Moist and juicy Pineapple Chicken, made in the crock pot! Easy, healthy, and packed with fresh veggies. This Hawaiian chicken will be a family favorite!

2 pounds boneless skinless chicken thighs (or breasts) (cut into 1-inch cubes)
1 20-ounce can pineapple chunks in natural juice (not syrup)
2 tablespoons cornstarch
1/4 cup low sodium soy sauce
2 tablespoons minced garlic
1 tablespoon minced fresh ginger
2 teaspoons sesame oil
1/2 teaspoon red pepper flakes (plus additional to taste)
1/4 teaspoon black pepper
2 small red bell peppers (cored seeded and cut into 1-inch chunks)
1 5-ounce can water chestnuts
2 chopped green onions
Prepared brown rice (quinoa, or cauliflower rice)

Steps:

  • Lightly coat a 5-quart or larger slow cooker with baking spray and arrange the chicken thighs in a single layer on top. Drain the pineapple juice from the can into a large liquid measuring cup or mixing bowl. Whisk in the cornstarch. Once smooth, stir in the soy sauce, garlic, ginger, sesame oil, red pepper flakes, and black pepper. Pour over the chicken. Add the pineapple chunks and red pepper.
  • Cover the slow cooker and cook on LOW for 4-5 hours or HIGH for 1 1/2 - 2 hours, until cooked through.
  • With a slotted spoon, remove the chicken and vegetable mixture to a plate. Strain the sauce into a small saucepan. Simmer over high until it reduces by half, about 4-5 minutes, stirring very frequently. Add back to the slow cooker with the chicken mixture. Add the water chestnuts and green onion. Stir to combine. Serve hot with cauliflower rice, brown rice, or quinoa.

4 chicken thighs, trimmed
1 cup pineapple chunks
¾ cup pineapple juice
½ cup soy sauce
⅓ cup brown sugar
2 tablespoons ketchup
1 clove garlic, minced

Steps:

  • Put flour into a shallow bowl. Dredge chicken thighs in the flour to coat; tapping thighs to remove excess flour.
  • Arrange chicken thighs in the bottom of your slow cooker crock; top with pineapple chunks.
  • Whisk pineapple juice, soy sauce, brown sugar, ketchup, and garlic together in a small bowl; pour over the chicken and pineapple in the slow cooker.

2 tablespoons olive oil
2 tablespoons salted butter
2 pounds boneless skinless chicken thighs, cubed into bite-size pieces
1 green bell pepper, diced
1 red bell pepper diced
4 scallions, sliced, whites and greens divided
2/3 cup low-sodium soy sauce
2 tablespoons rice vinegar
1 tablespoon cornstarch
1 tablespoon grated fresh ginger
2 teaspoons chile paste, plus more to taste
2 cloves garlic, pressed
One 20-ounce can diced pineapple, drained and juice reserved
1/4 cup fried onions, such as French's
1/4 cup chopped peanuts
1 tablespoon sesame seeds
1 teaspoon chile-lime seasoning, such as Tajin
Cooked brown rice, for serving

Steps:

  • Place a large skillet over medium-high heat. Add the oil and butter. When the butter is melted and the oil is hot, add the chicken, bell peppers and the whites of the scallions. Cook, stirring occasionally, until the chicken is browned and cooked through, about 5 minutes.
  • Meanwhile, make the sauce. Add the soy sauce, rice vinegar, cornstarch, ginger, chile paste, garlic and 2 tablespoons of the reserved pineapple juice to a mason jar. Secure the lid and shake until mixed thoroughly, then set aside.
  • Mix together the fried onions, peanuts, sesame seeds and chile-lime seasoning in a small bowl. Set aside.
  • When the chicken has cooked through, add the drained pineapple and stir to combine. Give the sauce a final shake and add it to the skillet. Allow the sauce to come to a boil and thicken, about 1 minute.
  • Serve over the rice, garnishing with the peanut mixture and reserved scallion greens.
