1 tablespoon taco seasoning seasoning
1/4 cup water
6 burrito size flour tortillas
6 tostada shells
1 cup sour cream
2 cups shredded lettuce
1 roma tomato (diced)
1 cup shredded pepper Jack cheese
nacho cheese

Steps:

  • In a skillet or large cooking pan, cook and crumble the ground beef over medium-high heat. When it is no longer pink, stir in the taco seasoning and the water.
  • Warm up the nacho cheese sauce in the microwave and set aside.
  • Place the flour tortillas on a plate and warm in the microwave for about 20 seconds.
  • Lay one tortilla on a flat surface. Spread a couple of tablespoons of nacho cheese in the middle of the tortilla.
  • Place ½ cup of taco meat on top of the nacho cheese.
  • Next, add the tostada shell, a thin layer of sour cream, lettuce, tomato, and lastly, the shredded pepper jack cheese.
  • To fold into the actual crunchwrap, start with the bottom of the tortilla and fold the edge up to the center of the fillings. Keep doing that, folding as tight as possible, as you work your way around the tortilla.
  • Spray another skillet or cooking pan with cooking spray and heat over medium heat. Place the crunchwrap supreme, seam-side down, onto the skillet. Cook for 2-3 min., or until golden brown.
  • Flip over and cook the other side for another 2-3 min or until golden brown.
  • Cook the rest of your crunchwraps and eat immediately.

2 tablespoons Oat Cheddar, recipe follows
1/4 cup cooked brown rice
3 tablespoons Cashew Queso, recipe follows
1/4 cup warm chili
2 corn tostadas or tortillas
3 tablespoons Not-Avocado, recipe follows
1 small tomato, diced
2 tablespoons chopped fresh cilantro
2 tablespoons chopped fresh scallions
Pinch diced fresh or pickled jalapeno
Your favorite creamy dressing, salsa or mayo, for serving
1 cup rolled oats
1 cup nutritional yeast, or more as needed
1/2 cup sunflower or coconut oil
3 tablespoons ground turmeric
2 tablespoons lemon juice, or more as needed
2 tablespoons sea salt, or more as needed
1 teaspoon garlic powder
1/2 tablespoon tapioca starch
1 cup cashews, soaked in water overnight
3 cups warm water
1 cup cooked and peeled sweet potato (see Cook's Note)
1/2 cup nutritional yeast
2 teaspoons ground turmeric
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon ground black pepper
1/4 teaspoon cayenne pepper
1/2 cup sunflower oil
1/4 cup chopped fresh parsley
1 to 2 tablespoons salt
3 cloves roasted garlic
2 sprigs fresh rosemary
2 sprigs fresh sage
2 sprigs fresh tarragon
1 small onion, chopped (about 1/2 cup)
2 cups cooked garbanzo beans
1 cup fresh or frozen green peas
1/2 cup nutritional yeast
5 drops lemon oil or 2 teaspoons lemon zest

Steps:

  • Preheat a nonstick frying pan on low heat.
  • Lay the wheat tortilla on a flat surface. Spread the Oat Cheddar in a circle in the center (it doesn't have to be perfect). Place the rice on top of the Oat Cheddar, then the Cashew Queso followed by the chili. Place the 2 tostadas on top of the chili; these will separate the warm layer from the fresh layer and put the "crunch" into the crunchwrap. Layer the fresh ingredients on top of the tostadas: Not-Avocado, tomato, cilantro, scallions and jalapeno.
  • Now comes the fold. We are after a 6-sided hexagon shape. Fold one side of the wheat tortilla inward towards the center. Continue to make 5 more folds inward, working in a circle.
  • Turn up the heat to medium on the pan. Place the crunchwrap, folds-down, in the pan. (It is important to cook the folded side first to create a good seal on the crunchwrap.) Cook on each side until golden brown, about 30 seconds. Cut in half with a sharp knife, hopefully hearing a crunch. Dip in your favorite creamy dressing, salsa or mayo!
  • Bring 2 1/2 cups water to boil in a small pot. Add oats and turn down the heat to low, then simmer until the oats are tender. Pour the cooked oats into a blender along with the nutritional yeast, oil, turmeric, lemon juice, sea salt and garlic powder. Blend until the mixture is very smooth. This is the moment where things can be adjusted to taste, with more salt, nutritional yeast or lemon as you like.
  • Place the mixture back into the pot on medium heat. As the mixture is heating, whisk in the tapioca starch. Continue to cook, whisking, until the mixture thickens and reaches a sticky fondue consistency, about 10 minutes Remove from heat and let cool (it will continue to thicken). Put this cheese in sandwiches, crunchwraps or puff pastry. Boom.
  • Drain the soaked cashews of excess water. Add the cashews, most of the warm water, and the sweet potato, nutritional yeast, turmeric, oregano, garlic, pepper and cayenne to a blender. Blend on high speed until very smooth, adding more warm water if needed to reach a nacho-cheese-thick consistency. Pour on top of your favorite chips or add to a crunchwrap. Party.
  • Place the sunflower oil, parsley, salt, garlic, rosemary, sage, tarragon and onion in a blender and blend on high until a smooth herb oil is produced. Set aside.
  • Place the garbanzo beans, peas, nutritional yeast, lemon oil and herb oil in a food processor and process on high speed until what appears to be a bright green guacamole is formed. The mixture should take on a very avocado-like green color while some of the skins of the green peas will remain visible. This is fine, as it more closely resembles a roughly mashed avocado with different hues of green.
  • The end product should taste fatty, smooth and rich. Spread as a base for Not-Avocado toast, or serve with chips or in a crunchwrap. Lasts for 1 week or more in the fridge.

