- Bring a large sauce pan of water (filled about halfway) to a boil over medium heat. Cook the orzo until tender, about 10 minutes. After the orzo has been cooking for about 5 minutes, add the asparagus to the same pot (this will allow the orzo and asparagus to cook in the same pot and keep the clean-up to a minimum!). Once the orzo and asaparagus are cooked and tender, drain and return to the pot. Quickly add the parmesan cheese and butter. Stir thoroughly, allowing both the cheese and butter to melt. Slowly add the cream to the mixture, while stirring. Continue to stir and add cream until you reach your desired consistency. Season with salt and pepper. Voila! You have a delicious side dish! Serve immediately.
CREAMY ORZO WITH SPINACH AND SHRIMP
A nice alternative to the traditional risotto, and much easier too! It was so easy to make with any add-in's you have on hand.

Steps:
- Melt butter in a large skillet.
- Add garlic and sauté for 2 minutes.
- Add orzo and sauté for 3 minutes, stirring occasionally.
- Add chicken broth and water, bring to a boil.
- Once at a boil reduce heat to a simmer uncovered.
- Meanwhile core, seed and dice the tomatoes and thaw and strain the spinach.
- Once the liquid in the orzo begins to absorb (about 5 minutes) add the tomatoes and stir.
- Let this simmer for another 5 minutes then add the spinach and stir.
- Cook until the liquid is fully absorbed (about another 15 minutes).
- In a separate pan sauté the shrimp and sprinkle with creole seasoning (optional, you can use whatever spice you like) until cooked.
- Add the cheeses and fresh basil, red pepper (optional) to the orzo and stir, then add in the shrimp and serve!
ORZO WITH PARMESAN AND BASIL
This is a simple recipe that everyone loves. For a quick Mediterranean macaroni and cheese, omit the basil. Easily doubled, too!

- Melt butter in heavy skillet over medium-high heat. Stir in orzo and saute until lightly browned.
- Stir in chicken stock and bring to boil. Cover. Reduce heat and simmer until orzo is tender and liquid is absorbed, about 15 - 20 minutes.
- Mix in Parmesan cheese and basil. Season with salt and pepper. Transfer to shallow bowl. Garnish with basil sprigs.

- Place the butter in a medium sauce pot over medium heat. Once melted, add the flour and whisk until well combined. Cook for 1 minute, whisking constantly.
- Add the broth and milk to the pot, whisk thoroughly to combine. Whisking frequently, bring to a simmer. Add the orzo to the pot, stir, reduce heat to medium-low and cook for about 8 minutes, stirring frequently. Mixture will thicken substantially by the end of 8 minutes.
- Add corn, basil and parmesan cheese, stir to combine and remove from heat. Season with salt and pepper to taste.
- Place the olive oil in a skillet over medium-high heat. Add the tomatoes and toss to combine in the oil. Add the vinegar to the skillet, shake and cook for about 5 minutes until blistered on all sides. Remove from heat and set aside.
