4 cups peeled sliced mcintosh apples
2/3 cup maple syrup
1/3 cup raisins
1 cup all-purpose flour
1/8 cup granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 cup butter, cut into pieces
1 egg
1/2 cup buttermilk
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees.
  • Grease 8 inch square baking dish.
  • In a saucepan, bring apples and syrup to a boil; simmer for three minutes or until apple is softened.
  • Add raisins and pour into baking dish.
  • In a bowl, combine flour, sugar, baking powder, baking soda and salt; cut in butter with a pastry blender to make fine crumbs.
  • Beat egg, buttermilk and vanilla together in another bowl; pour over flour mixture and stir until just combined.
  • Drop by large spoonfuls onto warm fruit.
  • Bake 30 minutes or until top is golden and cake tester comes out clean.
  • Serve warm.

4 apples, your choice, peeled, cored and chopped into 1/2 inch pieces
3/4 cup maple syrup
2 eggs
2 tbsp butter, melted
1/4 cup milk
1 tbsp lemon juice
1/2 cup flour
2 tsp baking powder
1/4 tsp salt
1/2 cup raisins
pinch of cinnamon

Steps:

  • Preheat oven to 375F. Grease an 8 inch square baking pan and spread apples on the bottom. Pour 1/2 cup maple syrup over top of the apples.
  • In a bowl, whisk together the eggs, butter, lemon juice, remainder of maple syrup and milk.
  • In another bowl, stir together the flour, baking powder and salt.
  • Stir flour mixture into egg mixture until fully combined and smooth. Stir in raisins and cinnamon.
  • Pour batter over the apples as evenly as you can.
  • Bake for about 30 minutes or until apples are cooked and top is golden.

1 cup sugar
2 tablespoons all-purpose flour
1-1/2 teaspoons ground cinnamon

6 medium tart apples (about 2-1/4 pounds), peeled and thinly sliced
1 tablespoon lemon juice
1 (14.1 ounces) refrigerated pie pastry
2 tablespoons butter
3 tablespoons maple syrup, divided
Warm maple syrup, optional

Steps:

  • In a small bowl, combine the first five ingredients. In a large bowl, toss apples with lemon juice. Add sugar mixture; toss to coat., Unroll one pastry sheet into a 9-in. pie plate; trim even with rim. Add filling. Dot with butter; drizzle with 2 tablespoons maple syrup. Unroll remaining pastry; place over filling. Trim, seal and flute edge. Cut slits in top. Brush pastry with 1 tablespoon maple syrup., Bake at 425° for 40-45 minutes or until crust is golden brown and filling is bubbly. Cover pie loosely with foil during the last 20 minutes if needed to prevent overbrowning. Remove foil. Cool on a wire rack. If desired, serve with warm maple syrup.

Serve either hot or cold. It is good plain but better with milk, cream, whipped cream or lemon sauce.

1 large cooking apple (Braeburn, Cortland or Granny Smith), peeled, chopped (1 1/2 cups)

1 cup packed brown sugar
1 cup milk
1/4 cup butter or margarine
1 teaspoon ground cinnamon
1/2 teaspoon vanilla
2 eggs, beaten
1/3 cup granulated sugar
1/3 cup packed brown sugar
1/3 cup whipping cream
1/3 cup butter or margarine
1/2 teaspoon maple flavor
Maple candies, if desired

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Grease 6 jumbo muffin cups with shortening.
  • In large bowl, mix bread cubes, apple and figs. In small saucepan, cook 1 cup brown sugar, the milk and 1/4 cup butter over medium heat until butter is melted. Remove from heat; stir in cinnamon and vanilla. Pour over bread mixture in bowl. Add eggs; toss to coat. Spoon mixture into muffin cups, filling to tops of cups.
  • Bake 30 to 34 minutes or until center is set and apples are tender. Cool while making sauce.
  • In 1-quart saucepan, stir granulated sugar, 1/3 cup brown sugar, the whipping cream and 1/3 cup butter. Heat to boiling over medium heat, stirring occasionally. Remove from heat; stir in maple flavor.
  • Remove warm cupcakes from pan; place on serving plates. Spoon warm sauce over cupcakes. Garnish with maple candies.

¼ cup raisins
2 cups peeled and sliced apples

6 large eggs
1/2 cup pure maple syrup (preferably Grade B)
1/2 cup (packed) dark brown sugar
1 tablespoon vanilla extract
2 teaspoons ground cinnamon
1/2 teaspoon fine sea salt
1 cup whole milk
1 cup heavy whipping cream
2 tablespoons apple brandy (such as applejack or Calvados)
1 1-pound loaf pain rustique, all crust trimmed, bread cut into 3/4- to 1-inch cubes (6 1/2 to 7 cups)
Apples:
3 tablespoons unsalted butter
2 1/2 pounds Granny Smith apples (about 5), peeled, quartered, cored, cut into 1/3-inch-thick slices (about 7 cups)
1/4 cup pure maple syrup plus additional for brushing (preferably Grade B)
1/4 cup (packed) dark brown sugar

Steps:

  • For custard:
  • Whisk eggs, maple syrup, brown sugar, vanilla, cinnamon, and sea salt in large bowl. Add milk, cream, and brandy and whisk until well blended. Add bread cubes and press to submerge into custard. Let soak at least 30 minutes, occasionally pressing on bread cubes to submerge.
  • For apples:
  • Meanwhile, position rack in bottom third of oven and preheat to 350°F. Generously butter 9x5-inch glass or ceramic loaf pan with at least 3-inch-high sides. Melt 3 tablespoons butter in large nonstick skillet over medium-high heat. Add apple slices and sauté until deep golden and beginning to soften, stirring and turning apple slices frequently, 10 to 12 minutes. Stir in 1/4 cup maple syrup, then brown sugar. Simmer until sugar dissolves and mixture thickens to syrup, about 1 minute. Remove from heat.
  • Mix half of apple slices into breadcustard mixture. Transfer bread pudding mixture to prepared pan. Arrange remaining apple slices atop bread pudding in 2 lengthwise rows. Spoon any remaining syrup from skillet over apple slices. Place loaf pan on rimmed baking sheet (to catch any spills during baking).
  • Bake bread pudding until puffed and cracked on top, apples are deep brown, and instant-read thermometer inserted into center of pudding registers 170°F to 180°F, about 1 hour 30 minutes (pudding will rise high above top of pan). Remove from oven and let rest at room temperature 45 minutes to 1 hour (pudding will fall). Brush apples on top of pudding with additional maple syrup. Spoon pudding into bowls and serve warm or at room temperature.
