Dan and I are dieting, so making a pie with artificial sweetener was an experiment. It turned out great. I thought it was just as yummy as the real thing.

Number Of Ingredients 7

1 pastry dough, for 9-inch 2-crust pie
5 cups sliced fresh peaches
1 teaspoon lemon juice
1 cup great value artificial sweetener
1/4 cup all-purpose flour
1/4 teaspoon cinnamon
2 tablespoons margarine

Steps:

  • Heat oven to 425 degrees. Prepare pastry. Mix peaches and lemon juice. Stir together sweetener, flour and cinnamon; mix with peaches. Turn into pastry-lined pie pan; dot with margarine. Cover with top crust which has slits cut in it; seal and flute.
  • Cover edge with 2-3" strip of aluminum foil to prevent excessive browning; remove foil last 15 minutes of baking.
  • Bake 35-45 minutes until crust is brown and juice begins to bubble through slits in crust.

1 box sugar free peach jello
1/4 c boiling water
2 (containers) lite peach yogurt
1 (container) sugar free cool whip
1 graham cracker pie crust

Steps:

  • 1. In a mixing bowl, mix jello with boiling water.
  • 2. Whisk until jello is dissolved.
  • 3. Gently fold in yogurt and cool whip until well mixed.
  • 4. Spoon into graham cracker crust.
  • 5. Chill until set.

Butter for bottom and sides of dish
6-7 slice d peaches
1 1/2 cups Splenda
1/4 tsp cinnamon
2 Tbsp flour (plain)
1 egg
1 stick melted butter
5 slices bread, cut off crust

Steps:

  • Preheat oven 350 degrees F. Butter bottom & sides of 8x8 dish.
  • Slice peaches in dish. Mix the following together: Splenda, cinnamon, flour. Beat egg & butter together then mix with dry ingredients.
  • Cut crust off bread and slice bread in 4 strips each & place on top of peaches. Pour sugar, flour, egg & butter mixture over top of bread, spread with back of spoon.
  • Bake 40 - 45 minutes.

The other day I really wanted something sweet. I didn't have any fresh fruit but I did have a couple of jars of Del Monte Orchard Fresh Peaches in light syrup in my pantry and this is what I came up with.

4 Tbsp butter
1 c splenda granulated
1 c low-fat milk
3/4 c whole-wheat flour (important diabetics use whole-wheat)
1/2 c all-purpose flour
2 tsp baking powder
1/4 tsp salt
1 tsp cinnamon, ground
2 (20-oz) jar(s) del monte orchard fresh peaches in light syrup
2 Tbsp raw oats

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Melt the butter in a 9 x 13 x 2-inch baking pan or dish.
  • 3. In a medium mixing bowl combine the Splenda, both flours, baking powder, salt, and cinnamon; add milk and stir to blend well. Spread batter evenly over the bottom of the pan.
  • 4. Drain most of the juice from 1 jar of peaches (this cuts back on the sugar). Pour the peaches with the juice over the batter in pan. Add the drained peaches, filling in any bare spots over the batter then adding any liquid remaining in jar.
  • 5. Sprinkle the raw oats over all.
  • 6. Bake cobbler at 350 degrees 1 hour or until lightly browned, bubbly, and cooked through.
  • 7. Serve with sugar-free ice cream or whipped cream, if desired.

PEACH PARFAIT PIE

CRUST:
6 ESTEE Vanilla Flavor cookies, crushed
8 graham crackers, crushed
1/2 teaspoon allspice
2 tablespoons reduced-calorie margarine, melted
2 tablespoons nonfat plain yogurt
FILLING:
1 package sugar-free peaches melba gelatin
1 (16-ounce) can juice-packed sliced peach, drained, reserve juice
1 package ESTEE whipped topping mix

Steps:

  • TO PREPARE CRUST:Heat oven to 400°F. In 9-inch pie pan, combine cookie and cracker crumbs with allspice. Stir in margarine and yogurt. Pat into bottom and up sides of pie pan. Bake 8 to 10 minutes or until browned remove and cool on rack.TO PREPARE FILLING:Meanwhile, combine gelatin mix with 1 cup boiling water, stirring until dissolved. Add 3/4 cup cold water and reserved peach juice to gelatin mixture. Refrigerate 1 hour or until slightly thickened. Meanwhile, reserve 8 peach slices for garnish chop remaining peaches and set aside. Prepare whipped topping according to package directions. Fold 1 cup whipped topping and chopped peaches into chilled gelatin. Spoon into prepared crust. Chill remaining whipped topping. Chill pie about 1 1/2 hours until firm, or freeze several hours if desired.   • Make the pie crust. I learned how to make a homemade pie crust here. She does a great job of simplifying something that has seemed overly complicated for years.
  • Make your pie filling. So once you have your pie crust in the pan you’ll need to decide if you are making a single crust pie or a double. I usually make a double.
  • Bake It. Once you have your top pie crust on the pie, you’ll want to go around and cut the edges of the pie crust off. Be sure that the knife you use is sharp so it won’t tear the crust.
  • Egg Wash. Now, when the pie is done with its first round of cooking, I always recommend using an egg wash. It browns up the pie crust and makes it visually appealing.
  • Bake it further. This time around you only want to bake the pie long enough for the egg wash to do its thing. For me, that means popping the pie back in the oven at 350° Fahrenheit for about 5 minutes.
