DIM SIMS - AUSSIE STYLE
Steamed or fried dumplings, served with soy sauce for dipping. These tasty little dumpling will delight all. Uncooked dim sims freeze well & can be steamed from frozen.

Steps:
- Make pastry first;.
- Mix flours, salt, sugar and add boiling water.
- Mix well, knead on floured bench.
- Rest before using.
- Make filling;.
- Mix meat, and seasonings by hand or pulse in a food processor. Do not over process.
- Add vegetables and mix by hand.
- Roll pastry until thin & cut into rounds; I use an egg-ring.
- Brush edge of rounds with eggwhite.
- Place 1-2 tablespoons of filling on each round & shape around filling, moulding into an attractive ball-shape; a little filling should be exposed on the top.
- Steam for 15 minutes OR Deep fry 180 c for 5-10 minutes.

Steps:
- Combine all ingredients (except dim sim skin) in a large bowl and massage together.
- Take a heaped tablespoon of mixture and wrap with the dim sim skin, sealing with a little water.
- Either deep fry at 180 degrees for approx 5 minutes, or steam for approx 5 minutes serve with sweet chilli and soy sauce for dipping.

- To Make the Dough Add flour and salt into a large bowl and mix well. In a separate bowl, pour in water and egg, whisk until well combined. Make a well at the center of the flour, pour in the egg mixture. Knead until smooth and let sit covered for 1 hr. Set aside.
- To Make the Filling Mix all the meat, vegetables and seasonings together in a large bowl. Then use a blender or food processor to combine the ingredients into slightly chunky mixture. Do not over process.
- To Make Dim Sim Roll the dough into a thin sheet and cut into 10cm square skins. Scoop 2 tbsp of filling and form into a meatball. Repeat for the rest of the fillings. Place a meatball onto the center of a skin, then pull the 4 corners of the skin to the top center of the meatball. Gently squeeze the dim sim in your hand to form a cylinder shape and for the dough to stick well. Repeat. Deep fry the dim sim in batches in 180°C hot oil for about 5 mins or until cooked and golden brown. Serve hot.
