Steps:
- Put the dandelions in a pan and cover in water. Simmer in water until flavour has been infused in the water. Press down on the dandelion to squeeze the flavour out.
- Remove the pan from the heat and let cool. Once cooled strain through a muslin or fine sieve, into a jug, squashing the dandelion to get all the flavouring.
- Add 350g of sugar to every 500ml of 500ml of liquid, then add citric acid, keep stirring until sugar is dissolved. spoon of any floating debris.
- Pour into sterilized jars and store. When you drink it dilute with water.
DANDELION WINE
This very old recipe utilizes the bane of homeowners: the dandelion! I found this in 1993 when a flood left our front yard full of beautiful, very large dandelions. The blossoms CANNOT have been sprayed with any pesticides, and should be thoroughly rinsed.

- Place dandelion blossoms in the boiling water, and allow to stand for 4 minutes. Remove and discard the blossoms, and let the water cool to 90 degrees F (32 degrees C).
- Stir in the yeast, sugar, orange slices, and lemon slice; pour into a plastic fermentor, and attach a fermentation lock. Let the wine ferment in a cool area until the bubbles stop, 10 to 14 days. Siphon the wine off of the lees, and strain through cheesecloth before bottling in quart-sized, sterilized canning jars with lids and rings. Age the wine at least a week for best flavor.

DANDELION & BURDOCK CORDIAL RECIPE

Steps:
- Put the dandelion, burdock, ginger and star anise in a pot with the water. Gently simmer for about 30 minutes. Remove the solid ingredients with a cheesecloth lined mesh strainer. Mi the sugar into the hot water and stir until it is dissolved. Allow syrup to cool. Keep refrigerated.
- If you want to make a soda with the syrup you can add four parts soda water to one part syrup.
- To make a sorbet add still water in a four to one ratio. Add one ounce of vodka and an egg yolk. Freeze mixture overnight. Remove from freezer, quickly pulse in blender for about 30 seconds. Return to freezer for another 12 hours. Serve.

- Using a vegetable peeler, remove zest from lemon, and cut into matchstick-size strips. Reserve lemon for another use.
- Bring water and blossoms to a boil in a medium saucepan. Reduce heat to medium, and simmer for 3 minutes. Remove from heat, cover, and let stand for 10 minutes. Strain through a fine sieve, pressing solids. Discard blossoms.
- Add sugar. Stir to dissolve, returning to pan and warming over low heat if necessary. Add lemon zest and vodka. Pour into a resealable jar, and seal tightly.
- Serve cold, stirring well just before pouring.
