CROCK POT ASPARAGUS CHICKEN RECIPE
Crock Pot Asparagus Chicken Recipe is a great summer crock pot recipe that takes advantage of using summer fresh asparagus and boneless chicken breasts.

Steps:
- Place the bonesless chicken breasts into a crock pot in a single layer and season both sides with the Lawrey's Seasoned Salt and ground black pepper.
- In a mixing bowl mix the canned cream soup with the milk until combined. Add 1 1/2 cups of the shredded cheese and mix.
- Pour the soup mixture over the chicken breasts in the crock pot. Sift the chicken around so some of the soup seeps beneath the pieces of chicken.
- Arrange the fresh asparagus pieces over the top of the chicken and season with more ground pepper.
- Cover and slow cook on high for 4 hours on low or for 6 to 8 hours on high or until the chicken is cooked through in the center reaching 165 of a meat thermometer.
- Before serving sprinkle the remaining 1/2 cup of shredded cheese over the cooked chicken and allow to melt.
- Serve over cooked white rice or cooked noodles.
- Make 4 servings.

I just found this recipe at my Moms on a recipe card which I wrote out when I was around 8 I think. I remember making it for dinner and it was good however I would likely use it on noodles now instead of as a soup and add some veggies. The original recipe card said Chicken Stew (crossed out) soup. - Layer your thinly sliced potatoes in the bottom of your lightly greased casserole crock or 6-quart crock pot.
- Top with your chicken cubes
- Mix together you remaining ingredients, except for your parmesan, and pour over your potatoes.

- Butterfly the chicken breasts into even thickness fillets. Lightly grease the bottom of a 6 quart slow cooker, and lay the chicken breast fillets on the bottom of the crock pot. Sprinkle the chicken with salt and pepper to taste (if desired).
- Add the heavy cream, chicken broth, cubed butter, cream cheese, and the spices on top of the chicken.
- Cover and cook on HIGH for 2 hours or LOW for 3 hours, or until the internal temperature of the chicken reads 165 F on an instant read thermometer. Remove the chicken from the slow cooker, and set aside. Once it is cool enough to handle, use two forks to shred it.
- Mix the sauce well to combine it (make sure the cream cheese has fully melted and mixed through). Then add in 1/2 cup of the parmesan cheese and the pasta. Stir, cover and cook on HIGH for another 30 minutes, adding the shredded chicken back in after 20 minutes of the 30 minutes cook time.
- Once the pasta has reached your desired level of doneness, garnish it with the remaining parmesan cheese and fresh parsley. Serve warm.
