1 tablespoon butter
1 pound skinless, boneless chicken breasts, cut into bite-size pieces
¼ cup hot sauce
4 (10 inch) flour tortillas
2 cups shredded lettuce
1 celery stalk, diced
½ cup blue cheese dressing

Steps:

  • Heat the vegetable oil and butter in a large skillet over medium-high heat. Place the chicken in the pan; cook and stir until the chicken is no longer pink in the center and the juices run clear, about 10 minutes. Remove the pan from the heat. Pour the hot sauce over the cooked chicken and toss to coat.
  • Lay out the flour tortillas and divide the chicken evenly among the tortillas. Top the chicken with lettuce, celery, and blue cheese dressing. Fold in the sides of the tortilla and roll the wrap burrito-style.

1 package (12 ounces) frozen popcorn chicken
1 package (8 ounces) shredded lettuce
2 medium tomatoes, finely chopped
1 cup shredded cheddar cheese
1/3 cup Buffalo wing sauce
4 flour tortillas (10 inches), warmed
Ranch or chipotle ranch salad dressing, optional

Steps:

  • Cook chicken according to package directions; coarsely chop chicken. In a large bowl, mix chicken, lettuce, tomatoes and cheese. Drizzle with wing sauce; toss to coat., Spoon 1-1/2 cups chicken mixture down center of each tortilla. Fold bottom of tortilla over filling; fold both sides to close. Serve immediately with salad dressing if desired.

Just as good as it looks, this crispy buffalo chicken wrap blows any I've had at a restaurant out of the water!

1 boneless, skinless chicken breast per wrap
1/4 cup shredded cheddar, monterey, or mexican blend cheese
2 tbsp ranch
1-2 tbsp buffalo/wing sauce
burrito sized tortilla
lettuce, optional

Steps:

  • 1) To prepare chicken breasts, remove/cut tendons from chicken, rinse, and cut into bite size pieces. Place in a nonstick or greased skillet on medium heat. Cook until chicken is slightly browned, or the internal temperature has reached 165 degrees. When chicken is cooked, place into a bowl. Place 1-2 tbsp buffalo sauce in the bowl with the chicken. Cover with a plate and shake to evenly coat in sauce. Place tortilla onto a plate. Place lettuce (if desired) in the center. Add chicken, cheese, ranch, and any other desired toppings. To fold tortilla: take edge closest to you and fold forward away from you. Slightly push this piece snug to the toppings. Fold in the right and left edges of the tortilla. Roll the bulk of the wrap up, or fold the last piece down to finish your wrap. To crisp the wrap, place back into skillet with a small amount of butter or oil. Brown each side as desired. Enjoy!

I finally found a way to make my chicken fingers crispy! I try not to eat fried foods but I love fried chicken and chicken fingers and chicken nuggets! Everytime I try to make 'oven fried chicken' with regular bread crumbs or corn flakes or potato chips, it always ends up soggy. Well.. I finally tried Panko and it is a Godsend! And I've found the sour cream also helps a ton! For dips I use Blue Cheese and also mixed the Buffalo sauce with some honey and it turned out great. Enjoy!

1 lb chicken tenders
1/2-1 tablespoon paprika
1/2-1 tablespoon cayenne
1 teaspoon kosher salt
12 ounces Frank's red hot sauce (Buffalo)
1/4 cup flour
1/2-1 cup sour cream
2 large eggs
8 ounces panko breadcrumbs (original)

Steps:

  • Preheat oven to 425 degrees.
  • Put Panko in a bowl or pan (something you can fit the chicken into when dipping).
  • Put the chicken into a gallon size zip lock bag.
  • Toss in the paprika, cayenne, salt and Red Hot Buffalo sauce (just enough to coat the chicken).
  • Seal the bag and smoosh the chicken around to coat evenly.
  • Add the flour to the bag.
  • Seal the bag again and shake to coat.
  • Crack eggs into bowl, and whisk.
  • Add sour cream. (start with 1/2 cup and add to make thicker).
  • Beat well to incorporate. It will be thick.
  • Grab your seasoned chicken, dish of breadcrumbs, bowl of batter, and lined sheet pan.
  • Take a piece of chicken and shake it to knock off excess flour.
  • Dip it into the batter to coat it on all sides.
  • Drop the battered chicken into the breadcrumbs and turn it over a few times to coat the chicken.
  • Place on sheet.
  • Bake for 20-25 minutes, until the breading is lightly browned. Your final cooking time will vary depending on how thick your chicken tenders are.
  • *I served with blue cheese dressing, more Buffalo sauce, and even some honey. YUMMY.

2 tablespoons bacon drippings
3 pounds skinless, boneless chicken breast halves, cut into bite size pieces
¼ cup Buffalo wing sauce
2 tablespoons butter, melted
12 (10 inch) flour tortillas
1 cup diced fresh tomato
¾ cup ranch dressing, divided

Steps:

  • Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned and crisp, 10 to 15 minutes. Drain the bacon slices on a paper towel-lined plate. Crumble when cool.
  • Drain off all but 2 tablespoons of the bacon drippings, and cook and stir the chicken breast chunks until browned, about 10 minutes. Cover the skillet and allow chicken to continue cooking until no longer pink inside and the juices run clear, about 10 more minutes. Stir in the Buffalo sauce and melted butter until chicken is thoroughly coated. Stir in the crumbled bacon. Keep the mixture warm.
  • Heat the tortillas, one at a time, in a large ungreased skillet over medium heat until they begin to form air bubbles and small brown spots.
