Steps:
- Drain the tofu and press gently with paper towels to remove some of the excess liquid. Place in an airtight container and freeze overnight or at least 8 hours.
- When ready to make the recipe, defrost the tofu on low heat in the microwave, stopping every few minutes to press excess liquid from the tofu with paper towels.
- Break the tofu block into 1-2" pieces or chunks. Set aside.
- In a large shallow bowl, mix together the almond milk and the apple cider vinegar.
- In a separate large shallow bowl, mix together the dry ingredients until all the spices are evenly distributed.
- Preheat your air fryer to 400 degrees F.
- Dip your tofu chunks into the almond milk mixture. Let them soak for about 1 minute.
- Then place them in the dry mixture. Pat the breading into the tofu.
- Place the tofu back into the wet mixture (but don't let it soak- this is just enough to make it wet again), then dip it into the dry mixture for a second time. (The process should be wet > dry > wet > dry)
- Place the tofu onto the parchment-lined air fryer basket.
- Brush with a bit of neutral oil and spray all sides with cooking spray.
- Air fry at 400F for 10 minutes. Flip the tofu and reapply cooking spray/oil.
- Then, cook for 6 more minutes. Serve warm.

Steps:
- If you are using the freeze/thaw method, be sure the tofu is fully thawed. (I transfer it to the refrigerator in the morning of the day I want to make it.)
- Press the tofu for 10 to 30 minutes. (Exact time will depend on how firm the tofu is.)
- Preheat the Air Fryer to 400°F or 200°C
- In a large glass mixing bowl, combine all of the "Paste" ingredients and stir to combine. If the mixture is too thin, add more nutritional yeast. If the mixture is too thick, add water in small increments.
- Break the tofu into bite-sized chunks over the bowl. As you do this, use your thumb to create craggy, rounded edges. (The pieces will hold the paste better and take on a more nugget-like shape if they're rounded and have craggy edges.)
- Lightly fold the chunks into the paste, being careful not to break the tofu too much.
- Use tongs to add the tofu to the air-fryer basket. (Avoid adding extra paste to the basket, as it could burn.) For best results, the tofu should sit in a single layer along the bottom of the basket. (See photo above.)
- Cook for 12 to 15 minutes, stopping halfway to shake the basket. Serve right away or store for later.

Steps:
- Pat the tofu dry with paper towels and do not press. Pressing often leads to dry tofu, we want crispy, juicy, flavorful tofu. Cut into 1-inch cubes.
- Add the tofu to a bowl and all the ingredients except the oil. Toss until the tofu is well coated and very little dry seasoning is left in the bottom of the bowl. Add the oil to the bowl and toss again until everything is evenly coated.
- Preheat your air fryer to 375 degrees. Add the tofu in an even layer, cooking in two batches, if needed. Cook for 15 minutes, shaking once halfway through.

- Drain the tofu, wrap it in a tea towel and set on a plate. Place a heavy pot/pan/dish on top of it and allow it to press for a couple of hours. You can do this on the kitchen counter or in the fridge.
- After you have pressed the tofu try to pat some more moisture out of it. Transfer to a freezer safe glass container, cover with a lid and freeze. You can do this step in advance and prepare a dozen blocks of tofu at once for future use if you'd like.

- Drain tofu and slice into 1’’ x 1’’ x ½’’ blocks. Lay on a few layers of paper towel and gently press with more paper towels to remove excess moisture. Place tofu blocks in a deep dish (like a storage container).
- Combine sesame oil, olive oil, soy sauce, and minced garlic. Pour over tofu, cover, and let marinate in the fridge for at least 30 minutes (the longer the better). Every once in a while, flip the container so all the tofu gets exposed to the tasty marinade.
- In a food processor or by hand, chop almonds until coarsely ground. Mix with nutritional yeast, salt, paprika, and black pepper.
- Prepare your breading station, placing the flour in one bowl, the whisked egg in another, and your almond mixture in the last, with a parchment paper-lined baking sheet at the end. Shake off excess marinade from the tofu blocks then, 1 or 2 at a time, coat each lightly in flour, then egg, then almond mix, and set on the baking sheet.
