Creamy Whole Wheat Mac and Cheese image

My daughter and I love mac and cheese. It's a great side dish with dinner and a great lunch served with a crisp salad!

Number Of Ingredients 5

1 (13.25-ounce) box whole wheat elbow pasta
1 tablespoon unsalted butter
1 tablespoon all-purpose flour
3 cups unsweetened almond milk
1/2 cup grated sharp cheddar cheese

Steps:

  • Bring a large saucepan of water to a boil. Add the pasta and cook until al dente according to the package directions. Drain and set aside.
  • In the same pan, melt the butter over medium-low heat. Add the flour and mix with a wooden spoon, stirring continuously for about 5 minutes, or until you have a lightly browned paste (this is the roux).
  • Add 1 cup of the almond milk and whisk well, breaking up any lumps. Stir in the remaining 2 cups almond milk and increase the heat to medium-high. Cook, stirring continuously and occasionally scraping the bottom of the pan with the wooden spoon, until the mixture has thickened and coats the spoon with little to no transparency. Turn off the heat.
  • Stir in the pasta until it's covered in the sauce. Add the cheese and mix until it has melted and is evenly distributed.
  • Serve with a crunchy green salad.

1/2 pound whole-wheat rotini
4 tablespoons butter
1 to 2 tablespoons diced onions
2 tablespoons all-purpose flour
Pinch ground black pepper
2 cups milk
1/2 cup grated Muenster
1/2 cup grated Cheddar
1/2 cup baby spinach
2 teaspoons oil, from marinated sun-dried tomatoes
8 sun-dried tomatoes, chopped
1 1/2 cups bread crumbs (recommended: Panko)
1 tablespoon smoky paprika

Steps:

  • Preheat oven to 350 degrees F.
  • In a large pot of boiling salted water, add rotini and ook for 6 to 8 minutes until tender. Drain and set aside.
  • In a saucepan over medium-high heat, melt 2 tablespoons of butter and add the onions. Add the flour and pepper and mix until mixture is pasty and forms a roux. Whisk milk into pan incorporating the roux. Bring to a simmer over low heat and allow to thicken; about 5 minutes. Once thickened, whisk in the cheeses. Add the pasta and mix until the pasta is well coated. Fold in spinach, sun-dried tomato oil, and sun-dried tomatoes.
  • In a small saucepan, melt remaining 2 tablespoons of butter over medium heat. Once melted, turn heat off and add bread crumbs and paprika. Mix well to combine.
  • Pour rotini into a casserole dish large enough to hold the pasta. Sprinkle the top with bread crumbs and place in oven for 15 to 18 minutes or until brown and bubbling.

2 tablespoons butter
½ cup whole wheat bread crumbs
1 pinch paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain.
  • Melt 2 tablespoons butter in a saucepan over medium heat. Stir in flour to make a roux. Slowly add milk to roux, stirring constantly. Stir in Cheddar and Parmesan cheeses and cook over low heat until cheese is melted and sauce is thick, about 3 minutes. Place macaroni in large baking dish and pour sauce over macaroni. Stir well.
  • Melt 2 tablespoons butter in a skillet over medium heat. Add breadcrumbs and stir until butter is absorbed, 2 to 3 minutes. Spread over macaroni to cover. Sprinkle with paprika.
  • Bake in preheated oven until cheese sauce is hot and breadcrumbs are browned, about 30 minutes.

I love finding yummy, easy recipes that are healthy too! This is one of those. I used to enjoy the blue box mac & cheese, especially for quick meals, but this fits the bill much better - still quick and yummy, but now healthy too! I love using whole foods so this recipe calls for whole milk (I use raw). And here's the secret: Cook your pasta in the MILK instead of water. The milk makes it super creamy. The starch from the pasta thickens the milk into a sauce. Add your cheese after the pasta is finished cooking.
