Crispy Chicken Parmigiana Recipe

  1. eggs
  2. salt
  3. black pepper
  4. boneless skinless chicken breast halves
  5. saltine crackers
  6. vegetable oil
  7. tomato sauce
  8. dried basil
  9. garlic powder
  10. butter
  11. parmesan cheese
  12. mozzarella cheese


  1. spray a 13x9 inch baking dish with nonstick cooking spray
  2. whisk eggs , salt and pepper until blended
  3. dip chicken in egg mixture and coat with cracker crumbs
  4. heat oil in a large skillet over medium-high heat until hot
  5. add chicken
  6. cook chicken until browned on both sides , about 3 minutes per side
  7. drain
  8. arrange in a single layer in prepared baking dish
  9. preheat the oven to 350f wipe skillet with paper towels
  10. combine tomato sauce , basil and garlic powder in the skillet and mix well
  11. bring to a boil , stirring occasionally
  12. reduce heat
  13. simmer , stirring occasionally , until mixture is thickened , about 6 minutes
  14. stir in butter
  15. pour over the chicken
  16. sprinkle with the parmesan
  17. bake , covered , for 30 minutes
  18. remove the cover
  19. top each chicken breast with mozzarella
  20. bake for 10 minutes longer
