CRISPY GARLIC BREADCRUMB CHICKEN



Crispy Garlic Breadcrumb Chicken image

While not identical to a pan-fried, breaded cutlet, if you want to eat tender, flavorful chicken with lots of crispy, crunchy bits, then this significantly less-messy method is for you. One of the keys to this technique is to use panko breadcrumbs, which are much larger and more jagged than regular, fine breadcrumbs. This method also allows us to introduce some additional flavor, and moisture, thanks to the 'glue' we use to attach the crumbs.

2 large skinless, boneless chicken breasts
salt and freshly ground black pepper to taste
cayenne pepper to taste
1 tablespoon olive oil
3 tablespoons unsalted butter
½ cup panko bread crumbs
3 cloves garlic, finely crushed
1 tablespoon finely chopped Italian parsley
2 tablespoons grated Parmigiano-Reggiano cheese
1 tablespoon mayonnaise
1 teaspoon balsamic vinegar
1 ½ teaspoons Dijon mustard
¼ cup chicken broth
⅓ cup chicken broth
1 lemon, juiced
1 teaspoon balsamic vinegar
salt and freshly ground black pepper to taste

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Season chicken breasts on both sides with salt, black pepper, and cayenne.
  • Heat olive oil in an oven-safe skillet over high heat. Add chicken breasts. Sear, untouched, until bottoms release from the pan, about 2 minutes. Flip and cook for 2 minutes more.
  • Reduce heat to medium-low. Add butter and let melt. Add panko bread crumbs. Cook and stir until breadcrumbs start to turn golden, 2 to 3 minutes. Stir in garlic and cook until fragrant, about 1 minute. Turn off heat and add parsley and Parmigiano-Reggiano. Set breading aside.
  • Combine mayonnaise, balsamic vinegar, and Dijon mustard in a small bowl. Spread 'glue' over the top and sides of the chicken breasts. Spoon over the the breadcrumb mixture. Use a spatula to transfer chicken breasts back to the skillet. Pour chicken broth around the chicken.
  • Bake in the preheated oven until no longer pink in the center, 10 to 12 minutes. An instant-read thermometer inserted into the chicken should read at least 165 degrees F (74 degrees C). Transfer chicken to a plate and let rest while you make the pan sauce.
  • Pour chicken broth and lemon juice into the pan. Bring to a boil over high heat and add balsamic vinegar. Boil until sauce is reduced, about 2 minutes. Strain sauce and spoon around chicken.

4 boneless skinless chicken breasts
1/4 cup butter, melted
1 can (18 oz) Progresso™ Recipe Starters™ creamy Parmesan basil cooking sauce
1/4 teaspoon garlic powder
2/3 cup Progresso® Italian style panko crispy bread crumbs
2/3 cup finely shredded Parmesan or Asiago cheese
Hot cooked pasta or mashed potatoes, if desired
Garnishes, If Desired:
Additional shredded Parmesan or Asiago cheese
Chopped fresh basil or parsley

Steps:

  • 1. Heat oven to 400 degrees F. Line cookie sheet with foil; spray with cooking spray. Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until about 1/2 inch thick. Sprinkle chicken with salt and pepper to taste.
  • 2. In shallow dish, mix butter, 3 tablespoons of the cooking sauce and the garlic powder. In another shallow dish, mix bread crumbs and cheese. Dip chicken into butter mixture, then dip into bread crumb mixture to coat. Place on cookie sheet.
  • 3. Bake 12 to 15 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (at least 165 degrees F) and coating is golden brown. Meanwhile, heat remaining sauce until hot. Serve chicken with pasta and sauce. Sprinkle with additional cheese and basil.

1 ½ cups panko bread crumbs
3 (5 ounce) boneless, skinless chicken breast halves, cut into 1-inch pieces
¼ cup honey
¼ cup soy sauce
3 cloves garlic, minced
1 tablespoon Sriracha sauce

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
  • Place beaten egg in a shallow dish and season with salt and pepper. Place bread crumbs in another shallow dish.
  • Dunk each piece of chicken in the beaten egg mixture, then coat well with bread crumbs. Transfer breaded chicken on the prepared baking sheet and repeat the process with remaining chicken.
  • Bake in the preheated oven until golden and no longer pink in the centers, about 20 minutes.
  • While the chicken is baking, combine honey, soy sauce, garlic, and Sriracha in a small saucepan over medium heat; bring to a boil. Reduce to heat and simmer for 3 to 4 minutes, stirring every so often.
  • Remove cooked chicken from the oven and transfer to a shallow dish. Pour the sauce over top and toss until all chicken pieces are well coated.

I'm able to conquer phyllo dough! My family did their part and were good guinea pigs. The first recipe was too dry, the second time around too salty, but the third time was a charm!

1 1/2 cups cooked chicken, cubed
1 1/4 cups drained frozen spinach
1 (10 1/2 ounce) can low-fat cream of chicken soup (98% fat free)
1/3 cup parmesan cheese
1/3 cup water
1 teaspoon basil (divided)
1/8 teaspoon nutmeg
1 egg, slightly beaten
3/4 cup melted butter
1 -2 garlic clove, finely minced
1 (16 ounce) package phyllo dough

Steps:

  • Spray skillet with non-stick cooking spray, set heat to medium-low, add the first eight ingredients, as listed (1/2 teaspoon of the basil), stirring after each addition.
  • Heat throughly, turn off heat and add egg stirring to mix,set aside.
  • Melt butter, garlic and the other 1/2 teaspoon basil in microwave safe measuring cup.
  • Spray 9"glass pie plate with non-stick spray.
  • Follow instructions for phyllo dough on box about keeping sheets moist.
  • Using pastry brush dab the melted butter mixture onto phyllo dough one sheet at a time, fold sheet long ways in thirds and place spoke-fashion in pie plate, letting extra drape over side,repeat six (6) times.
  • Take (4) more sheets dab with the butter mixture and fold into thirds and starting in the center make a cross letting extra drape over.
  • Add the chicken spinach mixture into the center,gently lift the shorter pieces of dough and pat down, then lift the 4 longer pieces of dough and bring to center folding back leaving a 2-3" square opening.
  • With a 3"sheet of phyllo dough fold in half,at one end fold making a triangle, gently fold around,forming a rose, press or pinch bottom, place in center of square, make three (3).
  • Pour left over butter over roses and phyllo dough.
  • Bake at 350 degrees.

450 g chicken meat, skinned and cut into chunks
175 g mushrooms, sliced
25 g plain flour
300 ml chicken stock
5 tablespoons low fat creme fraiche
2 teaspoons coarse grain mustard
1 teaspoon dried tarragon
5 slices bread
1 clove garlic, peeled and crushed
margarine or butter

Steps:

  • Melt most of the margarine or butter, add the chicken and cook until lightly browned.
  • Add the mushrooms and cook for a few more minutes, then stir in the flour and cook for another few minutes.
  • Gradually add the chicken stock and bring to the boil, stirring all the time.
  • Add the crème fraîche, wholegrain mustard and dried tarragon.
  • Heat through, season and place in an oven-proof dish.
  • Spread the bread lightly with a mixture of the remaining margarine or butter and garlic.
  • Cut into triangles and arrange on top of the chicken mixture.
  • Cook at 180C or 350F for about 30 minutes until crisp and browned.
