Best Ever Pinto Beans image

I learned to make pinto beans from my Grandma, who came from Oklahoma. I've added to the recipe, and my Mother used to say mine were the best beans she'd ever tasted. Serve the Southern way - with cornbread and steamed greens.

Number Of Ingredients 6

1 pound dried pinto beans
6 cups water, or more as needed to cover
1 smoked ham hock
1 teaspoon kosher salt
1 tablespoon brown sugar
1 (6.5 ounce) can tomato sauce

Steps:

  • Cover pinto beans with water in a large bowl. Soak beans for 4 hours, changing water every 30 to 45 minutes. Drain.
  • Bring 6 cups water to a boil in a large pot. Add pinto beans, ham hock, and kosher salt to the pot. Pour in more water if needed to cover ingredients by at least 1 inch.
  • Reduce heat to medium-low and simmer until beans are just tender, 2 to 3 hours.
  • Remove ham hock from beans; cut meat from the bone, chop the ham, and return to pot.
  • Stir tomato sauce and brown sugar into the beans. Continue to simmer until beans are tender and flavors are blended, about 1 more hour.

1 (16-ounce) can butter beans
1 (16-ounce) can pinto bean
1 (16-ounce) can pork and beans
1/2 pound ground beef
10 slices bacon, chopped
1/2 cup finely chopped onion
1/3 cup brown sugar
1/3 cup sugar
1/4 cup ketchup
1/4 cup spicy hot barbecue sauce
2 tablespoons Dijon style mustard
2 tablespoons dark molasses
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon chili powder

Steps:

  • Drain butter beans and pinto beans and combine with pork and beans. In large saucepot, brown beef, bacon, and onion; drain. Add beans and remaining ingredients; mix well. Put into large casserole dish and bake, uncovered, for one hour at 350°. Enjoy!

1 pound dried pinto bean
1 large ham bone , or 2 smoked ham hocks, cracked
2 onions , chopped
3 garlic cloves , minced
2 bay leaves
1 teaspoon dried oregano leaves, crumbled
1 teaspoon ground cumin
1 tablespoon chili powder to taste
1 pinch sugar
1 pinch crushed red pepper flakes
1 water to cover
1 (10-ounce) can diced Ro-Tel tomatoes with green chiles
1 (16-ounce) can tomato with juice, broken up
1 canned jalapeño pepper , chopped, to taste
1 salt and pepper
1 (12-ounce) can beer

Steps:

  • Rinse beans, discarding any bad ones, and place in large pot. Cover with water and soak overnight or bring water to a boil; boil 2 minutes; remove from heat, cover and let beans soak one hour. Discard water, rinse beans with cold water and drain. Place beans in pot with all other ingredients. Bring to a boil, reduce heat until liquid barely simmers and simmer, partially covered for 3 - 4 hours, until beans are very tender. Add water and beer during cooking, as needed, to prevent sticking and scorching. Remove and discard bay leaves. Adjust seasonings while cooking, if necessary. While pinto beans have been raised in this area for centuries, Dove Creek really only claims to grow the best pinto beans, not the most.
