not want people to even know the onion and celery are there so saute the vegetables for about five minutes. Make a light roux with the butter and flour with the onions and celery. Stir continuously in a large heavy pot on low heat, until smooth and flour taste is cooked out. (about 5 minutes) Slowly add chicken stock. half and half and milk and stir slowly till thick. Temporarily remove from the heat and add salt to taste. Gently add crab meat, and cook on low heat until thoroughly heated through, but do not boil at this point. Top each bowl with a teaspoon of sherry, if you like, and a sprinkle of old bay, before serving, if desired. Soup should be thick and creamy. A big delicious crabby hug!

- In a Dutch oven, saute onion and green pepper in butter until tender. Add garlic; saute 1 minute longer. Stir in the remaining ingredients. Cook and stir over medium-low heat until heated through (do not boil).

CREAM OF BRIE WITH LUMP CRABMEAT SOUP

- Cook vegetables in a small amount of butter until tender. Bring milk and cream to a boil and add vegetables. Melt butter and add flour to make a thick paste Whisk beurre manie into milk mixture to desired consistency Season with seasonings. Bring back to a boil and add brie. Do not boil after cheese is added. Stir in crabmeat to warm. Serve, sprinkled with chopped fresh parsely.
KK'S CREAM OF CRAB SOUP
As a Maryland native growing up, crab was always plentiful, available and fresh - usually caught that day. Today I buy fresh lump or jumbo lump crab for this soup, depending on the audience. Using a lesser grade of crab won't give you the premium results you are probably seeking.

Steps:
- Gently remove cartilage from crab meat.
- Melt butter in a 2-3 quart sauce pan.
- Add the onion and cook 3-4 minutes - until translucent.
- Blend in flour and cook as a roux on medium-low heat until the flour-butter mixture "loosens", which indicates the flour is cooked (about 5 minutes).
- Off the heat, stir in chicken broth and sherry, return to the heat and simmer for 3 minutes.
- Add salt, pepper, milk and cream, then stir in Tabasco, cayenne and sugar.
- Use a little of the liquid to thin the tomato paste and stir it back into the soup.
- Cook on med-low heat until thickened, but do not let it boil.
- Taste it, and when the cream base is cooked and seasoned to your liking, add the crab.
- Heat gently another 5 minutes and serve.
- Serving suggestion: make a lightly sweetened whipped cream to dollop on top and serve with a small pitcher of the sherry to add at the table.
- A small amount of fresh chopped parsley around the edge of a soup plate is attractive, but don't use too much because you don't want to affect the flavor of the soup.

- In a Dutch oven, heat butter over medium-high heat. Add mushrooms and onions; cook and stir until tender. Stir in broth, paprika, soy sauce and dill. Bring to a boil. CRABMEAT AND BRIE FONDUE

Steps:
- Tomato Confit:.
- Place tomatoes in a small saucepan and season with the salt.
- Add rosemary sprig and garlic and enough olive oil to barley cover the top of tomatoes.
- Bring oil to a very low simmer and cook for about 1 hour.
- Remove tomatoes from the oil with a slotted spoon and place in food processor or blender.
- Process until smooth, 1-2 minutes. Yield about 1/2 cup.
- Fondue:.
- Place a skillet over medium heat.
- Add the butter to the pan.
- Once the butter is melted, add the shallots and saute, stirring occasionally, until the shallots are soft and translucent, about 1 miute.
- Add the heavy cream and bring to a simmer.
- Once the cream is hot and bubbling, add the Brie and use a whisk to stir into the cream.
- Season the cream with the salt and pepper and add crabmeat to the pan; use a wooden spoon and stir in slowly.
- Continue to cook the fondue over medium heat until the cream is slightly reduced, about 3-5 minutes.
- Remove from the heat and stir into the fondue.
- Transfer fondue to a fondue pot and spoon Tomato Confit into the fondue.
- Serve warm with bread and/or fresh assorted vegetables.
