CREAMY BAKED HADDOCK & TATTIES
Warm, comforting and made in the microwave, this might well be the easiest fish pie ever

Steps:
- Firstly assemble the dish. Scatter the haddock, leek and parsley over the bottom of a shallow microwavable dish and mix together with your fingers or a spoon. Drizzle over half the cream and 5 tablespoons of water. Lay the potato slices over the fish and leeks and drizzle over the remaining cream. Season the potatoes with a little salt and plenty of black pepper.
- Put the grill on high. Cover the dish with cling film and pierce it a few times. Microwave the pie on the highest setting for 8-10 minutes until everything's bubbling away and the potatoes are tender when poked with a knife. Whip off the cling film and put the dish under the grill until the potatoes are golden. Leave to rest for a minute, then serve straight from the dish.

Steps:
- Melt butter in pan over medium heat and stir in flour, salt, pepper, and nutmeg whisking until smooth.
- Add milk slowly, whisking to get out any lumps and make smooth.
- Add the cheese, stirring until melted.
- Place haddock in greased baking dish.
- Sprinkle with salt and pepper.
- Pour sauce over haddock.
- Drizzle over sherry and sprinkle with paprika.
- Bake at 325*F. for 45 minutes.
- Serve and enjoy.
BAKED HADDOCK
Steps:
- Preheat oven to 500 degrees F (260 degrees C).
- In a small bowl, combine the milk and salt. In a separate bowl, mix together the bread crumbs, Parmesan cheese, and thyme. Dip the haddock fillets in the milk, then press into the crumb mixture to coat. Place haddock fillets in a glass baking dish, and drizzle with melted butter.
- Bake on the top rack of the preheated oven until the fish flakes easily, about 15 minutes.

CREAMY BAKED HADDOCK
This is a delicious and quick way to prepare Haddock. Actually you can cook any mild flavoured white fish in this manner. It is so easy and tasty. We love it!

- Preheat the oven to 180*C/350*F/ gas mark 4.
- Butter a baking dish large enough to hold all of the fish fillets in one layer. Place the fish into the baking dish, presentation side up. Season well with salt and ground white pepper. Squeeze the juice of the lemon over top. Sprinkle the grated cheese over all.
- Whisk the cream and mustard together, Pour evenly over top of the fish.
- Toss the bread crumbs with the melted butter. Sprinkle evenly over the fish. Bake for 25 to 30 minutes, until lightly browned on top and the fish flakes easily with the tines of a fork. Serve hot. This goes very well with mashed potatoes or rice with a vegetable on the side.

- In a nonstick skillet, saute the green pepper and onion in butter until tender. Stir in the flour until blended. - Preheat oven to 350 degrees.
- Cut fish into four serving size portions.
- Rinse and pat dry with paper towels.
- Place fish in an 11" x 7" baking pan.
- In a mixing bowl, stir together whipping cream, 2 tbsp Parmesan cheese, wine, garlic, salt and pepper. Pour over fish.
- Bake uncovered for 20-25 minutes or until fish flakes easily with a fork.
- Take fish out of sauce and place on a serving platter.
- Stir sauce to blend and pour over fish.
- Top with 1 tbsp Parmesan cheese.
HADDOCK BUBBLY BAKE

- Preheat oven to 350 degrees F (175 degrees C). Lightly butter a 2 quart casserole dish.
- Arrange fish fillets in the bottom of the prepared casserole dish, and sprinkle with salt and pepper to taste. Layer onion slices over fish. Spread cream of mushroom soup over all, and top with shredded cheese.
- Bake in preheated oven for about 40 minutes, or until bubbly and fish flakes easily with a fork.

- Rinse and dry fillets. Season with 1 teaspoon salt and 1/8 teaspoon pepper.
