¾ cup butter, softened
¾ cup firmly packed brown sugar
½ cup molasses
1 egg
1 teaspoon McCormick® Pure Vanilla Extract

Steps:

  • Mix flour, ginger, cinnamon, baking soda, nutmeg and salt in large bowl. Set aside. Beat butter and brown sugar in large bowl with electric mixer on medium speed until light and fluffy. Add molasses, egg and vanilla;mix well. Gradually beat in flour mixture on low speed until well mixed. Press dough into a thick flat disk. Wrap in plastic wrap. Refrigerate 4 hours or overnight.
  • Preheat oven to 350 degrees F. Roll out dough to 1/4-inch thickness on lightly floured work surface. Cut into gingerbread men shapes with 5-inch cookie cutter. Place 1 inch apart on ungreased baking sheets.
  • Bake 8 to 10 minutes or until edges of cookies are set and just begin to brown. Cool on baking sheets 1 to 2 minutes. Remove to wire racks; cool completely. Decorate cooled cookies as desired. Store cookies in airtight container up to5 days.

½ cup margarine
½ cup sugar
½ cup molasses
1 egg yolk
2 cups sifted all-purpose flour
½ teaspoon salt
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground ginger
½ teaspoon ground nutmeg

Steps:

  • In a large bowl, cream together the margarine and sugar until smooth. Stir in molasses and egg yolk. Combine the flour, salt, baking powder, baking soda, cinnamon, cloves, ginger, and nutmeg; blend into the molasses mixture until smooth. Cover, and chill for at least one hour.
  • Preheat the oven to 350 degrees F (175 degrees C). On a lightly floured surface, roll the dough out to 1/4 inch thickness. Cut into desired shapes with cookie cutters. Place cookies 2 inches apart on ungreased cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven, until firm. Remove from cookie sheets to cool on wire racks. Frost or decorate when cool.

Steps:

  • In large bowl, mix cereal and chopped cookies. In 2-quart nonstick saucepan, melt butter. Add marshmallows; cook and stir over medium-low heat until marshmallows are completely melted. Pour over cereal mixture; mix until coated.
  • Line cookie sheet with waxed paper; spray paper with cooking spray. Spray 3 3/4-inch open gingerbread man cookie cutter with cooking spray; place on cookie sheet. Spray hands well with cooking spray. Firmly pack cereal mixture evenly into cookie cutter, filling cutter completely; push out of cutter. Repeat until all mixture is used. Let stand until set.
  • In small resealable freezer plastic bag, place baking chips and oil; seal bag. Microwave on High about 1 minute or until softened. Gently squeeze bag until mixture is smooth. Refrigerate 2 minutes or until slightly set. Cut off tiny corner of bag; squeeze bag to pipe melted chips over cookies as desired to decorate, using small dots to attach candy. When decorations are set, cut strips of fruit snack and tie around necks for scarves.

225g plain flour, plus extra for dusting
½ tsp salt
2 tsp bicarbonate of soda
1 heaped tsp ground ginger
½ tsp cinnamon
50g unsalted butter
100g soft brown sugar
100g golden syrup

Steps:

  • Heat oven to 190C/170C fan/gas 5 and line a baking tray with baking parchment. Sieve the flour, salt, bicarb, ginger and cinnamon into a large bowl. Heat the butter, sugar and syrup until dissolved. Leave the sugar mixture to cool slightly, then mix into the dry ingredients to form a dough. Chill the dough in the fridge for 30 mins.
  • On a surface lightly dusted with flour, roll out the dough to a ¼-inch thickness. Stamp out the gingerbread men shapes with a cutter, then re-roll any off-cuts and repeat. Place your gingerbread shapes on the lined trays, allowing space for them to spread. Cook for 10-15 mins, then remove from the oven and leave to cool.

1 large egg

1/2 cup granulated sugar
1/2 cup butter, softened
1/3 cup molasses

Using a metal spatula or pancake turner, place cookies 1/2 inch apart on greased cookie sheets. Reroll trimmings and continue to cut shapes. Bake 8 minutes, or until very lightly browned. I have made these since I was in high school (a long time ago). I found the recipe in a magazine, maybe Better Homes and Gardens, and tried them. They were so good. They still are. My family loves Gingerbread Men. If you don't roll these too thin and if you don't overbake them, they will be soft and wonderful. They have good flavor. One hint on the cutter--choose one that has sort of fat arms and legs and not one with spindly extremities because they will get crispy before the body is done. I like soft "gingies". Another cutter that I use is a teddy bear. Then I call them "Ginger Bears".

30 fruit-flavored ring-shaped gummy candies (from 7-oz package)
10 (2 1/2-inch) gingerbread man cookies (from 5-oz package)
1 roll Betty Crocker™ Fruit by the Foot™ chewy fruit-flavored snack (from 6-roll box)
20 pretzel sticks
1 cup white vanilla baking chips
20 red cinnamon candies
20 miniature chocolate chips
10 gingersnap cookies (from 16-oz box)
20 (3-inch) candy canes

Steps:

  • Cover work space with large sheet of waxed paper. Gently stretch 1 candy ring, and pull over top of 1 gingerbread man's head to make hat; repeat 9 times. Unroll fruit snack; cut into 5-inch pieces, separating along perforations. Wrap 1 (5-inch) piece around neck, twisting in center of each, to make scarf. Gently press to stick. Place 1 candy ring near 1 end of each pretzel stick to make ski poles.
  • Place white vanilla baking chips in small resealable freezer plastic bag. Microwave on High 45 seconds, turning bag over after 30 seconds. Squeeze bag until chips are melted and smooth (if necessary, continue microwaving, 15 seconds at a time, until smooth). Cut small tip off one corner of bag.
  • Using melted chips as glue, squeeze small dot in middle of face; attach 1 cinnamon candy to make nose. Squeeze 2 small dots above nose; attach 2 miniature chocolate chips to make eyes. Squeeze small amount to hold candy rings onto pretzels at bottom. Squeeze small amount on top of head to hold candy ring; place cinnamon candy on top. Squeeze small amount to make each hand, and attach pretzel ski poles, setting outward to fit outside skis. Drizzle over top of round gingersnap cookie, and set 2 miniature candy canes 1/2 inch apart, with hook ends standing up. Repeat for remaining ski men. Allow to set, about 30 minutes.
  • When set, microwave chips in bag to melt again, about 30 seconds or until smooth. For each ski man, squeeze small amount on top of candy cane skis; stand gingerbread man on each; allow to set, about 30 minutes.