2 tablespoons olive oil, divided
1 pound ground beef
1 (1.25-ounce) package taco seasoning
4 (12-inch) flour tortillas
1/2 cup nacho cheese
4 tostada shells
1/2 cup sour cream
2 cups shredded lettuce
1 Roma tomato, diced
1 cup shredded Mexican blend cheese

Steps:

  • Heat 1 tablespoon olive oil in a large skillet over medium high heat. Add ground beef and cook until beef has browned, about 3-5 minutes, making sure to crumble the beef as it cooks; stir in taco seasoning. Drain excess fat; set aside. Heat tortillas according to package instructions. Heat nacho cheese according to package instructions. Working one at a time, place ground beef mixture in the center of each tortilla. Top with nacho cheese and tostada shell. Spread sour cream in an even layer over the tostada shell; top with lettuce, tomato and cheese. Repeat with remaining tortillas. Fold the edges up and over the center. Continue to work your way around the tortilla, folding as tight as possible. Heat remaining 1 tablespoon olive oil in a large skillet. Place wrap seam-side down and cook until the underside is golden brown, about 2 minutes. Flip and cook wrap on the other side, about 1-2 minutes longer. Serve immediately.

2 large garlic cloves (minced)

¼ cup water
6 burrito-size flour tortillas
6 taco-size flour tortillas
6 tostada shells
½ cup Nacho cheese sauce
1 cup sour cream
2 cups shredded lettuce
1 cup tomatoes (diced)
2 cups Mexican cheese blend (grated)
Salsa (optional)
Pico de gallo (optional)

Steps:

  • In a large skillet, cook ground beef and onions over medium-high heat until no pink remains in the meat and the onions are translucent.
  • Drain the grease from the pan.
  • Add garlic, taco seasoning, and water and cook for 4-5 minutes or until the liquid has almost evaporated.
  • Heat tortillas in the microwave for 10-20 seconds to make more pliable.
  • Heat nacho cheese sauce according to the jar's directions.
  • Lay a burrito-size flour tortilla on a clean work surface.
  • Layer with taco meat, and then nacho cheese.

A warm, crispy, copycat Taco Bell crunchwrap supreme that's WAY tastier than what you'll get at the drive-thru! How to make a crunchwrap supreme at home in under an hour.

½ cup chopped onion
1 lb ground meat ((beef, turkey, chicken))
2 tsp taco seasoning
8 large flour tortillas ((10-inch, burrito size))
¼ cup nacho cheese sauce
4 corn tostada shells
½ cup sour cream
2 cups shredded lettuce
1 cup chopped tomatoes
1 cup shredded cheese ((cheddar, Mexican blend, Monterey jack, or a mix!))
cooking spray

Steps:

  • Heat oil in a skillet over medium-high heat and cook onion for 3-4 minutes, until softened.
  • Add ground meat and cook through. I recommend browning larger chunks at first, then gradually breaking into ground crumbles. Season to taste with taco seasoning.
  • Once cooked, set aside.
  • Place a tostada on top of a large tortilla. Use a sharp knife to cut around the tostada, so you end up with a smaller tortilla that's the same size as the tostada.
  • Repeat 3 additional times, so you end up with 4 small tortilla rounds and 4 intact large tortillas (for 4 crunchwraps total).
  • (Save tortilla scraps to make mini quesadillas or baked bunuelos chips!)
  • To assemble each crunchwrap, lay a large tortilla flat and spread about 1 Tbsp of nacho cheese sauce onto the center of it. (Spread the sauce in a circle that's about the size of a tostada, then stack your fillings on top. Make sure there is still enough of a border around the tortilla to fold in the edges!)
  • Add a scoop of meat mixture (about 3-4oz or ¼ of the mixture) on top of the nacho cheese.
  • Spread sour cream on a tostada, then place the tostada on top of the meat.
  • Top with shredded lettuce, tomato, and shredded cheese. (The cheese should be close to the top so it will melt when cooked!)
  • Place a small tortilla round on top of the cheese, then fold the edges of the large tortilla inward toward the center.
  • After folding up one edge, press the side of the tortilla down flat, fold it in to the middle, and create "pleats" that will hold when pressed on the griddle. Press, fold, and pleat until crunchwrap is assembled.
  • Rest prepared crunchwraps with the seam-side down to ensure they stay together while assembling the others.
  • Repeat assembly process with remaining crunchwraps.
  • Preheat a griddle to 350°F (180°C) or a skillet over medium-high heat.
  • Spray the wrap lightly with cooking spray or add a little oil to the pan.
  • Add each crunchwrap to the griddle-seam-side down-pressing with a spatula to seal and flatten. (Do your best to make sure they're relatively flat and touching the griddle!)
  • Cook 3-5 minutes on each side, until golden brown.

  • In 10-inch nonstick skillet, cook beef over medium-high heat 6 to 7 minutes, breaking up and stirring, until thoroughly cooked; drain. Stir in taco seasoning mix and water; heat to boiling. Reduce heat; simmer uncovered 3 to 4 minutes, stirring frequently, until thickened.
  • Break crunchy taco shells in half, and place one on top of each tortilla, with straight sides in the middle, forming a circle on top of the meat. Top each taco shell with 2 tablespoons creamy queso sauce, 2 tablespoons sour cream, 1/4 cup lettuce and 2 tablespoons tomatoes.
  • Cut remaining flour tortilla into 4 equal wedges. Place wedge in center of each crunchwrap to cover fillings. Fold top of bottom tortilla up and over filling toward center. Continue folding the rest of the tortilla, making pleats in tortilla while working around (making 7 or 8 pleats). Flip crunchwrap over, to maintain fold, and repeat with remaining tortillas.
