½ teaspoon olive oil
2 small ripe bananas, quartered
1 shallot, quartered
1 clove garlic, halved
¼ cup chopped sweet onion (such as Vidalia®)
1 ¾ teaspoons curry powder, or to taste
¾ cup low-sodium chicken broth
1 tablespoon rice vinegar
1 ½ teaspoons honey
1 pinch salt

Steps:

  • Heat the olive oil in a skillet over medium heat. Stir in the bananas, shallot, garlic, and onion. Cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in curry powder and cook until fragrant, about 30 seconds. Pour in the chicken chicken broth and simmer for about 5 minutes, stirring occasionally.
  • Pour the curry mixture, rice vinegar, honey, and salt into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the curry moving before leaving it on to puree. Puree in batches until smooth and pour into a clean pot. Alternately, you can use a stick blender and puree the curry right in the cooking pot.

2 tablespoons coconut oil (divided)
4 ripe bananas (cut into ½-inch pieces)
1 medium onion (chopped)
4 cloves garlic (chopped)
2 inch piece of ginger (chopped)
15 ounce can coconut milk
2 tablespoons curry powder
1 teaspoon sea salt
4 cups chopped cauliflower
1 medium sweet potato (chopped)
19 ounce can chickpeas
Cilantro (to serve)

Steps:

  • Heat 1 tablespoon of the coconut oil over medium-high heat in a large, nonstick pan. Add the bananas, cut sides facing down. Cook for 2-3 minutes, or until they are well browned. Flip them over and cook for another 2-3 minutes. Remove them from the pan.
  • Add the remaining tablespoon of coconut oil, the onion, garlic, and ginger to the pan. Cook until the onion is translucent, about 3 minutes.
  • Transfer the onion mix to your blender. Add ½ cup of the cooked bananas, the coconut milk, curry powder, and salt and blend on high speed until smooth.
  • Pour the sauce into a large pot over medium-high heat. Add the cauliflower, sweet potato, and chickpeas and bring the curry to a boil. Reduce the heat and simmer, uncovered, until the vegetables are tender, about 15 minutes. Stir the remaining caramelized bananas into the sauce then serve with cilantro sprinkled on top.

Banana curry recipe (Kele ki sabzi) - A quick 5 min curry recipe of ripped banana stir-fried in few Indian spices.

Ripe Banana: 2 big piece
Oil: 2 tsp
Cumin seeds: 1 tsp
Turmeric powder: 1/2 tsp
Coriander powder: 1 1/2 tsp
Red chili powder: 1 tsp
Water: 2 tbsp
Salt: 1/2 tsp

Steps:

  • Peel and cut the ripe bananas in 1 cm thick pieces.
  • Heat oil in a frying pan / skillet.
  • Once the oil is hot add cumin seeds and let them crackles.
  • Now add banana pieces and mix it well.
  • Add dry spices like turmeric powder, red chili powder, coriander powder and salt as per your taste.
  • Mix well the spices and banana.
  • Add few tbsp of water in sabzi and mix.
  • Let the banana curry get cooked for 5 minutes.
  • Delicious Banana curry or kele ki sabzi is ready. Serve this sabzi hot with phulka roti or jeera paratha.

I don't recall where I got this recipe. It is a favorite in my home plus I make it for my consumers (at work) with very ripe bananas and no sugar so it's okay for the diabetics. All the amounts are varied depending on what you have and what you want. Use green bananas for a more savory side dish. Or use greener bananas and more brown sugar for a sweet treat. Very ripe bananas don't need much cooking nor much brown sugar. This is good as a side dish, over ice cream, on pancakes, under whipped cream, with basmati rice, let your imagination wander....enjoy! You could even vary the size of banana pieces to suit your recipe.

2 -4 tablespoons brown sugar, depending, see description
1 tablespoon curry powder (to taste)

Steps:

  • In heavy skillet, such as cast iron, melt butter over medium to medium high heat.
  • Add bananas cut or broken into 2" pieces.
  • Cook 2 to 4 minutes.
  • Carefully turn.
  • Sprinkle with brown sugar and curry powder.
  • Cook 2 to 4 minutes.
