2 cups raspberries
2 tablespoons sugar
1 teaspoon finely minced fresh basil
1 teaspoon lime juice
1/4 cup rum
1 1/2 cups sugar
8 egg whites
1 store-bought angel food cake

Steps:

  • For the raspberry sauce: Combine the raspberries and sugar in a small saucepan. Bring to a simmer over medium heat and cook for 15 minutes. Add the basil and lime juice and allow the sauce to cool in the fridge.
  • For the meringue: Combine 1/2 cup water and the rum in a medium saucepan over high heat and bring to a simmer. Slowly stir in 1 cup of the sugar to combine, and use a pastry brush dipped in water to remove any sugar crystals from the side of the pot. Insert a candy thermometer into the mixture.
  • In the bowl of a stand mixer using a whisk attachment, beat the egg whites on medium speed until foamy. Slowly stream in the remaining 1/2 cup sugar and beat to soft peaks.
  • When the sugar syrup reaches the soft-ball stage (238 degrees F), remove from the heat. Increase the mixer speed to medium high and slowly stream the sugar syrup into the egg whites in the space between the beaters and the side of the bowl with the mixer running. Continue to beat until the meringue forms soft, glossy peaks.
  • To assemble the cake: Place the angel food cake onto a cake stand or plate. Pour the raspberry sauce into the center hole. Spread the meringue evenly all over the sides and top of the cake, covering the hole at the top. Use your spatula to create peaks along the tops and sides if desired. Use a kitchen torch to toast the meringue all over before serving.

1 ¾ cups white sugar
¼ teaspoon salt
1 ½ cups egg whites
1 teaspoon cream of tartar
½ teaspoon vanilla extract
½ teaspoon almond extract

Steps:

  • Beat egg whites until they form stiff peaks, and then add cream of tartar, vanilla extract, and almond extract.
  • Sift together flour, sugar, and salt. Repeat five times.
  • Gently combine the egg whites with the dry ingredients, and then pour into an ungreased 10 inch tube pan.
  • Place cake pan in a cold oven. Turn the oven on; set it to 325 degrees F (165 degrees C). Cook for about one hour, or until cake is golden brown.
  • Invert cake, and allow it to cool in the pan. When thoroughly cooled, remove from pan.

1 1/2 teaspoons cream of tartar
1 cup granulated sugar

Steps:

  • Move oven rack to lowest position. Heat oven to 375°F.
  • Mix powdered sugar and flour; set aside. Beat egg whites and cream of tartar in large bowl with electric mixer on medium speed until foamy. Beat in granulated sugar, 2 tablespoons at a time, on high speed, adding vanilla, almond extract and salt with the last addition of sugar. Continue beating until stiff and glossy meringue forms. Do not underbeat.
  • Sprinkle sugar-flour mixture, 1/4 cup at a time, over meringue, folding in just until sugar-flour mixture disappears. Push batter into ungreased angel food cake pan (tube pan), 10x4 inches. Cut gently through batter with metal spatula.
  • Bake 30 to 35 minutes or until cracks feel dry and top springs back when touched lightly. Immediately turn pan upside down onto heatproof funnel or bottle. Let hang about 2 hours or until cake is completely cool. Loosen side of cake with knife or long, metal spatula; remove from pan.

About 12 large eggs
1 1/2 cups powdered sugar
1 cup cake flour or all-purpose flour
1 1/2 teaspoons cream of tartar
1 cup granulated sugar
1 1/2 teaspoons vanilla
1/2 teaspoon almond extract
1/4 teaspoon salt

Steps:

  • About 30 minutes before making the cake, place an egg separator over a small bowl. Crack each egg over the egg separator to separate the whites from the yolk. (save the yolks for another recipe.) Transfer egg whites to a 2-cup measuring cup until there are 1 1/2 cups of egg whites.
  • Place the egg whites in a clean large bowl, and let stand at room temperature up to 30 minutes.*
  • Move the oven rack to the lowest position; remove other oven rack. Heat the oven to 375°F. In a medium bowl, mix the powdered sugar and flour; set aside.
  • Add the cream of tartar to the egg whites; beat with an electric mixer on medium speed until mixture looks foamy. On high speed, beat in the granulated sugar, 2 tablespoons at a time; add the vanilla, almond extract and salt with the last addition of sugar. Continue beating until meringue is stiff and glossy. Do not underbeat.
  • Sprinkle the powdered sugar-flour mixture, 1/4 cup at a time, over the meringue; to fold in, use a rubber spatula to cut down vertically through the batter, then slide the spatula across the bottom of the bowl and up the side just until sugar-flour mixture disappears. When all sugar-flour mixture has been folded in, spoon the batter into an ungreased 10x4-inch angel food (tube) cake pan. Using a metal spatula or knife, gently cut through the batter, spreading batter gently against side of pan and tube, to break large air pockets.
  • Bake 30 to 35 minutes or until cracks in cake feel dry and top springs back when touched lightly. Immediately turn pan upside down onto a heatproof funnel or bottle. Let cake hang about 2 hours or until completely cool.
  • Remove pan from funnel. Loosen the cake by running a knife or long metal spatula between the cake and side of pan. Place a serving plate upside down on pan; turn plate and pan over together and remove pan. (If pan has a removable bottom, remove side of pan, then carefully run a knife or long metal spatula between cake and pan bottom. Carefully remove bottom.) To cut cake, use a long serrated knife in a sawing motion, or use an electric knife.

