3 cups graham cracker crumbs
1/2 cup butter, melted
3-1/2 cups cold 2% milk
2 packages (3.4 ounces each) instant vanilla pudding mix
5 medium firm bananas, halved lengthwise and cut into 1/2-inch slices
1 can (20 ounces) crushed pineapple, drained
1 carton (20 ounces) frozen whipped topping, thawed
1/3 cup chopped pecans, optional
2 (1.55 ounces each) milk chocolate candy bar, broken into squares
Maraschino cherries, optional

Steps:

  • Combine cracker crumbs and butter. Press into an ungreased 13-in. x 9-in. dish. In a large bowl, beat milk and pudding mix on low speed for 2 minutes. Pour over crust; top with bananas and pineapple. Spread with whipped topping (dish will be full). Sprinkle with pecans if desired., Chill for at least 4 hours before cutting. Garnish with candy bar pieces and cherries if desired.

I made this dessert for the holiday and it was delicious..everyone wanted the recipe...I didn't have graham crackers and didn't want to go to the store so I used buttery cracker crumbs. The crackers gave the dessert a wonderful salty /sweet taste..I think you will like this too...

60 buttery crackers, crushed plus 8 whole round crackers
1/2 c melted butter
1 c chocolate chips
2 Tbsp butter
2 large ripe bananas (ready to eat not hard)
2 pkg 3 oz. size each, banana cream instant pudding
1 1/2 c cold milk
8 oz container thawed whipped topping

Steps:

  • 1. Crush crackers in plastic bag using a rolling pin. Mix melted butter with the crumbs. Press onto bottom and up sides of an 8 or 9-inch dish or pie pan. Chill until firm.
  • 2. Microwave the chocolate chips and 2 tablespoons of butter in 30 second interval, stirring until melted after each 30 seconds. (Brush the tops of 8 whole crackers with some of the chocolate mixture then set them in the fridge to chill, this step is optional.) Carefully brush or spread chocolate mixture over bottom and sides of crust. Chill to set for 5 minutes.
  • 3. Arrange 1/2 the banana slices on bottom and side of the chocolate-coated crust. Pour the milk and both pudding mixes in a medium bowl. Whisk together until well blended. Gently fold in 1/2 the whipped topping and spoon into the the crust.
  • 4. Top with remaining banana slices; and spread with remaining topping. Chill for 4 hours or more until set.
  • 5. Remove from fridge for a few minutes before serving...it will be easier to cut. Just before servings garnish with the chocolate covered crackers, if desired.

GRAHAM CRACKER CRUST
1 1/2 c graham cracker crumbs (reserve 1 1/2 tablespoons)
6 Tbsp butter melted
1/3 c sugar
FILLING
2 bananas sliced
1 1/4 c 2% milk
1 c heavy whipping cream
2/3 c sugar
1/8 tsp salt
1/4 c cornstarch
4 egg yolks
1 tsp vanilla
2 Tbsp butter
WHIPPED TOPPING
1 c heavy whipping cream
1 1/2 Tbsp powdered sugar
1/2 tsp vanilla extract
bananas for garnish

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Mix the graham crackers, melted butter, and sugar. Press into a 9 inch pie plate and bake in the oven for 7 minutes. Once cooled layer bottom and sides with banana slices.
  • 3. In a medium saucepan over medium heat whisk together milk, cream, sugar, salt, and cornstarch. Whisk until the sugar is dissolved and the mixture is simmering and slightly thickened. In a medium bowl whisk the egg yolks together. Remove 1 cup of the hot mixture and in a slow stream whisk it into the egg yolk mixture. In a very slow stream whisk the egg mixture into the saucepan cooking until bubbling and thickened whisking constantly. Remove from the heat and whisk in the vanilla and butter. Cool for 15 minutes whisking several times so a skin does not form. Pour the pudding into the crust over the bananas. Cover with plastic wrap and refrigerate for at least 4 hours.
  • 4. Chill bowl and beaters in freezer for 20 minutes. Add whipping cream, powdered sugar, and vanilla to the bowl. Beat on low until mixture starts to increase in volume. Turn to medium high and beat until stiff peaks form Spread or pipe over chilled pie. Garnish with banana slices and reserved graham cracker crumbs.
