- 1 Heat about 4 inches of oil in a deep fryer or suitable pot to 375 degrees F. 2 Wrap the scallops in paper towels to thoroughly dry. 3 Wrap bacon around the scallops and hold in-place with toothpicks. 4 Dust scallops in cracker meal, then dredge through egg whites and finally coat with Panko. Set Aside. 5 Deep Fry scallops, a few at a time to prevent over crowding, to a golden brown. 6 Serve with tartar sauce.

- Cut bacon strips in half.
- Wrap a piece of bacon around each scallop; secure with toothpick.
- Arrange the wrapped scallops on a baking sheet.
- Broil 5 inches from heat for 3 minutes per side, or until bacon is crisp.
- In small skillet, melt butter; add garlic and saute 1 minute,.
- Add broth and bring to a boil.
- Cook 2 minutes.
- Place scallops in large bowl; pour broth over, Gently toss to coat.

Steps:
- Preheat oven to 425 degrees.
- If you prefer, the bacon can be pre-cooked for a couple of minutes in the microwave to insure it will be crispy by the time the scallops are done.
- Do not overcook the scallops as they will be rubbery.
- Cut each piece of bacon in half to make 24 pieces.
- Roll a piece of bacon around each scallop and secure on wooden skewers.
- Place scallops on a rimmed baking sheet.
- Sprinkle with Old Bay and creole seasoning.
- Both seasonings contain salt, so don't overdo it!
- Amounts listed are what I used.
- Bake at 425 degrees for 15-18 minutes, or until the scallops are done.
- The bacon should be crispy.
- While the scallops are cooking, combine the ketchup, brown sugar and vinegar in a saucepan to make the dipping sauce.
- Mix well and cook until the sugar is dissolved.
- Serve the scallops with the dipping sauce.

- Arrange bacon in a large skillet and cook over medium-high heat, turning occasionally, until lightly browned but still pliable, about 5 minutes. Drain the bacon slices on paper towels.

- Preheat your oven to 425°F. Place the toothpicks/skewers in a bowl and pour boiling hot water over them and let them soak while you prepare the scallops.
- Pat the scallops dry with a paper towel.
- Place the bacon on a microwave-safe plate and cook for 3-4 minutes, until the fat starts to render and cook out. This will help make the bacon crisp by the time you are done baking them in the oven. IF you want very crispy bacon, precook it a lot!
- Wrap a scallop in a slice of bacon around the edges then secure with a toothpick. Repeat with remaining scallops.,
- Arrange the scallops in a single layer on a large baking sheet with space between each one.
- Combine the garlic butter sauce and brush/drizzle over all of the scallops on the baking sheet, making sure that each scallop has minced garlic on top.
- Bake 15-17 minutes until the scallops are 125/130°, are tender and opaque and the bacon is cooked through. Serve hot.

- The amount of scallops depends on their size, and of course, how much you want to eat!
- Scallops (no shell) with their roe if you can get them, as the nice orange colour of the roe looks good and more important it tastes good!
- Streaky bacon is best because of the fat in it. You want about 3 or 4 rashers each.
- Fry the bacon in a pan over a moderate heat until nice and brown and only just starting to get crispy.
- With the bacon still in the pan, add the scallops and move them about in the pan to get them nicley coated with all the pan juices. They will only take a couple of minutes to cook.
- It's as simple as that! Serve immediately.
