A very light and mild leek chowder. Great as a meal with French bread.

1 teaspoon butter
1 teaspoon olive oil
3 leeks, chopped
2 cups chicken broth
6 small red potatoes, cubed
½ teaspoon dried dill weed
1 bay leaf
¼ cup half-and-half cream
2 tablespoons all-purpose flour

Steps:

  • Heat butter and olive oil in a pot over medium heat. Cook and stir leeks in hot butter and oil until softened, but not browned, about 5 minutes.
  • Increase heat to medium-high and add chicken broth, potatoes, dill, and bay leaf. Cover and simmer until potatoes are tender, about 10 minutes.
  • Whisk half-and-half with flour in a small bowl until smooth; set aside.
  • Mash about half of the potatoes against the side of the pot using a fork for a creamy, chunky soup.
  • Stir flour mixture into the soup. Continue simmering until thickened, about 5 minutes.

After trying the most wonderful potato soup at a local market I tried to come home and duplicate it. It didn't turn out exactly the way I wanted but I found my version better. I got the name Potato Chowder soup because when my husband tried it he thought it tasted like a chowder. Also a can of corn could be added as a quick variation. Very tasty and warms the soul on a dreary damp day.

4 slices bacon, chopped
½ large onion, diced
½ teaspoon celery salt
4 large potatoes, cubed
½ large carrot, diced
5 cups vegetable broth
3 cups milk
½ teaspoon seasoning salt
3 pinches dried dill weed
1 tablespoon ground black pepper

Steps:

  • In a large saucepan over medium heat, cook bacon until crisp. Remove bacon from pan, leaving drippings. Cook onion in drippings until tender. Stir in celery salt, potatoes, carrot and broth. Bring to a boil, then reduce heat and simmer until vegetables are tender, 20 minutes. Stir in milk, seasoning salt, dill and pepper. Heat through and serve.

1 teaspoon canola oil or 1 teaspoon vegetable oil
1 1/2 cups carrots, chopped
1 1/2 cups celery, chopped
1 onion, chopped
2 garlic cloves, chopped
2 lbs yukon gold potatoes, peel and chopped in 1-inch pieces
4 cups chicken stock or 4 cups vegetable stock
2 (370 ml) cans evaporated milk
1/4 cup dill, chopped, fresh
salt

Steps:

  • Heat oil on medium heat in a large pot.
  • Add next 4 ingredients. Cook, stirring occasionally, for 5 minutes, or until onions are tender.
  • Add potatoes and stock. Bring to a boil, cover and lower heat. Simmer 15 minutes, until potatoes are tender.
  • Add Milk and cook for an additional 5 minutes.
  • Puree half the soup.
  • Return to pot and combine well.
  • Stir in dill.
  • Add salt to taste.

1 cup sliced leeks (white portion only)
1 celery rib, chopped
1-1/2 teaspoons butter
2 cups chicken broth
1-1/2 cups cubed peeled Yukon Gold potatoes
1 large carrot, finely chopped
1/2 teaspoon dried thyme
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 cup buttermilk
1-1/2 teaspoons snipped fresh dill or 1/2 teaspoon dill weed
Herb potato chips and finely shredded leeks, optional

Steps:

  • In a large saucepan, saute leeks and celery in butter until tender. Stir in the broth, potatoes, carrot, thyme, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until vegetables are tender. Cool slightly., Transfer to a blender; cover and process until smooth. Return to the pan. Whisk a small amount of soup into buttermilk; return all to the pan, stirring constantly. Add dill; heat through (do not boil). Garnish if desired.

8 to 12 medium potatoes, peeled and cubed
3 carrots, diced
2 cans (14-1/2 ounces each) chicken broth
1 pound process cheese (Velveeta), cubed
1 teaspoon dill weed
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 pound bacon, cooked and crumbled, divided
3 cups milk

Steps:

  • In a large kettle, cook potatoes and carrots in chicken broth until tender, about 10 minutes. Add the cheese, dill weed, salt and pepper. Cook and stir until cheese is melted. Add bacon, reserving 1/2 cup, and milk. Heat through. Top individual bowls with reserved bacon.

1 package Keebler® Zesta® soup & oyster cracker

  • 1. In medium saucepan cook carrot, celery and onion in margarine or butter until tender. Add broth, potatoes, dillweed, salt, mustard and pepper. Bring to boil. Reduce heat.
