SUGAR FREE GERMAN CHOCOLATE CAKE



Sugar Free German Chocolate Cake image

Make the perfect dessert that they will probably love to eat! This is the recipe for how to make Sugar Free German Chocolate Cake.

2 1/2 cups Flour (Please use cake flour.)
1 tsp Baking Soda
1 tsp Salt
1 cup Butter (softened to room temperature)
2 cups Splenda (Please use a granular sugar alternative that measures 1:1 with sugar in volume for best results)
4 ounces Unsweetened Baking Chocolate (chopped)
25 tsp Water (1/2 cup plus 1 tsp)
1 tsp Vanilla Extract
5 Eggs (Seperated)
1 cup Buttermilk (see post for alternatives)

Steps:

  • Start by prepping your cake pans well for nonstick (I use two methods for this- parchment paper cut to size and grease or spray over it) and preheat your oven to 325.
  • Sift or whisk together the flour, baking soda and salt. Set this bowl aside.
  • Next, we will melt together the unsweetened chocolate with the water. You can do this in a microwave (stopping to stir every 30 seconds until melted) or over a low heat on the stove (stirring continuously).
  • In a mixing bowl, cream together the sugar alternative the butter. Set the mixer on low and add the egg yolks, one at a time, mixing between additions. Then add the vanilla extract to the bowl. Next we will add the cooled melted chocolate mixture and the flour mixture adding half of each at a time, alternating additions, and mixing between additions. (ie. 1/2 chocolate, mix, 1/2 flour, mix, repeat). Then you can add the buttermilk and mix gently.
  • For the next step, we will need clean mixer beaters and a new mixing bowl. Using a hand mixer is one way to get around having to find an additional bowl to fit your stand mixer. This is where we will beat the egg whites until they form stiff peaks. Then, folks these stiff peaked egg whites into the bowl with the cake batter.
  • Bake this cake for 28-30 minutes or until a toothpick comes out clean.

This scrumptious recipe for Sugar Free German Chocolate Frosting is the perfect match for any Sugar Free German Chocolate Cake recipe!

1 1/4 cups Splenda (granular)
3/4 cups Butter
1 1/2 cups Evaporated Milk (see post for alternatives)
4 Egg Yolks (beaten)
1 1/4 cups Pecans (chopped)
1 tsp Vanilla Extract
2 cups Coconut (flakes or shredded)

Steps:

  • Use a small saucepan (2 quart is a good size) for this recipe. In that saucepan, whisk together the sugar alternative, butter, evaporate milk, and egg yolks. Then place the saucepan on low to medium heat. Whisk or stir constantly while this mixture heats up. When it begins to thicken and turn brown, about 10-12 minutes.
  • Remove the frosting from the heat and stir in the remaining ingredients. Allow this to cool before using. This should be enough frosting for a two layered German Chocolate Cake. Please refrigerate the frosting and the frosted cake.

1 teaspoon vanilla extract
1 cup chopped pecans

  • In a large saucepan combine evaporated milk, brown sugar, egg yolks, butter and vanilla. Cook over low heat, stirring constantly, until thick. Remove from heat and stir in pecans and coconut. Let cool to room temperature before spreading on cake.

YES YOU CAN! This icing is my absolute FAVE!This recipe came from my second mom & hair-do fairy godmother. Marline. My mom makes the "regular" kind and when Splenda came up with the brown sugar substitute and I learned to make diabetic sweetened condensed milk (recipe#143017) I decided to try to make it "unleaded". Hope it turns out to your liking. Try it with some of the other low-sugar chocolate cakes here at Zaar and let me know what you think!

28 ounces sweetened condensed milk (I recommend my recipe for diabetic SCM #143017-double the recipe)
1/2 cup butter
1 1/2 cups unsweetened coconut
1/4 cup Splenda brown sugar blend
1 teaspoon vanilla
1 1/2 cups chopped pecans

Steps:

  • Place everything except the coconuts and pecans in a heavy 3-quart saucepan.
  • Bring to a boil over med-low heat. Cook, stirring constantly, 3-5 minutes or until pudding-like in consistency.
  • Remove from heat and stir in coconut and pecans.
  • Will frost a 9x13 cake with a bit left over if you're frugal with the frosting.
  • NOTE: If you would like to make this with "real" sugar, sub in 2 cans "commercial sweetened condensed milk and 1/2 cup "regular" brown sugar.

I am posting this for my fellow diabetic friends here on JAP. I have NOT made this cake yet as I need to get the ingredients but anyway I hope it works as I am wanting to make it soon. And if you make it please let me know how you liked it.

1/2 c carob unsweetened chips
1 (1.75oz) sugarfree milk chocolate candy bar
1/2 c boiling water
3/4 c sour cream
1/4 c milk
1 c margerine,softened (2 sticks)
1/2 c sugar twin or splenda
1/2 c steels powdered sugar or powdered sugar replacement
4 large eggs, seperated ,at room temp
1 tsp vanilla or 2 tsp imitation vanilla
2 c flour
1 tsp baking soda
1/2 tsp salt (optional)
FROSTING:
1 c evaporated milk
1/2 c sugar twin or splenda
1/2 c steels powdered sugar or powdered sugar replacement
3 large egg yolks
1/2 c margerine (1 stick)
1 tsp vanilla
2 c shredded unsweetened coconut
1 1/2 c chopped pecans or any nuts

Steps:

  • 1. Preheat oven to 350.
  • 2. Grease and flour 3 round 9 inch cake pans or 9x13 pan. tap to remove excess flour.
  • 3. Stir chocolate into boiling water and stir until melted. Cool while mixing rest of ingredients.
  • 4. Stir sour cream,milk and vanilla together
  • 5. beat margerine and sugars until fluffy and add egg yolks one at a time, beat well after each.
  • 6. Gradually beat in chocolate mixture.
  • 7. gradually beat in flour and milk mixture alternately.
  • 8. Beat egg whites untill stiff but not dry. Gently fold into chocolate batter.
  • 9. Pour into prepared pans or pan.Bake 30-35 minutes or until tooth pick inserted comes out clean. Cool and remove from pans. If using the 9x13 pan just leave in pan, just put frosting on top.
  • 10. Make frosting, combine evaporated milk ,sugars, egg yolks,margerine and vanilla in large sauce pot. Cook stirring constantly over medium heat until thick(do not let boil)
  • 11. Remove and stir in coconut and nuts. Stir occasionally to cool. Spread 1/4 of frosting between cake layersand spread rest of frosting on top.
