MORGAN'S WALDORF SALAD



Morgan's Waldorf Salad image

The idea of Waldorf salad was unappealing to me for years. So I experimented with ingredients a bit and finally found a recipe that's incredibly delicious! This is my own spin on the traditional Waldorf salad. The ingredients crisp, filling, and bursting with juicy flavor. Perfect for hot summer days when you don't feel like firing up the stove.

1 Granny Smith apple, cubed
1 Golden Delicious apple, cubed
1 Gala apple, cubed
1 Bosc pear, cubed
3 ribs celery, chopped
¾ cup sweetened dried cranberries
½ cup chopped walnuts
¼ cup chopped pecans
1 cup sour cream
¾ cup mayonnaise
1 tablespoon granulated cane sugar
2 teaspoons fresh lemon juice

Steps:

  • Combine Granny Smith apple, Golden Delicious apple, Gala apple, Bosc pear, celery, cranberries, walnuts, and pecans in a large bowl.
  • Whisk sour cream, mayonnaise, sugar, and lemon juice together in a separate bowl for the dressing.
  • Pour dressing into apple mixture; toss until evenly coated. Chill in refrigerator for at least 15 minutes before serving.

"Millions who never visited the Waldorf owe him a debt," The New York Times wrote in 1950, upon Oscar Tschirky's death. Mr. Tschirky, a Swiss immigrant who became known as "Oscar of the Waldorf," is credited with creating this piece of Americana in 1893, a timeless dish whose popularity has spread far past the Waldorf's exclusive doors and into home kitchens. Over time, variations would include blue cheese, raisins and chopped walnuts, which can be added here alongside the celery and apples. But the original is an exercise in simplicity: four ingredients that have lived on for over a century.

1 stalk celery, chopped
1/4 cup mayonnaise

2 cups lettuce, torn into bite-size pieces

Steps:

  • Peel apple and cut into halves. Remove core and slice halves 1/4-inch thick. Reserve 4 slices. Cut remaining slices into thin strips.
  • In a medium bowl, mix celery, mayonnaise and apple strips; season with salt and pepper to taste. Arrange on lettuce and top with apple slices.

A fruit salad has to be pretty darn good to actually get a name, and the venerable Waldorf salad is certainly worthy. Embellish this as you see fit, but I really like it best with just the four ingredients seen here. Things like dried cranberries can add a nice seasonal touch but, for me, the chewy fruit gets in the way of that addictive crunchy/crisp texture.

¾ cup mayonnaise
¼ cup creme fraiche
½ lemon, juiced
1 tablespoon finely chopped tarragon
½ teaspoon white sugar
¼ teaspoon salt
1 pinch freshly ground black pepper
1 pinch cayenne pepper
2 large crisp, sweet apples, cut into 1/2-inch cubes
1 cup cubed (1/4 inch) celery root, soaked briefly in cold water, drained well
1 cup quartered seedless green grapes
½ cup toasted walnut pieces

Steps:

  • Whisk mayonnaise, creme fraiche, lemon juice, tarragon, sugar, salt, black pepper, and cayenne together in a bowl.
  • Place apples, celery root, grapes, and walnut pieces in a large bowl. Toss with about 1/2 cup of dressing. Add more dressing until salad components are well coated but not swimming in dressing. You might not need all the dressing.
  • Serve immediately or cover and refrigerate for up to 24 hours.

5 cups unpeeled empire apples, diced
1 cup diced celery
1/2 cup chopped walnuts
1/2 cup raisins
1/2 teaspoon lemon juice
1 1/2 cups grapes, halved
1 1/2 cups pineapple juice
2 tablespoons cornstarch

Steps:

  • Combine pineapple juice and cornstarch in a saucepan.
  • Mix well to dissolve.
  • Bring to a boil over medium-high heat and continue to boil for 1 minute or until thickened and clear, stirring constantly.
  • Chill in refrigerator for at least 2 hours.
  • Combine salad ingredients.
  • Pour chilled dressing over salad.
  • Toss and let stand a few minutes before serving or refrigerate at least an hour if you would like it cold.

1/4 cup red wine vinegar
1 shallot, quartered
2 teaspoons chopped chives
1 teaspoon salt
1/4 teaspoon pepper
1 cup canola oil
1 cup (4 to 6 stalks) celery, diced
1 large Granny Smith apple, cored and diced, skin left on, and tossed with lemon juice to prevent oxidation
1 large red apple, such as Braeburn, Gala, or Fuji, skin left on and tossed with lemon juice to prevent oxidation
1 cup walnut halves, about 40
1 medium red onion, diced

Steps:

  • Through the feed opening of a running blender add, 1 at a time, the vinegar, shallot, chives, salt and pepper. Leaving the blender running, add the oil in a slow thin stream and allow to emulsify. Taste and adjust seasoning, as needed, with salt and pepper.
  • Toss together celery, apples, walnuts and onions, and with enough dressing to coat.

My dad always made this for Thanksgiving and Christmas. He called it Waldorf Salad, but it is really a cabbage salad 'Waldorf style'.

¼ head savoy cabbage, thinly sliced
4 apples, cored and diced with peel
½ cup finely chopped walnuts
6 stalks celery, diced
⅓ cup mayonnaise
1 tablespoon white sugar
½ teaspoon salt

Steps:

  • Use a chef's knife to slice cabbage into thin pieces 1 to 2 inches long. Do not use the large ribs of the cabbage, as they are too strongly flavored.
  • In a large bowl, toss together the cabbage, apples, walnuts, celery, mayonnaise, sugar and salt until evenly coated. Serve immediately or store in the refrigerator for up to one day.
