LOBSTER NEWBURG
Use fresh lobster if available, but 2 (6 ounce) cans of lobster may be used instead. This recipe is rich and delicious. If you do not like spicy food, use paprika in place of cayenne pepper. Serve hot, over buttered toast slices.

- In a small bowl, whisk together egg yolks and heavy cream until well blended. Set aside. Melt butter in a saucepan over low heat. Stir in the egg yolk mixture and sherry. Cook, stirring constantly until the mixture thickens. Do not boil.
- Remove from heat, and season with salt, cayenne, and nutmeg. Add lobster. Return pan to low heat, and cook gently until heated through. Serve hot over slices of buttered toast.

CREAMY SEAFOOD NEWBURG
Steps:
- Gather the ingredients.
- Remove the shells from the shrimp. With a sharp knife, make a shallow cut down the back of a shrimp and pull the dark vein out . If the vein doesn't come out easily, scrape it out with the tip of the knife. The vein is the digestive system of the shrimp, so it should be removed. Repeat with the remaining shrimp.
- Rinse well, chop large shrimp coarsely. Leave small to medium shrimp whole, if desired. Transfer the shrimp to a large bowl.
- To the bowl with the shrimp, add the lobster, scallops, or crabmeat along with the sherry, lemon juice, and nutmeg.
- Cover the bowl and refrigerate for about 45 minutes to 1 hour.
- Melt the butter in a medium saucepan over medium-low heat.
- Add the flour and continue cooking for about 3 minutes while stirring constantly.
- Gradually whisk in about 1/4 cup of the half-and-half. Gradually add the remaining half-and-half, whisking constantly. Add the salt and continue cooking until bubbling and thickened.
- In a bowl, whisk the heavy cream with the egg yolk.
- Add to the thickened sauce while whisking constantly.
- Stir in the cheese and continue cooking until the cheese has melted.
- Add the seafood to the sauce and cook for about 10 minutes, or until the seafood is thoroughly cooked.
- Spoon the seafood Newburg over toast points , puff pastry shells, or hot cooked rice or noodles. Or serve the seafood over freshly baked biscuits.
- Sprinkle with paprika or garnish with fresh chopped parsley , as desired.

- Saute onion in oil for about 3 minutes. Stir in the flour, salt, ground pepper, tarragon, chicken broth and milk and cook until the mixture thickens, stirring constantly.
- Add the chicken pieces to the mixture. Blend in the egg yolk, then the lemon juice, sherry and bell pepper. Cook until chicken is heated through, about 5 minutes. Stir in the avocado and serve on toast! Voila!

- Heat oven to 350°F. Melt 2 tablespoons butter in large skillet over medium-high heat. Add chicken; cook and stir until browned and no longer pink in center. Reduce heat to medium; stir in flour, salt, pepper, half-and-half and sherry. Cook until mixture boils and thickens, stirring constantly.
- Stir in cooked vegetables and 2 tablespoons of the Parmesan cheese. Cook an additional 4 to 6 minutes or until thoroughly heated, stirring frequently. Spoon into ungreased 12x8-inch (2-quart) glass baking dish.

CHEESY CHICKEN CRESCENT ROLLS
Colder weather means comfort food. These stuffed crescent rolls are comfort food all the way. This dinner is super easy to make - great on a weeknight. It's a cross between chicken noodle soup and chicken dumplings. Kids are going to love this. Easy dinner on a cold day.

- 1. Cook how you like. I either put a little salt, pepper, onion and garlic powder. Then I cook in a frying pan with a little olive oil. You can also use a rotisserie chicken pulled off bone and skin removed. Remove and dice.
- 2. Mix 1/2 cup mozzarella cheese with the chicken in a bowl. Set aside.
- 3. Separate and unroll the crescent rolls.
- 4. Place chicken and cheese mixture on the large end of a separated crescent roll.
- 5. Then roll the dough to form a crescent.
- 6. Once rolled, place in a 9 x 13 dish. Continue until all rolls are completed.
- 7. Heat soup, milk and the remaining cheese in a saucepan.
- 8. When warm pour soup mix over the chicken rolls.
- 9. Bake at 350 degrees uncovered for 30 minutes or until brown and bubbly.
- 10. NOTE: You can also make this into one roll. Here are the directions: 1. Cook chicken and dice. Mix 1/2 cup mozzarella cheese with chicken in the bowl; set aside. 2. Separate and unroll the crescent rolls and place side by side in a 9x13 baking dish. Put chicken mixture at one end of roll and roll into a cake roll (like a log). 3. You can double the recipe and put both loaves in the 9x13 pan.
CHICKEN OR TURKEY POPOVERS!
This delicious recipe is a great use for Thanksgiving leftovers or just plain leftover chicken! My kids love these, and all of my friends beg me for the recipe! The crescent rolls make a more buttery popover, the hand-made dough is thicker in texture.

- Preheat oven to 400 degrees.
- For the filling mix the turkey or chicken, cheese, mushrooms, green onion, mayonnaise, Salt, and Pepper until well blended If Using Crescent Rolls: Take dough out of tube.
- Flatten each triangle as much as possible, then spoon filling into center and fold over corners.
- Now skip to step 12
- Dough: Sift together the flour, baking powder and salt, then add the oil and cut it in until mixture is like a coarse meal.
- Add the milk all at once and stir until it forms a soft ball.
- Turn the dough out on a floured board and knead lightly 20-25 times.
- Roll the dough out until it is 1/8 to 1/4 inch thick.
- Cut into 4-inch squares or rounds and place about 2 1/2 T.
- of the filling in the center of each.
- Fold each square or round over and seal (a little water to moisten helps here).
- Place on ungreased cookie sheet and bake 10 to 15 minutes, or until turnovers are light brown at the edges.
