2 cups all-purpose flour
1 cup white sugar
2 ½ teaspoons baking powder
½ teaspoon salt
3 tablespoons butter, melted
.66 cup milk
1 teaspoon vanilla extract
1 egg, beaten
2 cups raspberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9 inch baking dish.
  • In a large bowl combine flour, sugar, baking powder and salt. Stir in butter, milk, vanilla and egg until smooth. Fold in raspberries. Pour into prepared pan.
  • Bake in preheated oven 35 to 40 minutes, until top is firm.

1/2 cup each frozen unsweetened strawberries, raspberries and blackberries, thawed
2 tablespoons plus 1-1/2 teaspoons sugar, divided
1-1/2 teaspoons cornstarch
1/8 teaspoon ground cinnamon
1/2 cup all-purpose flour
1/2 teaspoon baking powder
1/8 teaspoon salt
4-1/2 teaspoons cold butter
3 tablespoons 2% milk
Whipped cream or ice cream, optional

Steps:

  • In a small bowl, combine berries and 2 tablespoons sugar; let stand for 30 minutes. Drain berries, reserving juice. If necessary, add water to the juice to measure 1/2 cup. In a small saucepan, combine cornstarch and juice. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Stir in berries and cinnamon. Pour into a 3-cup baking dish coated with cooking spray., In a small bowl, combine the flour, baking powder, salt and remaining sugar. Cut in butter until mixture resembles coarse crumbs. Stir in milk just until moistened. Drop dough in four mounds onto hot fruit mixture. Bake at 375° for 15-20 minutes or until biscuits are golden brown. Serve with whipped cream or ice cream if desired.

1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons lemon juice
1 cup all-purpose flour
1 1/4 cups sugar, divided
1 teaspoon baking powder
1/2 cup milk
3 tablespoons butter, melted
1 tablespoon cornstarch
1 cup boiling water

Steps:

  • Preheat oven to 350 degrees F.
  • Combine berries, cinnamon, and lemon juice in a 9 by 13-inch baking pan.
  • Combine flour, 3/4 cup sugar, and baking powder in medium mixing bowl and stir. Add milk and butter while stirring. Pour mixture over berries until covered.
  • Combine cornstarch and 1/2 cup sugar in small mixing bowl and stir. Sprinkle mixture over batter.
  • Remove boiling water from heat and slowly pour over entire pan. Place baking pan into oven and bake for 45 to 50 minutes or until crust is golden brown. Remove from oven, allow to cool slightly, and serve warm.

⅔ cup cold unsalted butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread the nectarine and plum pieces into the bottom of a 13x9-inch baking dish. Sprinkle the raspberries over the fruit. One of my favorite movies is "Steele Magnolias". In the movie Truvy talked about her Cupa, Cupa, Cupa recipe. My mother made this for us all the time when I was growing up with either fresh peaches or frozen ones she "put up" in the summer. So simple, yet so good. You can use your favorite fruit, or you can make it using undrained fruit cocktail, omitting the milk.

1 (21 ounce) can fruit pie filling

Steps:

  • Preheat the oven to 375 degrees.
  • Place the stick of butter in a 9X13 baking dish, and pop in the oven until the butter is melted.
  • Stir together the milk, flour, sugar and baking powder.
  • Pour mixture into the hot pan.
  • Spoon the pie filling into the pan.
  • DO NOT STIR!
  • Bake for 40 minutes until the crust is brown.
  • Delicious served warm with a dollop of whipped cream or a scoop of vanilla ice cream.

2006-08-06 Melt butter. Add sugar, milk and flour. Mix until ingredients are combined (lumpy is good). Pour mixture into a baking dish and add sliced peaches. Fight the urge to mix the peaches with the batter - you don't need to mix it!! Bake at 375 for 30-40 minutes, or until bubbly and brown. Serve with ice cream if desired.
