Warm, spicy, and sweet, this wonderful Fall recipe is a guaranteed favorite for kids, and is great with smashed potatoes and buttered green beans.

Steps:
- Preheat oven to 175 degrees F (80 degrees C). Place a medium dish in the oven to warm.
- Heat a large skillet over medium-high heat. Brush chops lightly with oil and place in hot pan. Cook for 5 to 6 minutes, turning occasionally, or until done. Transfer to the warm dish, and keep warm in the preheated oven.
- In a small bowl, combine brown sugar, salt and pepper, cinnamon and nutmeg. Add butter to skillet, and stir in brown sugar mixture and apples. Cover and cook until apples are just tender. Remove apples with a slotted spoon and arrange on top of chops. Keep warm in the preheated oven.
- Continue cooking sauce uncovered in skillet, until thickened slightly. Spoon sauce over apples and chops. Sprinkle with pecans.

- In a large skillet, heat olive oil over medium heat. Brown pork chops on both sides., Meanwhile, in a small bowl, combine next seven ingredients; stir in apple cider. Pour over pork chops. Reduce heat to medium-low; cook, covered, until a thermometer inserted into chops reads 145°, 4-5 minutes. Remove chops from skillet; let stand for 5 minutes., In a small bowl, mix cornstarch and water until smooth; stir into cider mixture in skillet. Return to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. Pour over chops; sprinkle with fresh parsley.

- Cook bacon in a large skillet over medium heat until crisp. Remove to paper towels; drain, reserving 3 teaspoons drippings. In the same skillet, cook pork chops in 2 teaspoons reserved drippings over medium heat for 2-3 minutes on each side or until lightly browned. Remove and keep warm., Saute apples and onion in 1 teaspoon reserved drippings in the same skillet until apples are crisp-tender. Stir in the brown sugar, butter, salt, cinnamon and pepper. - Season pork chops with salt and black pepper.
- Heat oil and butter in a heavy skillet over medium-high heat. Cook pork chops in the hot oil mixture until browned on both sides and pork is slightly pink in the center, 5 to 7 minutes per side. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Remove pan from the heat; transfer pork chops to a plate.
- Stir garlic into the pan and place over medium-high heat; cook and stir for 30 seconds. Pour in vinegar and scrape up any browned bits from the bottom of the pan. Add apple cider and Dijon mustard, bring mixture to a boil, and cook until sauce is reduced and thick, 3 to 4 minutes. Stir in rosemary and red pepper flakes; season with salt and black pepper to taste.
- Return pork chops to the pan to warm slightly, 1 to 2 minutes per side.

- *Preheat oven to 400° F. Heat a large skillet over medium-high heat. Brush pork chops lightly with oil then season with a little salt and black pepper and place in hot skillet. Cook for 3 - 4 minutes on each side, until pork has a nice golden crust. Transfer to a baking pan and bake about 20 minutes, or until chops are done. Meanwhile, in a small mixing bowl, stir together the brown sugar, pumpkin pie spice, and salt and pepper. Set aside. Melt butter in a medium skillet (that has a cover) then stir in the apples and brown sugar mixture. Cover the skillet and cook until apples are crisp tender. (I checked with a toothpick.) Remove apples from the syrup with a slotted spoon. Continue cooking the syrup in skillet, uncovered, until thickened somewhat. Arrange the apples over the cooked pork chops then spoon the syrup over apples and chops. NOTE: *I finished the pork chops on the stovetop instead of baking them. After searing them on both sides in the hot skillet, I reduced the heat, covered the skillet, and cooked until they were done.

- In a large ziplock bag mix all the ingredients together, besides the chops. Mis well.
- Add the pork chops and make sure the bag is sealed.
- Refrigerate the chops overnight, turning the bag over a few times.
- Preheat oven to 400°F
- Drain off all but 1/4 cup of the marinade. Bake the chops, uncovered for about 25 minutes.
- Turn the chops once during cooking and baste with remaining marinade often.

From GoodLife Eats. Nice take on the apple & pork chop combination for autumn. It's both sweet and savory at the same time. We were honestly a bit worried the first time about the combination of garlic and sage with the sweetness of the apples and cider, but it works well. Our kids preferred to eat the apples separate from the meat as dessert and actually ate so many of them that doubling the apple portion would have been appropriate for us. Recipe calls for 2 Land O Lakes Saute Express Garlic Herb cubes. We did happen to have some of those on hand but if they weren't available, an equal blend of butter & olive oil, plus garlic and herbs to your preference would be a good substitution.

- Melt Saute Express cubes (or combination of butter, olive oil, and herbs) in a large pan. Cast iron skillet works great.
- Pat pork chops dry and then place in pan, browning for ~5 minutes per side.
- In a separate skillet, melt 3 tbsp butter over medium heat. Add brown sugar and cook about 1 minute until melted. Add apples and and saute for 10-15 minutes until apples are nicely browned.
- Add apple cider to the pork chops and cook over medium heat until liquid reduced by half (5-10 minutes). Flip chops once during this step.
- Add the cream to the pork chops and sprinkle with salt and pepper. Bring to a boil, then reduce heat and simmer for 3-5 minutes until sauce has thickened to desired consistency and pork is adequately cooked.
- Sprinkle sage over the pork chops.
- Serve immediately, spooning a little apple over each chop and drizzling with sauce.

- Brine - Dissolve the salt and sugar in the apple cider. Adjust the sugar content for sweetness as desired. Immerse the pork chops, cover and refrigerate for 4 hours or overnight.
- Caramelized Applies - Melt the butter in a skillet and sauté the apples until browned. Add the sugar and continue to cook the apples until a syrup has formed. Add the whiskey and reduce. Remove from the heat and reserve for the chops.
