This sweet take on the green smoothie trend makes it easy to enjoy vegetables. Just blend them into this frosty mix with melon, mint and honey!

Number Of Ingredients 6

1.5 cup coarsely chopped fresh cauliflower
1.5 cup 1-inch cubes honeydew melon
0.5 of a medium cucumber, cut into 1-inch pieces (1 1/4 cups)
0.5 cup lightly packed fresh mint leaves
0.25 cup honey
0.75 cup ice cubes

Steps:

  • In a small saucepan cook cauliflower, uncovered, in enough boiling water to cover for 10 to 12 minutes or until very tender. Drain and rinse with cold water to cool quickly.
  • In a blender combine cauliflower, melon, cucumber, mint, and honey. Cover and blend until very smooth, stopping and scraping sides of blender as needed. Add ice cubes. Cover and blend until smooth.
  • Pour into tall glasses and serve immediately.

The ancient Greeks rubbed mint leaves on the dining tables to greet guests, mint tea is offered to guests in the Middle East and many cultures boil the leaves to freshen the air. This is also the recipe to say goodbye - to stomach problems - mint has a soothing effect on the digestive tract, relieving symptoms of indigestion, cucumber too is high in fibre, also good for digestive health and pineapple contains a digesting enzyme that is unique to pineapples, Bromelain. Bromelain is know to be good for brain health, also, when you are cooking one of our delicious meat recipes, the meat can be tenderized with pineapple because the Bromelain breaks down the meat proteins. Cucumbers are cool too, they are mainly water, 95% in fact, making them ideal for hydration. Cucumbers contain polyphenols called lignans which are considered helpful in lowering the risk of breast, ovarian and prostate cancers. Be prepared to be bowled over by this smoothie!

100 g cucumbers, roughly chopped
1 tablespoon chia seeds
15 ml maple syrup
50 g pineapple, cut into chunks
1 cup mint leaf
62 1/2 ml yoghurt

Steps:

  • Puree cucumber, yoghurt, mint leaves, and maple syrup in a blender. Cut the fresh Pineapple in half, cut the pineapple into chunks and use the halves as bowls.
  • Transfer to the pineapple bowl, add chia seeds, and chill for about an hour.
  • Top with fresh pineapple chunks.
