CHERRY CRISP
A truly incredible dessert! It's just soooo good and really easy to make. Everyone always raves about it and asks me for the recipe when I make it. Wonderful served with whipped topping or ice cream. Great for vegans!

Steps:
- Preheat oven to 350 degrees F (175 degrees C.) Lightly grease a 2 quart baking dish. Pour pie filling into the dish, and spread evenly.
- In a medium bowl, mix together flour, oats, sugar, cinnamon, and nutmeg. Mix in melted margarine. Spread over pie filling, and sprinkle with chopped pecans.
- Bake in the preheated oven for 30 minutes, or until topping is golden brown. Allow to cool 15 minutes before serving.

CHERRY CHIP COOKIES I
A chip cookie with a difference! Light, crispy and eggless, these cookies are a great after-school treat with a cold mug of milk.

Steps:
- Preheat oven to 300 degrees F (150 degrees C).
- Combine margarine, confectioner's sugar and vanilla. Beat until fluffy. Add flour, baking soda and oats. Mix well. Stir in cherry flavored chips (other flavors work well, too!).
- Drop by rounded teaspoonful onto ungreased cookie sheets and flatten slightly with fingers. Bake for 12 minutes. Remove immediately from cookie sheets and onto wire racks to cool.

- Heat the oven to 350 degrees. Lightly spray an 8 or 9-inch square baking dish with non-stick spray. Cut a strip of parchment paper so that it will fit inside the pan on two sides and come up and over the sides of the pan on the other two sides. Spray the parchment paper lightly wtih non-stick spray. Cut a second piece of parchment paper the same size as the first and fit it perpendicular to the first so that you have parchment paper coming up and over the sides of the pan on all four sides. - Beat the softened butter and sugar with an electric mixer until lightened in color and fluffy in texture, about 3 minutes. Beat in the vanilla.
- Press the shortbread into the baking dish, pressing it into the corners and across the base of the pan in an even layer. Bake for 35 minutes. Remove the pan from the oven and let cool slightly while you prepare the crumb topping.
