An easy crustless salmon quiche ready in 30 minutes is a great low carb lunch for Spring.

2 shallots (chopped)
1 tablespoon olive oil
1 cup spinach (defrosted)
3.5 oz salmon (cooked)
2 tablespoons dill (chopped)
1 teaspoon garlic powder
8 medium eggs
1/2 cup cream (heavy)
1/4 cup Parmesan (shredded)
1/2 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Preheat the oven to 180C/350F degrees.
  • Heat the olive oil in a large saucepan and cook the onions for 3-4 minutes until they are soft.
  • Add the spinach, salmon, dill and garlic powder. Gently mix and remove from the heat.
  • In a medium bowl, beat the eggs with the cream and the Parmesan cheese.
  • Season with the salt and pepper.
  • Spoon the salmon spinach mixture into 6 4 inch quiche cases (or one large 8 inch tin).
  • Pour the egg mixture over the filling
  • Bake for 20-30 minutes until firm.
  • Enjoy warm or cold.

2 tablespoons olive oil
8 ounces sliced button mushrooms
2 cloves garlic, minced
2 teaspoons chopped fresh thyme
Kosher salt and freshly ground black pepper
1 store-bought pie crust
One 10-ounce box frozen chopped spinach, thawed, drained and pressed to remove any water
6 ounces Gruyere, grated
1 1/2 cups half-and-half
8 large eggs

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat the oil in a large skillet over medium heat. When the oil is hot, add the mushrooms, garlic and thyme. Cook, stirring occasionally, until the mushrooms have browned, 5 to 6 minutes. Season with a pinch of salt and pepper. Remove the skillet from the heat.
  • Press the pie crust into a deep, 9-inch tart pan with a removeable bottom (or a deep-dish pie pan). Layer the mushrooms and spinach into the crust and top with the cheese.
  • Whisk together the half-and-half, eggs and a good pinch of salt and pepper in a large bowl. Pour the egg mixture into the crust.
  • Place the pan on a rimmed baking sheet. Lightly cover the pan with aluminum foil and bake for 45 minutes. Remove the foil and continue baking until the quiche is set and the crust is golden brown, another 10 to 15 minutes. Let the quiche sit for 10 to 15 minutes, then remove from the pan, slice and serve.

This crustless salmon quiche can fit into almost any healthy diet, but is especially great for those on a low-carb or gluten-free eating plan as well as those following a low-sodium diet.

5.5 oz. raw wild or sustainably farmed salmon fillets (yields approximately 4 oz. or 3/4 cup flaked cooked salmon)
2 tbsp extra virgin olive oil
1 leek, white and light green part only, halved and sliced thin (1/2 cup sliced)
1 cup frozen chopped spinach, no salt added
2 cups white button mushrooms, sliced
1/2 tsp salt
5 large eggs
1 cup whole milk
2 tbsp chopped fresh dill
Lemon zest (to taste)

Steps:

  • Preheat oven to 375F.
  • Place salmon fillets on a parchment-lined baking sheet. Drizzle with half the olive oil and bake at 375F for 10-15 minutes depending on the thickness of the fillets. Alternatively, you can also poach the salmon .
  • Meanwhile, add the rest of the olive oil to a large non-stick skillet and turn heat to medium.
  • Add the sliced leek and stir to distribute evenly in the pan for 1 minute until softened.
  • Add the spinach and mushrooms. Season with salt and stir to combine. Sauté on medium/medium-low for about 5 to 8 minutes until vegetables are tender and any liquid released from the vegetables has evaporated from the pan.
  • Once the vegetables are cooked, remove from heat and set aside to cool for a few minutes. When the salmon is fully cooked, remove from the oven and let cool before flaking with a fork.
  • Meanwhile, in a bowl, blend the eggs and milk together with a whisk or blender. Season with a pinch of salt.
  • Spray a pie plate or quiche dish with cooking spray such as avocado oil spray or olive oil spray. When the vegetables are cooled to room temperature or slightly warm (but not hot), stir in the flaked salmon and transfer the mixture to the pie plate, spreading out into an even layer.
  • Pour the egg mixture over the rest of the ingredients and sprinkle the top with the fresh dill.
  • Bake for 45 minutes or until the top starts to turn golden brown and the center is cooked. Start checking after 30 minutes-if it's getting too brown but the middle is still runny, cover with aluminum foil and continue to bake. The center can still be a little bit loose when it's done because it will finish cooking as it sits once you take it out of the oven.
  • Once out of the oven, garnish the quiche with grated lemon zest before serving.

1 cup chopped green pepper

1-1/4 cups egg substitute
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry

1 cup chopped onion
1 cup sliced fresh mushrooms
1 tablespoon vegetable oil
1 package (10 ounces) frozen chopped spinach, thawed and well drained

4 ounces smoked gouda cheese, cut into 4 pieces
1 10-ounce package frozen spinach, thawed and squeezed dry
2 large eggs plus 2 egg whites
1 15-ounce container part-skim ricotta cheese
2 tablespoons all-purpose flour
1/2 teaspoon freshly grated nutmeg
6 to 8 scallions, chopped
1 tablespoon grated parmesan cheese
1 teaspoon paprika
2 heads endive, sliced lengthwise
2 tablespoons chopped walnuts

Steps:

  • Position a rack in the upper third of the oven, place a baking sheet on the rack and preheat to 450 degrees F. Lightly grease a 9-inch round or 8-inch square baking dish with olive oil.
  • Pulse the gouda in a food processor until finely chopped. Add the spinach, whole eggs and egg whites, ricotta, flour and nutmeg and process until well combined, about 30 seconds. Add the scallions and pulse to mix.
  • Pour the mixture into the prepared dish and sprinkle with the parmesan and paprika. Place the quiche on the preheated baking sheet and bake until the center is just set, 25 to 30 minutes.
  • Drizzle the endive and walnuts lightly with olive oil and toss. Serve the quiche hot or at room temperature with the endive.

  • Mist a large nonstick skillet with more nonstick cooking spray and put over medium heat. Add the turkey bacon and cook turning frequently until crisp, about 8 minutes. Transfer to a cutting board and coarsely chop.

  • Meanwhile, whisk the eggs, egg whites, milk, and salt and pepper until well combined. Stir in the cheese. Divide the egg mixture evenly between the muffin tins, filling them about halfway. Top evenly with the mushroom and spinach mixture and then the chopped bacon.
  • Bake until the quiches are well risen, golden brown and set, 20 to 25 minutes. Cool in the pan 5 minutes and then transfer to a wire rack. Serve warm or at room temperature with greens.
