CHINESE CHICKEN SOUP



Chinese Chicken Soup image

This attractive simple soup begins with frozen stir-fry vegetables. Convenient refrigerated minced gingerroot adds to the Asian flavor.

3 cans (14-1/2 ounces each) chicken broth
1 package (16 ounces) frozen stir-fry vegetable blend
2 cups cubed cooked chicken
1 teaspoon minced fresh gingerroot
1 teaspoon soy sauce
1/4 teaspoon sesame oil

Steps:

  • In a large saucepan, combine all ingredients. Bring to a boil. Reduce heat; cover and simmer for 15 minutes or until heated through.

Easy Chinese Egg Drop Soup image

Egg drop soup is an Eastern comfort food that is a staple in Chinese restaurants and is simple to make with just three ingredients.

Number Of Ingredients 6

4 cups chicken broth (or stock, or vegetable broth)
2 large eggs (lightly beaten)
1/4 teaspoon white pepper
Salt (to taste)
Optional: sesame oil
Garnish: 1 to 2 spring onions (finely chopped)

Steps:

  • Gather the ingredients.
  • In a wok or saucepan, bring the 4 cups of chicken broth or stock to a boil. Very slowly, pour in the lightly beaten eggs in a steady stream.
  • To make shreds, stir the egg rapidly in a clockwise direction as you pour for 1 minute. To make thin streams or ribbons, gently stir the eggs in a clockwise direction until they form.
  • Add the pepper, salt, and sesame oil if using. Pour into bowls and garnish with spring onion.

MOM'S DRAGON SOUP



Mom's Dragon Soup image

This is one of my favorite soups to make because it is flavorful, relatively quick, and inexpensive. My mom found this recipe in a community cookbook a few years back, and we've been loving it ever since! You can substitute spices or even add things, kind of like Stone Soup... this is just the basic recipe which is easiest to branch out from. You can microwave or cook on the stovetop, which makes it flexible! This is the perfect New Year's late lunch or after-Easter dinner since the leftover ham is a main ingredient. I hope you enjoy it as much as my family!

1 sunday dinner ham bone
ham, pieces
1 (16 ounce) package dried split peas
1/4 teaspoon cayenne pepper
spices

Steps:

  • In a large saucepan or stock pot, boil water and split peas until desired consistency.
  • The question to ask is,"Is it soup yet?.
  • "Place pre-cooked ham pieces and hambone, cayenne pepper and salt to taste in the pea soup and simmer for 1 hour, or until desired consistency.
  • Serve piping hot with french bread and butter!
  • Delicious!
