JUSTIN'S HOOSIER DADDY CHILI



Justin's Hoosier Daddy Chili image

This is a wonderful chili recipe that I have used to win chili cook-offs in Indiana. It's hearty and spicy award winning chili that is sure to hit the spot on a cold winter's night. The key is in using name brand tomato soup, I have tried it with others but haven't gotten the same results. Your friends will never guess the secret ingredient. Enjoy!

1 pound ground beef
1 medium onion, chopped
1 teaspoon red pepper flakes
1 tablespoon ground cumin
2 (10.75 ounce) cans condensed tomato soup
2 (14.5 ounce) cans chicken broth
1 (14.5 ounce) can crushed tomatoes
5 tablespoons chili powder
1 teaspoon ground black pepper
1 teaspoon salt
2 (15.5 ounce) cans pinto beans, drained
cayenne pepper to taste

Steps:

  • Crumble the ground beef into a soup pot over medium-high heat. Cook and stir until evenly browned. Drain off most of the grease. Add onion, red pepper flakes, and half of the cumin; cook and stir until onion is tender.
  • Pour in the tomato soup, chicken broth, and crushed tomatoes. Season with chili powder, salt and pepper. Simmer for 30 minutes. Pour in the beans, and season with remaining cumin and cayenne pepper; simmer for another 30 minutes. Now enjoy.

We had a chili competition here at work and I decided to come up with a hybrid chili recipe from different ingredients that I liked. I made this without beans, but you can easy add in a can or two.

6 lbs ground beef
4 (15 ounce) cans beef broth
1 (15 ounce) can tomato sauce
8 dashes chipotle hot sauce
2 tablespoons onion powder
1 1/2 teaspoons cayenne powder
4 teaspoons beef bouillon powder
2 teaspoons chicken bouillon powder
2 medium onions, chopped
1 green bell pepper, chopped
1 1/2 teaspoons garlic powder
3 tablespoons cumin
1 1/2 teaspoons white pepper
12 tablespoons chili powder

Steps:

  • Brown beef, drain.
  • Add the the next nine ingredients.
  • Stir and simmer for 45 minutes.
  • Add the remaining four ingredients.
  • Simmer for another 30 minutes.
  • Enjoy.

Half rich beefy chili, half veggie chili, this recipe is the best of both worlds! I combined one batch of beef chili with one batch of veggie chili in the same pot. Beef to make my husband happy and veggies to make his heart happy!

2 lbs 93% lean ground beef
2 medium onions, diced
2 -3 tablespoons chopped garlic
1 1/2 green bell peppers, chopped
1 red bell pepper, diced
2 small zucchini, diced
1/4 cup chopped cilantro
1 (15 ounce) can corn, drained
1 (15 ounce) can tomato sauce
1 (15 ounce) can diced tomatoes
1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can pinto beans, drained and rinsed
2 packages chili, mix (Wick Fowler or Carol Shelby(seasoning only. Dont follow directions on the boxes!)
fat free cheddar cheese, light sour cream, cilantro and chopped onion to garnish

Steps:

  • Spray a large stockpot with cooking spray.
  • Brown ground beef in pan.
  • While beef is browning, chop/dice onions,garlic, peppers, zucchini and cilantro. Set aside.
  • When beef is no longer pink, drain and rinse with hot water to remove any remaining fat. Set aside.
  • Rinse and dry stockpot.
  • Spray stockpot again with cooking spray.
  • Add chopped veggies to pan and saute until limp.
  • Add cilantro, corn, tomato sauce, diced tomatoes and both beans.
  • Stir to combine.
  • Fill tomato sauce can and diced tomato can with water and add to pan.
  • Stir in seasonings from both chili mix packages. (I omit the salt and only use 1 package of red pepper.) Set the 2 packages of masa aside.
  • Cover and simmer until you can't stand the smell! If needed, mix masa with water and add to the chili to thicken a few minutes before serving.
  • Enjoy with fat free cheddar cheese, light sour cream, additional cilantro, chopped onion or anything else you choose!
