- Preheat oven to 375°. In a large skillet, cook and stir spinach and garlic in oil just until wilted. Drain. Stir in 1 tablespoon Parmesan cheese, salt and pepper., Pound chicken breasts with a meat mallet to 1/4-in. thickness. Spread each with 1 tablespoon spinach mixture. Fold chicken in half, enclosing filling; secure with toothpicks., Place bread crumbs and egg in separate shallow bowls. Dip chicken in egg, then roll in crumbs to coat. Place seam side down in an 8-in. square baking dish coated with cooking spray. Bake, uncovered, 20 minutes., Meanwhile, in a large bowl, combine tomato sauce, basil and oregano. Pour over chicken. Sprinkle with mozzarella cheese and remaining Parmesan cheese. Bake, uncovered, 10-15 minutes longer or until a thermometer reads 165°. Discard toothpicks before serving.

SPINACH CHICKEN PARMESAN
I adopted this recipe from Recipezzar. It used to be called just Chicken Parmesan, but most other dishes with that name on here are tomato based and I wanted to make clear that this one isn't. I have also changed the amounts of some of the ingredients as I felt they just weren't quite balanced. This can easily be doubled .

Steps:
- In a small mixing bowl combine half of the cheese and Italain seasoning.
- Roll chicken pieces in cheese mixture to coat lightly.
- ARRANGE pieces in an small baking dish.
- In a small saucepan cook onion in hot margarine till tender.
- Stir in flour; add milk all at once.
- Cook and stir till bubbly; stir in drained spinach, garlic and pimiento olives if using, season to taste with salt, pepper and nutmeg.
- Spoon spinach mixture over chicken; sprinkle with remaining parmesan.
- Bake, uncovered, in a 350F oven for 30 to 40 minutes or till chicken is fully cooked.

- Preheat oven to 350 degrees F (175 degrees C).
- In a small bowl combine cheese and seasoning. Roll chicken pieces in cheese mixture to coat lightly. Set remaining cheese mixture aside. Arrange coated chicken pieces in an 8x8x2 inch baking dish.
- In a small saucepan, saute green onion in butter/margarine until tender. Stir in flour, then add milk all at once. Simmer, stirring, until bubbly. Stir in drained spinach and pimiento and mix together. Spoon spinach mixture over chicken and sprinkle with remaining cheese mixture. Steps:
- Season chicken with salt.
- Cut a pocket into each chicken breast.
- Stuff the pockets evenly with the mozzarella cheese.
- Press the edges of the chicken together to seal the pocket.
- Separate the flour, eggs, and bread crumbs into 3 separate bowls.
- Being careful to keep the chicken from opening, dip the stuffed chicken in the flour, shaking off the excess.
- Dip the floured chicken into the egg, then the bread crumbs, coating it evenly.
- Heat the oil in a large pan over medium heat. Preheat oven to 180°C.
- Fry the chicken until golden brown on both sides.
- Place ⅔ of the tomato sauce evenly on the bottom of a baking dish. Place the chicken on top.
- Top with the rest of the tomato sauce, then sprinkle the parmesan and basil on top.
- Bake for 20 minutes.

SPINACH AND FETA STUFFED CHICKEN BREASTS
Like a spinach pie stuffed into chicken breasts! These chicken breasts are very easy to make but nice enough for company. Super easy, but lots of flavor.

Steps:
- Combine spinach, bacon, feta cheese, cottage cheese, chopped onion, one teaspoon lemon juice, parmesan cheese and the egg and mix well.
- Make a small slice in the side of the chicken breast and stuff with the spinach mixture.
- Saute the chicken breasts in the butter until lightly browned on each side.
- Sprinkle with the remaining teaspoon of lemon juice, salt and pepper, and whatever other spices you would like.
- I usually sprinkle a little of this and that, a little onion powder and a little cayenne pepper.
- Bake in the oven at 350 degrees for 25 minutes.

- Preheat oven to 350 degrees.
- Place Chicken breasts in a 9x13 baker, and season with Garlic Salt and Powder to taste (You can also season with salt and pepper to taste).
- Mix Sour Cream, Cream of Mushroom Soup, 1/4 C Parmesan Cheese and Frozen spinach together, pour over chicken.
- Sprinkle remaining Parmesan cheese on top of chicken.

- Cut a pocket into the side of the chicken breast.
- Season chicken with salt and pepper.
- Stack the two cheeses and spinach on top of the ham and roll up tightly.
- Stuff the chicken with the roll and press the edges of the chicken together to create a seal.
- Place the flour, eggs, and bread crumbs into 3 separate bowls.
- Being careful to keep the chicken from opening, dip the stuffed chicken in the flour, shaking off the excess. Then dip the floured chicken into the egg, then breadcrumbs, then egg and breadcrumbs again. Coat evenly and shake off any excess breading.
- Heat oil in a cast iron pan over medium heat and preheat oven to 375ºF (190°C).
- Fry the chicken until golden brown on both sides.
- Once the chicken is fried, place into a baking dish and bake for 20 minutes, or until the internal temperature of the chicken reaches a minimum of 165ºF (75ºC).

This is an old recipe. I have no clue where it originated from, but we have been making it for years. It is a no-fail recipe--great for company or just a quiet meal alone. Complete the meal with a salad and warm crusty bread.

- Preheat oven 350°F.
- In large bowl mix stuffing mix with water.
- In large skillet melt butter over med heat.
- Add onion, garlic, sage and rosemary.
- Sauté about 2 minute.
- Add spinach.

- Remove from heat.
- Add cream.

- Pre-heat oven to 350 degrees.
- Rough cut the spinach and put it in a medium sized pot with a cup of water. Put the stove on medium high and bring water to a boil. When the water begins to boil remove pot from stove and drain spinach.
- Slice scallions into tiny pieces. Then quarter the mushrooms. Add these to the spinach.
- When spinach has cooled add the shredded parmesan cheese, garlic powder and oregano. Stir these together.
- Butterfly the chicken and stuff the spinach and parmesan inside. Place in baking pan.
- Combine cream of chicken soup with milk and heat it up (you can use the same pot as you used for the stuffing) until the soup has thoroughly dissolved into the milk, then pour it over the stuffed chicken.
- Cover the pan with foil and bake at 350 degrees for 20 minutes or until done.
