NO-FAIL DILLY BREAD

No-Fail Dilly Bread image

The greatest part of this dilly bread is the ease at which it comes together. While bread is usually a very hands-on process, this bread has a short amount of prep time. With everything bagel seasoning, dill, and cottage cheese, it's a unique recipe you'll make time and again!

Provided by Kaleb

Categories     Bread

Time 2h35m

Number Of Ingredients 9

1 ¼ cup whole milk cottage cheese (slightly warm)
2 tbsp honey
1 tbsp butter (melted)
2 tsp dried dill
1 tbsp everything bagel seasoning
1 large egg
2 ¼ cups all-purpose flour
1 package (2 ¼ tsp) instant active dry yeast
¼ tsp baking soda

Steps:

  • Blend the cottage cheese until mostly smooth.
  • In a large bowl, combine the blended cottage cheese, honey, butter, and egg. Whisk until smooth. Add the everything bagel seasoning, dried dill, flour, baking soda, and yeast. Using a fork or Danish whisk, combine the ingredients into a wet shaggy dough. Mix until the dough just begins to clear the sides of the bowl. Drizzle with neutral oil and cover to allow the dough to rest for one hour.
  • After one hour, preheat the oven to 350°F. Do not worry about making sure the dough is doubled in size. Punch down and knead it into a ball. Place the ball on parchment paper in a 4-quart Dutch oven or 4-quart oven-safe bowl. Let the dough rest for an additional 30 minutes.
  • After 30 minutes, use a sharp knife to cut an "X" into the top of the ball. Place the dough in the preheated oven. Bake until the bread is golden with an internal temperature of 190°F, about 40-50 minutes. Remove from the oven and cool in the bowl for 5 minutes. Finish cooling on a wire rack.

DILL BREAD

Dill Bread image

Provided by Food Network Kitchen

Time 4h45m

Yield 1 loaf of bread

Number Of Ingredients 9

2 cups milk
1/3 cup sour cream
1/4 cup minced fresh dill
3 tablespoons unsalted butter, plus more for the pan
2 tablespoons sugar
One 1/4-ounce package active dry yeast
5 cups all-purpose flour
1 tablespoon fine salt
Vegetable oil, as needed

Steps:

  • In a small saucepan, combine the milk, sour cream, dill, butter, and sugar. Place over medium-high heat and cook, stirring, until the butter melts. Remove from the heat and cool to about 110 degrees F. Sprinkle the yeast over the surface of the milk. Set aside until foamy, about 10 minutes.
  • Meanwhile, in large bowl, whisk together the flour and salt. Set aside.
  • Pour the yeast mixture into the bowl of flour and mix until a soft, ragged mixture is formed.
  • Transfer the flour mixture to a well-floured work surface and knead by hand until an elastic dough is formed, about 10 minutes. Transfer the dough to a lightly oiled bowl, cover with a kitchen towel and place in the warm spot, until doubled in size, about 2 hours.
  • Place a rack in the center of the oven and preheat to 400 degrees F. Transfer the dough to the work surface and, using your hands, gently flatten into a 10-inch-long oval shape. Fold the dough into thirds lengthwise, overlapping the sides in the center. Press down on the overlapping sides to seal and make a seam. Place seam side-down in a buttered 9 by 5-inch loaf pan, cover with a kitchen towel, and return to the warm spot until the dough has risen about 1 1/2 inches over the top of the pan, about 1 1/2 to 2 hours.
  • Brush the top of the dough lightly with warm water and, using a sharp knife, make 1/4-inch-deep slit down the center. Bake until golden brown, about 30 minutes.
  • Remove the loaf from the pan and place in the center of the rack. Continue baking until the loaf sounds hollow when rapt lightly with your knuckles on the bottom and top, and an instant-read thermometer inserted in the center registers about 190 degrees F., about 15 minutes.
  • Transfer the bread loaf to a cooling rack and let cool for 2 hours before using.

DILL FLAKEY BREAD

Dill Flakey Bread image

Provided by Molly Yeh

Categories     side-dish

Time 2h

Yield 6 servings

Number Of Ingredients 8

1 1/2 cups all-purpose flour, plus more for dusting
3/4 cup pastry flour
2 teaspoons sugar
1 1/2 teaspoons salt
1 teaspoon baking powder
Oil, for greasing the bowl
3/4 cup (12 tablespoons) butter, very soft
1 cup chopped fresh dill

Steps:

  • In a large bowl, combine the flour, pastry flour, sugar, salt and baking powder. Create a well in the center and add 3/4 cup water. Mix until you have a shaggy dough.
  • Turn the dough out onto a floured surface and knead, adding additional flour as needed, until smooth, 5 to 7 minutes. Transfer the dough to an oiled bowl, cover with plastic wrap and rest for 30 minutes.
  • Turn the dough out onto a work surface and divide into 6 balls. Keep them covered with plastic wrap when you're not working with them. Using your hands, spread 1 tablespoon butter on a large work surface, top one of the balls of dough with another tablespoon of butter and pat out into a flat circle. Put the buttered dough ball on top of the spot of butter on the work surface. Using a flat hand, gently massage the dough in circular motions (as if you're washing a window) to flatten it out into a very large translucent circle. It's ok if it tears and is not perfect just try to get it as thin as possible!
  • Top with a sprinkling of the dill and then roll it out into a long, skinny log. Roll the log into a coil and transfer to a plate. Repeat with the remaining dough.
  • Roll out the coils into 7-inch-round circles by placing them between two pieces of wax paper and flattening with a rolling pin. The dough will probably want to stick to the wax paper, but it's ok if it tears while you're peeling it off. Alternatively, you can stick the rolled-out coils in the fridge for about 30 minutes, which will make them slightly easier to handle.
  • Heat a large skillet over medium heat and cook one at a time until golden brown, about 3 minutes per side. Serve hot!
