I love this Crock-Pot chicken recipe for two reasons: one, my family loves it and two, it is so easy to make! I got this recipe from my sister. She has two children of her own, and they love it too! It's also the best leftovers in the world -- if there are any!

4 -5 boneless chicken breasts, frozen
1 (15 1/2 ounce) can black beans
1 (15 ounce) can corn
1 (15 ounce) jar salsa, any kind
1 (8 ounce) package cream cheese

Steps:

  • Take 4-5 frozen, yes, frozen, boneless chicken breasts put into crock pot.
  • Add 1 can of black beans, drained, 1 jar of salsa, 1 can of corn drained.
  • Keep in crock pot on high for about 4-5 hours or until chicken is cooked.
  • Add 1 package of cream cheese (just throw it on top!) and let sit for about 1/2 hour.
  • All done and enjoy!

2 (15 ounce) cans corn, drained
2 (15 ounce) cans black beans

Steps:

  • Put all ingredients in crock pot.
  • Cook on low for 6-8 hours until chicken easily shreds.
  • Mix together.
  • Serve with salsa verde, shredded cheese, avocado, various mexican food toppings.
  • Use Rotel diced tomatos for a bit more spice.
  • Use reduced sodium black beans or fresh black beans to reduce sodium content.

1, 15 oz can black beans, , drained
1, 15 oz can corn, , drained
1, 16 oz jar of your favorite salsa
1 heaping tsp. chili powder
salt to taste

Steps:

  • Place frozen chicken breasts in the crockpot and pour the black beans and corn on top.
  • Stir in the chili powder and turn the crockpot on high.
  • Cook for 3 1/2 to 4 hours on High. Salt to taste. Serve with creamy mashed potatoes, noodles or rice. (See notes under Tips and Stuff for other ideas.)

You can call this soup or chili, but either way it is wonderful! This recipe is also very adaptable to your personal taste. I recommend using Bill Echols' Taco Seasoning from this website. Serve topped with shredded Cheddar cheese, a dollop of sour cream, and crushed tortilla chips, if you like. I hope you enjoy!

1 onion, chopped
1 (16 ounce) can chili beans
1 (15 ounce) can black beans
1 (15 ounce) can whole kernel corn, drained
1 (8 ounce) can tomato sauce
1 (12 fluid ounce) can or bottle beer
2 (10 ounce) cans diced tomatoes with green chilies, undrained
1 (1.25 ounce) package taco seasoning
3 whole skinless, boneless chicken breasts
1 (8 ounce) package shredded Cheddar cheese
1 (8 ounce) container sour cream
1 cup crushed tortilla chips

Steps:

  • Place the onion, chili beans, black beans, corn, tomato sauce, beer, and diced tomatoes in a slow cooker. Add taco seasoning, and stir to blend. Lay chicken breasts on top of the mixture, pressing down slightly until just covered by the other ingredients. Set slow cooker for low heat, cover, and cook for 5 hours.
  • Remove chicken breasts from the soup, and allow to cool long enough to be handled. Stir the shredded chicken back into the soup, and continue cooking for 2 hours. Serve topped with shredded Cheddar cheese, a dollop of sour cream, and crushed tortilla chips, if desired.

4 tablespoons olive oil
2 limes, juiced (I like a little more lime then the recipe calls for)
2 (16 ounce) bags frozen corn
4 minced garlic cloves
1 finely chopped red onion
2 (14 1/2 ounce) cans black beans, drained and rinsed
2 teaspoons cumin or 2 teaspoons dried chipotle powder
salt and pepper

Steps:

  • Take ingredients and split everything into two containers. Mix bag by shaking, seal, label and put in the freezer.

This Slow Cooker Black Bean and Corn Salsa Chicken is simple, tasty, and makes a perfect freezer meal. It is fresh, delicious, and full of flavor. You will love this recipe.

15 ounces black beans (1 can, drained and rinsed)
14 ounces corn (1 can. drained)
½ cup salsa
1 ounce taco seasoning packet
⅓ cup water
1 pound boneless, skinless chicken breasts

Steps:

  • If making this into a freezer meal, label a gallon-sized resealable freezer bag with the title of the recipe and how to long to cook in the slow cooker. (If you aren't making it into a freezer meal, jump ahead to step #5).
  • Dump the black beans, corn, salsa, taco seasoning, and water in the resealable bag and mix until all the ingredients are combined. Add the chicken breasts and zip the bag closed. Place in the freezer until ready to use (it will last in the freezer for up to 90 days).
  • When ready to cook, remove bag from freezer and place in fridge overnight so that it can thaw. Spray slow cooker with non-stick cooking spray and dump bag ingredients into the slow cooker. Cook on high for 4-5 hours or on low for 6-7 hours (until chicken is completely done).
  • Shred meat and serve however you want (in tacos, burritos, nachos, salads, etc). Garnish with cheese, sour cream, avocado, lettuce, tomato, and hot sauce.
  • If you aren't making this into a freezer meal, dump black beans, corn, taco seasoning, and water in crock pot and mix together until seasoning is dissolved. Place chicken breasts on top and spread salsa on chicken. Cook on high for 3-4 hours or low for 5-6 hours. Shred chicken and serve however you want (in tacos, burritos, nachos, salads, etc). Garnish with cheese, sour cream, avocado, lettuce, tomato, and hot sauce.

  • CROCKPOT DIRECTIONS: Drain the extra liquid out of the cans of rotel. Spray crockpot with a little nonstick spray. Spread 1 can of Rotel on the bottom of the crockpot. Lay chicken breasts or thighs on top of the Rotel. Sprinkle half of your taco seasoning onto the chicken.
