Creamy Chipotle Dressing, Non-Dairy image

This delicious, creamy dressing is non-dairy and gluten-free. My meat-and-potato husband loves it on his grilled chicken, steak, and spread on his burgers. I love it as a substitute for mayonnaise in tuna sandwiches. This will be spicy! If you omit the adobo and chipotle, this makes a great recipe base for other creamy dressings. Rice milk can be used for the soy milk. Use your favorite fresh herbs in place of the dill. You can make sauce thinner with the addition of more soy milk.

½ cup soft tofu
2 tablespoons soy milk
2 tablespoons olive oil
2 tablespoons lemon juice
1 teaspoon honey
¼ teaspoon garlic powder
¼ teaspoon salt, or to taste
1 pinch ground cumin
1 pinch ground black pepper
1 canned chipotle peppers in adobo sauce, or more to taste
1 teaspoon adobo sauce from chipotle peppers, or more to taste
2 teaspoons chopped fresh dill

Steps:

  • Blend tofu, soy milk, olive oil, lemon juice, honey, garlic powder, salt, cumin, and black pepper in a blender until smooth. Scrape the sides of the blender with a spatula as needed. Add chipotle peppers and adobo sauce a little bit at a time and blend into the sauce, tasting after each addition until you meet the level of spiciness you desire.
  • Transfer sauce to a bowl. Stir dill into the sauce to serve.

Number Of Ingredients 15

⅔ cup mayonnaise (I used Vegenaise, Grapeseed or Soy-Free)
2 tablespoons fresh-squeezed lime juice (about 1 medium lime)
1 to 2 chipotle chilis in adobo, deseeded
1 teaspoon adobo sauce (from those chipotles)
1 teaspoon honey or agave nectar
½ teaspoon ground cumin
½ teaspoon salt
Unsweetened dairy-free milk beverage, as needed (I used So Delicious Unsweetened Coconut)
4 cups chopped lettuce (green, romaine, etc)
1 15-ounce can black beans, drained and rinsed
4 small cluster tomatoes or 1 red bell pepper, deseeded and chopped (about 1 cup)
1 cup fresh or frozen (defrosted) corn kernels
¾ to 1 cup sliced or coarsely chopped olives
1 medium avocado, diced
1 cup crumbled Beanfield's Nacho Chips

Steps:

  • Place the mayo, lime juice, chipotles, adobo sauce, sweetener, cumin and salt in your blender or food processor and puree until smooth. Use 1 chipotle chili for tame spice (note that it mellows when used on the salad) and 2 for high heat.
  • If needed, thin the dressing with the milk beverage, 1 teaspoon at a time, to reach your desired consistency.
  • Divide the lettuce between four bowls. Layer the beans, tomatoes or red peppers, corn, olives, and avocado on (I prefer that order), topping with the chips.
  • Drizzle the chipotle dressing on the salads or serve it on the side. You may or may not have some leftover, depending on how heavy you pour it on. Cover and refrigerate any leftovers for up to 3 days.

12 oz plain coconut yogurt (I used two 6 oz containers of So Delicious Plain Coconut Yogurt, pictured below)
4 oz olive oil
4 tbsp. mayonnaise
2 oz lemon juice
2 oz apple cider vinegar
1 - 2 oz almond milk (or coconut milk, or rice milk... I used 1 oz, but you might like it thinner.)
1 tsp chipotle chili powder (watch it! This stuff is HOT! If you're not into spicy foods, try 1/2 tsp.)
1 tsp granulated garlic or 3 cloves fresh garlic
1 tsp sea salt

Steps:

  • Combine ingredients in a blender. Enjoy over your favorite salad!

1 cup raw unsalted cashews (soaked in hot water for 30 minutes or overnight in cool water)
1 tablespoon lemon juice
1 tablespoon apple cider vinegar
1 cup of of unsweetened non-dairy milk or water
1.5 chipotle peppers in adobo sauce
2 tsp adobo sauce
1/2 teaspoon sea salt
1 clove garlic or 1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon smoked paprika
1/2 teaspoon of dried dill or a pinch of dill weed

Steps:

  • Place cashews in a small bowl and cover with boiling water. Soak for 30 minutes. Alternatively, you can soak overnight in cool water.
  • Drain and rinse cashews.
  • Transfer cashews into your blender and add remaining ingredients, except dill.
  • Blend on high for 2 minutes or until a creamy and smooth texture is achieved. Pause and scrape sides as needed.
  • Add dill and pulse twice at low speed to mix in.
  • Refrigerate for 3 hours for best consistency and flavour.
  • Enjoy on salads, bowls, sandwiches, or as your favourite dip.

1 tablespoon green onions, chopped

  • Add all of the ingredients except for the green onions to a food processor or blender and process on high until creamy.
  • Mix in the green onions and adjust seasonings to taste.
