1/2 cup butter, softened
1/2 cup butter-flavored shortening
1 cup sugar
1 egg
1 tablespoon milk
2 teaspoons lemon extract
1 teaspoon vanilla extract
2-1/2 cups all-purpose flour
3/4 teaspoon salt
1/2 teaspoon baking soda
Additional sugar

Steps:

  • In a large bowl, cream butter, shortening and sugar until light and fluffy. Beat in egg, milk and extracts. Combine the flour, salt and baking soda; gradually add to creamed mixture. , Shape into 1-in. balls or drop by rounded teaspoonfuls 2 in. apart onto ungreased baking sheets. Flatten with a glass dipped in sugar. , Bake at 400° for 9-11 minutes or until edges are lightly browned. Immediately remove to wire racks to cool.

500grams boneless, skinless chicken
1 egg
1/2 teaspoon of salt
1/2 teaspoon of pepper
1 tablespoon vegetable oil
85g plain flour
2 tablespoons corn flour
oil (for frying) + 1 tablespoon sesame oil
1/2 teaspoon minced garlic
1/2 teaspoon grated lemon rind
80ml fresh lemon juice
1 spring onion chopped
2 lemon segments
1/2 tablespoon corn flour
60ml hoi sin sauce with five spice (Sharwoods)
Dash cayenne pepper
2 tablespoons sugar
Salt and Pepper to taste

Steps:

  • Cut your chicken into 2 inch pieces and put them into a large bowl.
  • Add in the egg, salt, pepper and oil. Mix it well and set aside.
  • In another large bowl, stir in the corn flour and plain flour plus one teaspoon of salt and pepper
  • And mix it well set aside.
  • Add the chicken into the flour mix and coat each piece generously.
  • Pour about a 1/2 inch of oil plus the sesame oil into a Wok and set it over high heat.
  • When the temperature is 375 degrees,
  • Carefully put some chicken pieces in small batches and fry for 4 minutes
  • Carefully remove the chicken from the oil with a slotted spoon and drain it on paper towels,
  • Finish frying the chicken until they're all done.
  • Set aside keep warm and put together your glaze in the next step.
  • Method Glaze:
  • Let your oil cool slightly in the wok
  • Remove all but 2 tablespoons of oil and put it over medium heat.
  • Saute the minced garlic for a minute, being careful not to burn it
  • Add the rest of the ingredients in and bring the mixture to a boil.
  • Add 1/2 tablespoon corn flour mixed with a little cold water
  • Make sure to stir this for 3 minutes
  • Reduce the heat and simmer it until a saucy thick glaze is created.
  • Pour the glaze over the chicken and serve!
  • Scatter the Spring onion and lemon segments

Instant-read thermometer
1 lemon (washed)
4 to 8 bone-in, skin-on chicken thighs*
Salt and pepper
Ground thyme
1 tablespoon olive oil

Steps:

  • Preheat oven to 425°F.
  • Slice half of the lemon into thin slices and set slices and remaining uncut half aside.
  • Pat chicken thighs dry and sprinkle both sides with salt, pepper, and a light dusting (about 1/4 teaspoon total) of thyme.
  • In a large oven-safe skillet, heat oil over medium-high heat. Once hot, swirl oil around the pan so that it is completely coated. Place thighs in the skillet skin-side down, and cook until well-browned and crispy, about 4-6 minutes.
  • Remove from heat and flip chicken thighs. Nestle lemon slices in the pan between the chicken pieces and squeeze juice from remaining lemon half over the chicken.
  • Bake for 15 to 20 minutes (longer for very large thighs), until an instant-read thermometer inserted into the center of the thighs reads 165°F.

1/4 cup chopped flat leaf parsley
1 garlic clove, minced
zest and juice one lemon
salt & pepper
4 4-oz boneless, skinless chicken breasts
1 cup whole wheat panko crumbs
3 TBS parmesan cheese
1/2 tsp paprika
olive oil or cooking spray
1 large cucumber, finely diced
12 radishes, finely diced

Steps:

  • preheat oven to 450 degrees. Fit a wire rack into a rimmed baking sheet. In a bowl, mix yogurt, parsely, garlic, lemon zest and juice and a pinch of salt & pepper. Transfer half to a dish, add chicken and coat. Set aside remaining yogurt mixture. Combine panko, parmesan and paprika. Dredge chicken in this mixture and transfer to rack in baking sheet. Mist chicken with cooking spray and sprinkle with salt & pepper. Bake chicken until golden brown and cooked through, about 15 minutes. Stir cucumber and radishes into reserved yogurt mixture and serve with chicken.

1 cup butter, room temperature
1 cup sugar (preferably natural cane)
2 1/4 cups sifted all-purpose flour
1/4 cup sour cream
3/4 teaspoon baking soda
1 teaspoon lemon extract
1 cup powdered sugar
1 1/2 tablespoons lemon juice
zest from 1/2 lemon

Steps:

  • Preheat oven to 350 degrees.
  • Cream the butter and sugar until smooth.
  • Add the flour, sour cream, baking soda and lemon extract and blend until smooth.
  • Divide dough in half and place each half on a piece of wax paper. Roll each section into a 2 inch log and freeze until firm.
  • Remove 1 log at a time, slice dough into 1/8 inch slices.
  • Place on ungreased cookie sheet. Bake until edges are golden brown.
  • Remove from oven, cool for 1 minute, remove from pan and cool on rack.
  • Drizzle with icing if desired.
  • For Lemon Icing: Mix all ingredients until smooth. Drizzle over cookies. Let icing dry before storing.
