Using a SUGAR-FREE Pillsbury Yellow cake mix I made this recipe for my fellow diabetics. It is moist, tasty, and very easy! Enjoy and let me know if you have any suggestions or comments on this recipe for improvments...I'm new at this...

1 box yellow, sugar-free cake mix
2 tsp ground cinnamon
1/2 tsp allspice, ground
1 tsp imitation banana flavoring
1/2 c water
1/2 c vegetable oil
3 large eggs
4 medium mashed or quartered very ripe bananas
3/4 c chopped coarsely chopped walnuts
GLAZE (OPTIONAL)
1 c powdered sugar
2 to 3 tsp skim milk
1/2 tsp almond extract
1/4 tsp imitation banana flavoring

Steps:

  • 1. Preheat oven to 350 degrees F. Coat Bundt pan with BAKERS JOY cooking spray or grease and flour Bundt pan very well. BEAT- ALL ingredients (EXCEPT bananas and walnuts)In large mixing bowl with an electric mixer on medium setting for 2 minutes, scraping bowl occasionally. Beat in bananas. Stir in walnuts. Spread in prepred Bundt pan. ***(PREPARE GLAZE: while cake is baking). BAKE: About 40 minutes or until toothpick inserted in cake comes out clean. COOL: 30 to 45 minutes on cooling rack.
  • 2. INVERT: Cake on to cake plate while slightly warm. TOP: Cake with glaze OR dust with powdered sugar and cover with cake taker top. SERVE... ENJOY!
  • 3. GLAZE: Mix all glaze ingredients together until smooth and medium to thin consistancy. Add additional skim milk if needed to make glaze pourable. Pour slowly over cake filing center of cake with any extra glaze. Spoon this glaze several times back over cake. Top with a few walnuts if desired. OR OPTION: Dust cake lightly with powdered sugar.

2/3 cup mashed bananas
1/2 cup butter, softened
3 large eggs, room temperature
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
3/4 cup water
1 cup chopped walnuts

Steps:

  • In bowl, beat bananas and butter until creamy. Add eggs and beat well. Combine flour, baking powder, baking soda and cinnamon; add to banana mixture alternately with water, beating well after each addition. Stir in nuts. Spoon into a greased 9-in. square baking pan. Bake at 350° for 30 minutes or until cake tests done. Cool.

This one I have made using a DEVIL'S-FOOD, SUGAR-FREE cake mix and I think it is really good especially if you are watching your sugar and...

1 box sugar free -devil's food cake mix
1 box (4-1/2 serving) fat free/sugar free chocolate fudge pudding mix (dry)
1 tsp ground cinnamon
1/2 c skim milk
1/4 c water
1/3 c vegetable or canola oil
2 large eggs
2 large egg whites
1 c nonfat plain yogurt
3/4 c roasted almonds, chopped (optional)
*** CAKE GLAZE *** OPTIONAL
1 & 1/2 c powdered sugar
2 to 3 tsp skim milk
1 to 2 tsp almond extract
1/2 tsp ground cinnamon
1/4 c roasted almond slivers
YOU MAY WANT TO OMIT GLAZE AND
1/4 c dust lightly with powdered sugar/cinnamon mixture
1/2 tsp ground cinnamon

Steps:

  • 1. 1.) Preheat oven to 325 degrees F. 2.) Coat Bundt pan with BAKERS JOY cooking spray. 3.) In large mixing bowl, beat all ingredients together until well blended. (Mixture will be thick) 4.) Pour batter to prepared pan. 5.) Bake approx. 35 minutes or until inserted toothpick comes out clean. (DO NOT overbake). *** Meanwhile, make CAKE GLAZE *** (OPTIONAL) (see recipe below). 6.) Cool cake about 10-15 minutes on cooling rack. 7.) Invert on to serving plate. 8.) Cool and drizzle with glaze, if desired. (OR dust with powdered sugar/cinnamon mixture). 9.) Top with roasted almond slivers. 10.) Cover cooled cake with cake taker ...enjoy! *Refrigerate leftovers (covered).
  • 2. *** GLAZE *** (OPTIONAL) 1.) In small bowl, mix all ingredients,(except roasted almonds) until smooth. OR DUST: Lightly with powdered sugar/cinnamon mixture (to save some calories and carbs!)

  • 3. Add eggs & vanilla, beat well
  • 4. Sift together flour, baking powder, baking soda, & sea salt
  • 5. Add to creamed mixture alternately with sour cream
  • 6. Fold in the mashed bananas
  • 7. Spray a 13X9 baking pan with Pam
  • 8. Pour the batter into the pan
  • 9. Bake at 350 40 to 45 minutes or until done
