SLOW COOKER BABY BACK RIBS
These are the best I've had, short of the actual grilling method of course! This is a very simple recipe that I came up with a few years ago. It's not rocket science, just ribs cooked in the slow cooker and finished in the oven. This is what I do when I want ribs during the week and have to work all day. I'm eating them within a half-hour of getting home, and they turn out perfect every time!

Steps:
- Gather your ingredients.
- Trim the rack of ribs. Remove the membrane from the back of the ribs using a butter knife to wedge between the membrane and bone. If you don't remove this, the ribs will not be able to fall off the bone. Combine the rub ingredients and coat both sides of the ribs with the rub.
- Add the ribs to a 4 quart or larger crock pot insert. Place the ribs around the edge of the slow cooker, leaving an opening in the center. Pour the apple cider and liquid smoke into the opening. Place the insert in the crockpot and cook, covered on high for 4 hours or on low for 8 hours.
- Carefully remove the ribs from the crockpot when they have reached the internal temperature of 165F. Place the ribs on a parchment lined baking sheet. Set your oven to broil and place the rack in the upper (but not too high!) part of the oven.
- Brush the top of the ribs with the barbecue sauce. Place the ribs under your broiler for about 5 minutes or until the sauce has caramelized.
- Allow the ribs to rest for 5 minutes and then cut and serve. Serve with more barbecue sauce if desired.

SLOW-COOKER BARBECUE RIBS
Yes, you can cook ribs in a slow cooker! In this easy recipe, the seasoning paste transforms into a savory dipping sauce. Slather it on the ribs and pop them on the grill just before serving for a final char.

Steps:
- Whisk the tomato paste, brown sugar, vinegar, chili powder, mustard, garlic, paprika, Worcestershire, 1 1/2 tablespoons salt and 1 teaspoon pepper in the insert of a 6-quart slow cooker until smooth. Cut each rack of ribs in half and add to the slow cooker. Use your hands to rub the sauce on to the ribs. Cover with a lid and cook on low heat until tender, about 4 hours.
- Gently transfer the ribs to a baking sheet and cool for at least 20 minutes; this will help maintain the shape of the ribs as they grill. Whisk the sauce at the bottom of the slow cooker until smooth. Reserve 1/4 cup of the sauce to brush on to the ribs and save any remaining sauce to serve on the side (it will thicken as it cools).
- Preheat a grill or grill pan to medium-high heat. Lightly oil the grates. Grill the ribs, top-side down, until lightly charred in parts, 3 to 5 minutes. Flip, brush the top side of the ribs with the reserved barbecue sauce and grill until the underside of the ribs are lightly charred in parts, 3 to 5 minutes. Remove to a platter and serve immediately with the extra barbecue sauce on the side.

Steps:
- Lay out the ribs on a large baking tray.
- Season evenly with salt, pepper, garlic powder, paprika, and oregano. Rub in on all sides.
- Pour half the BBQ sauce over the ribs and brush to evenly coat all sides.
- Transfer the ribs to a large slow cooker. Position the ribs so they are standing up, with the meatier side down, and so the meat side is against the walls of the slow cooker, with the bone sides facing in.
- Cover and cook on low for 7 - 8 hours, or high for 4 hours. Check after the allotted time, you want to make sure the meat is cooked through and tender, but you do not want it to be so tender it falls off the bone. If they seem a little tough, allow to cook an additional 30 minutes, as needed.
- Remove the ribs and transfer to wire rack set over a foil-lined baking sheet.
- Paint the ribs with additional BBQ sauce, ensuring they are well-coated on both sides.
- Broil HIGH for 5-8 minutes to caramelize the sauce, making it slightly charred and bubbly.
- Remove and carefully cut between the bones to separate into individual ribs.
- Serve with additional BBQ sauce, as needed.
- Enjoy!

For slow cookers with just a heated base, follow the manufacturer's directions for layering ingredients and choosing a temperature.

- Cover the ribs and cook on low for 8 hours, until they are cooked and ultra tender. Serve immediately with the reserved sauce (I like to warm up the extra sauce for serving too).