Every year for my birthday, my Gran would ask me "What kind of cake would you like me to bake you?", even though she knew what the answer would be: "ANGEL FOOD CAKE, PLEASE!!!!" You'll never buy angel food cake again, once you use this recipe. Rather than granular sugar for the entire recipe, confectioner's sugar is used. The cornstarch in the powdered sugar stabilizes the whites, making for a much lighter and dreamy angel food cake. Light as a feather, creamy-tasting, and NOT rubbery like store-bought versions, this is my "go-to" cake recipe for ALL special occasions. :)

1 1/2 cups confectioners' sugar (made from cane sugar)
1 1/2 cups egg whites (10-12 egg whites, room temperature)

1 cup granulated sugar
1 1/2 teaspoons vanilla extract
1/2-1 teaspoon almond extract

Steps:

  • .Heat oven to 375 degrees.
  • Stir together cake flour and confectioner's sugar; set aside.
  • In a large mixer bowl, beat egg whites, cream of tartar, and salt until foamy.
  • Add the granular sugar, 2 tablespoons at a time, beating at high speed until the meringue holds stiff peaks. (This takes up to 10 minutes.).
  • Gently fold in the extracts by hand.
  • Sprinkle the flour-confectioner's sugar mixture, 1/4 cup at a time, over the meringue, folding it in gently just until flour-sugar mixture disappears. DO NOT OVER-MIX OR CAKE WILL BECOME TOUGH!
  • Push batter into ungreased tube pan, turning it several times to fill pan evenly. Gently cut through the batter with a knife to remove air bubbles.
  • Bake 30-35 minutes or until the top springs back when touched lightly with finger.
  • Remove from oven and immediately invert the tube over weighted glass bottle; let hang upside down until cake is completely cool (about 2 hours.).
  • To remove cooled cake from tube pan, loosen first by moving table knife up and down against side of pan. Next, turn the pan over and hit one side; the cake will slip out onto the platter.

Additionally, superfine sugar, sifted cake flour and perfectly whipped egg whites are key components that set you up for success -- and set this cake apart from the rest.

1 1/3 cups superfine sugar
1 1/2 teaspoons cream of tartar
1/4 teaspoon fine salt
12 large egg whites, at room temperature (see Cook's Note)
2 teaspoons pure vanilla extract
1 1/4 cups bleached cake flour (not self-rising), such as Swan's Down, sifted (177 grams) (see Cook's Note)
Berries and whipped cream, for serving

Steps:

  • Preheat the oven to 325 degrees F. Whisk the sugar, cream of tartar and salt together in a medium bowl.
  • Add the egg whites and 2 tablespoons water to the bowl of a stand mixer fitted with the whip attachment. Beat on low speed until the whites are foamy, 1 to 2 minutes. Increase the speed to medium and slowly sprinkle in the sugar mixture (this should take about 3 minutes). Watching closely, continue beating until medium-soft peaks form, 5 to 7 minutes longer. (You want the mixture to droop when lifted out of the bowl. If the peaks stand straight up, you have taken it too far and the cake will sink during baking). Add the vanilla and mix until just combined.
  • Remove the mixing bowl from the stand and working in three additions, very gently fold the flour into the egg whites until just incorporated. Spoon the batter into an ungreased 10-inch footed angel food cake pan and smooth the top.
  • Bake until the top is golden and springs back when touched and a cake tester inserted into the middle comes out clean, 40 to 45 minutes. Remove from the oven and place the cake upside-down on a wire rack to cool completely in the pan, about 3 hours.
  • Run a knife or a small offset spatula around the edges of the pan and gently tap it on the counter until it releases from the pan. Use a sharp serrated knife to slice the cake -- a regular knife will smash it. Serve with berries and whipped cream.

1 ⅛ cups white sugar
1 ½ cups egg whites
1 ¼ teaspoons cream of tartar
¾ teaspoon salt
1 teaspoon vanilla extract
½ teaspoon lemon extract

Steps:

  • Preheat the oven to 330 degrees F (165 degrees C).
  • In a large glass or metal bowl, whip egg whites with cream of tartar and salt until soft peaks form. Gradually sprinkle in the sugar while continuing to whip to medium peaks. Since this is a high-altitude recipe, whip them only until they form a peak that falls over. Stir in the vanilla and lemon extracts. Use a rubber spatula to fold in flour a fourth at a time. Spoon into a clean and dry 9 inch tube pan.
  • Bake for 25 minutes in the preheated oven, then increase the temperature to 375 degrees F (190 degrees C). Continue baking for another 3 minutes, or until the cake begins to shrink down a bit. Invert pan over a wire rack to cool. When cool, run a thin spatula or knife around the outer edge, and tap out firmly.

  • Beat egg whites (at room temperature) and salt until foamy on high speed in electric mixer.
  • Add cream of tartar; beat until soft peaks form.
