DOUBLE CHOCOLATE CHIP MACADAMIA COOKIES
We love chocolate chip cookies at our house, and these are especially good!! I use a 1 inch scoop to form the cookies.

- Preheat the oven to 375 degrees F (190 degrees C). Sift together the flour, baking soda and salt; set aside.
- In a medium bowl, cream together the butter, brown sugar and white sugar until smooth. Beat in the eggs one at a time then stir in the vanilla. Gradually blend in the sifted ingredients. Mix in the white chocolate and semisweet chocolate chips and macadamia nuts. Drop by rounded tablespoonfuls onto ungreased cookie sheets.
- Bake for 8 to 10 minutes in the preheated oven, or until golden brown. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

DARK CHOCOLATE REESE'S PIECES COOKIES
My favorite candy growing up, and maybe still today, is Reese's Pieces. Since I no longer go trick-or-treating, I decided to get my candy fix from dark chocolate cookies studded with the peanut butter filled candy pieces. I use special dark cocoa powder (a Dutch-processed cocoa) for intense chocolate flavor, and brown sugar to ensure the perfect chewy cookie.

- Position an oven rack in the center of the oven and preheat to 350 degrees F. Line a baking sheet with parchment paper.
- Whisk the warm butter and chopped chocolate together in a medium bowl until smooth. Set aside.
- Whisk the flour, cocoa powder, baking soda, baking powder and salt together in another medium bowl.
- Combine the brown sugar, granulated sugar and butter-chocolate mixture in a stand mixer fitted with the paddle attachment. Beat on medium speed until combined, 1 to 2 minutes. (It will look like it's separating but will come together once you add the eggs.) Beat in the eggs one at a time, beating well after each addition. Beat in the vanilla. Continue beating until the mixture is combined and creamy, 1 to 2 minutes. Slowly add in the flour mixture on low speed and mix until you no longer see any flour bits, about 1 minute. Stir in the 1 1/2 cups Reese's Pieces by hand.
- Using a 1 1/2-tablespoon ice cream scoop, scoop the batter onto the prepared baking sheet, leaving 2 inches between cookies; the baking sheet should hold about 8 cookies. Dot each cookie with 2 to 3 of the remaining Reese's Pieces. Bake on the middle rack until puffed and set in the middle, about 10 minutes. Let cool slightly on the baking sheet before transferring the cookies to a cooling rack to cool completely. Repeat with the remaining dough.

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease 2 large cookie sheets with vegetable shortening.
- Cream the butter and sugars together in a large bowl. Beat in the egg and vanilla extract until well blended. Sift together the flour, baking soda, and salt; gradually blend into the batter. Stir in the chopped macadamia nuts and chocolate chips. Drop by rounded teaspoonfuls onto the cookie sheets, about 2 inches apart.
- Bake in preheated oven for 10 to 12 minutes, or until the cookies are golden brown. Remove from the oven, and transfer the cookies to cooling racks.

- Preheat oven to 350 degrees with racks in upper and lower thirds. In a large bowl, using an electric mixer, beat butter and sugar on medium-high until light and fluffy, 2 minutes. Add egg yolk, lemon zest and juice, and salt and beat until combined; beat in nuts. With mixer on low, add flour and beat just until combined, 2 minutes. Form dough into a 4 1/2-inch-long log, wrap in plastic, and freeze until firm, 30 minutes. Cut into 1/4-inch slices, transfer to 2 parchment-lined baking sheets, and freeze 5 minutes. Bake until golden at edges, 14 minutes, rotating sheets halfway through. Let cookies cool completely on wire racks.
- Microwave chocolate in 30-second increments, stirring after each, until melted. Dip half of each cookie into chocolate; transfer to parchment-lined baking sheets. Chill until set, 10 minutes.

- Line a baking sheet with parchment paper and set aside. Grate the cold butter using a medium shrewd cheese grater. Keep refrigerated until ready to use.
- In a separate bowl, beat the grated butter with the sugars for 1 minute. Add the beaten eggs and vanilla extract and beat until they combine together. Add the dry ingredients a little at a time and mix with a hand mixer until just incorporated. Mixture will appear lumpy. Fold in chocolate chips and nuts. Chill the dough for 30 minutes before baking. Can be chilled overnight as well. To form cookies, use a large scoop and place the mounds on the parchment lined baking tray. Do not work the dough too much or strive for perfection. They should have nooks and crannies.
- Bake for 18-20 minutes in a preheated 375 degree oven. Take them out when the bottom are light golden brown.
